- Cook the sausages for 10-12 minutes until fully cooked through and crispy on the outside. Gently shake the air fryer basket or flip the sausages with tongs halfway through. Depending on the sausages' thickness, your preferred level of crispiness, and your air fryer, the cook time can vary slightly.

- Preheat an air fryer to 400 degrees F (200 degrees C).
- Combine ground pork, sea salt, sage, red pepper, marjoram, onion powder, pepper, and thyme in a large bowl. Mix with your hands well until evenly combined. Form mixture into 8 patties.
- Place 4 patties in the basket of the air fryer and cook for 5 minutes. Carefully flip the patties and cook for 5 minutes more. Transfer to a paper towel-lined plate and repeat with remaining patties.

- Pierce the sausages a few times all over using a sharp knife (this is optional, but will help release more fat). Arrange the sausages in a single layer in an air fryer basket.
- Set the air fryer to 180C and cook for 10-15 mins, turning every 5 mins, until the sausages are cooked through. If you have a meat thermometer, check they have reached 75C in the middle. Serve as a side for breakfast or in buns.
