SPICY GRILLED CHICKEN WINGS

Gochujang and grated fresh ginger give this dish a tasty kick. The honey in the marinade chars a good bit on the grill for a rich, caramelized flavor that balances out the heat.

½ cup gochujang
2 tablespooons toasted sesame oil
2 tablespoons honey
1 tablespoon grated fresh ginger
3 large garlic cloves, grated
4 pounds chicken wings, separated into flats and drumettes, wing tips discarded
¼ cup chopped scallions
1 tablespoons toasted sesame seeds

Steps:

  • Whisk together gochujang, oil, honey, ginger, and garlic in a large bowl. Add chicken wings, and toss well to coat. Let marinate in refrigerator 1 hour.
  • Preheat a grill to medium (350°F to 400°F). Remove wings from marinade, letting excess drip off; discard marinade. Arrange wings on oiled grates. Grill, covered, until a thermometer inserted into thickest portion of meat registers 165°F, about 20 minutes, turning wings every 4 to 5 minutes. Arrange wings on a platter, and sprinkle with scallions and sesame seeds.

Steps:

  • Heat oven to 425 degrees F.
  • Brush oil on one side of tortillas, stack them and cut into quarters. Arrange on a baking sheet and sprinkle pumpkin spice and a pinch of salt over the top (sprinkle from at least 12 inches above the baking sheet for even coverage of the small amount). Bake until crisp and golden, about 15 minutes.

1 tablespoon garlic salt
1 tablespoon cayenne pepper
1 tablespoon freshly ground black pepper
1 tablespoon dried oregano
24 whole chicken wings

Steps:

  • Gather the ingredients.
  • Take the whole chicken wings and flip the tips around, tucking them so they don't burn.
  • Combine the garlic salt, cayenne, black pepper, and dried oregano in a large resealable bag.
  • Toss the chicken wings in the bag with the spices to coat. Let sit in the refrigerator for 15 to 20 minutes.
  • Meanwhile, prepare a gas or charcoal grill for indirect heat . Adjust the heat on the active burner to medium-high (400 F to 475 F). When hot, place the chicken wings over the direct heat for 5 minutes, turning frequently. Grill the chicken wings in batches, if necessary.
  • Move the wings to the indirect (cooler) side and grill, turning once, and continue grilling until done (you want an internal temperature of 175 F to 180 F). This should take about 20 to 25 minutes. Watch closely to prevent burning.
  • Remove the wings from grill and serve immediately.

1/4 cup chicken broth
1 tablespoon soy sauce
1 tablespoon sugar
2 tablespoons lemon juice
1 lemon, zested
3 tablespoons vegetable or peanut oil
1 head broccoli, cut into florets, stalks peeled and sliced
1 (16-ounce) bag coleslaw mix (recommended: Dole Classic Coleslaw Mix)
1 (15-ounce) can baby corn, drained

Steps:

  • In a small bowl, whisk together the broth, soy sauce, sugar, lemon juice and zest, and set aside.
  • In a large nonstick saute pan or a wok, heat the oil over high heat. When the oil begins to swirl add the broccoli florets and stalks. Saute while rapidly tossing and stirring. When the broccoli brightens, add the coleslaw mix and baby corn; toss to wilt the mix. Once tender, pour in the sauce. Stir to coat and transfer the mixture to a serving bowl. Serve warm.

3 Tbsp. Buffalo wing sauce

  • Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 400ºF.
  • Place wings in single layer in shallow foil pan. Place pan on grate over unlit area; close lid. Grill 20 min. or until wings are lightly browned, monitoring for consistent temperature.
  • Meanwhile, mix mayo, hot pepper sauce and garlic powder until blended. Reserve 1/2 cup mayo mixture; mix remaining mayo mixture with ranch dressing.
