1 lb of boneless skinless chicken breast OR 2 lbs whole chicken cut into pieces with skin removed
1 cup plain yogurt
1/2 tbsp turmeric powder
1 1/2 tbsp ground garam masala powder
2 tbsp ground biryani masala powder
1/2 tbsp chili powder
1 tsp paprika
4 cups of basmati rice
6 cups of water
5 garlic cloves
3 tbsp of fresh ginger
8 whole cardamom pods
4 star of anise
1/2 cinnamon stick
3 whole fresh chili
4 tbsp ghee
1 tbsp coconut oil
2 medium red onion
3 small tomato or 2 medium tomatoes
10 fresh curry leaves
4 bay leaves
1 cup chopped fresh cilantro (coriander)
1 cup chopped fresh mint **optional
40 cashews
1/4 cup of golden raisins
1 white onion (fried)

Steps:

  • Cut the chicken into desired pieces. Add lemon and salt to the chicken.
  • In a separate bowl, add 1 cup of yogurt, turmeric powder, ground garam masala powder, ground biryani masala powder, chili powder, and paprika. Mix all of the ingredients together.
  • Add the yogurt biryani marinade to the chicken and mix well. Let the chicken rest for a minimum of 15 minutes.
  • Soak the basmati rice in water for 10 minutes.
  • On medium heat. Add oil and ghee to the pan. Add the whole cardamom, cinnamon stick, curry leaf, bay leaf, star of anise, and sliced red onion.
  • Mash the garlic and ginger paste with a mortar and pestle.
  • Once the onion starts to get golden brown, add the crushed garlic and ginger.
  • Add chili peppers that are sliced down the center.
  • Add the chicken and mix well.
  • Add the chopped tomatoes. Continue to cook on medium for 10 minutes covered.
  • Add basmati rice. Mix well.
  • Add 6 cups water and turn heat to high uncovered. Once the rice starts to boil, then turn to medium.
  • Once the water goes below the rice, mix slowly 2 turns, then cover the rice and turn to low heat. Rice is cooked once tender (after about 15 minutes).
  • Slice the white onion.
  • In a separate pot, fry the white onion in vegetable oil to a golden brown color. Alternatively, pan fry the onion in some olive oil.
  • Wash and remove the mint and cilantro leaves. Chop the mint and cilantro.
  • Toast the cashews in a dry pan on medium heat.
  • On top of the biryani, add the fried onion, toasted cashews, golden raisins, chopped cilantro, and chopped mint.

This is a delicious Pakistani/Indian rice dish which is often reserved for very special occasions such as weddings, parties, or holidays such as Ramadan. It has a lengthy preparation, but the work is definitely worth it. For biryani, always use long grain rice. Basmati rice with its thin, fine grains is the ideal variety to use. Ghee is butter that has been slowly melted so that the milk solids and golden liquid have been separated and can be used in place of vegetable oil to yield a more authentic taste.

4 tablespoons vegetable oil
4 small potatoes, peeled and halved
2 large onions, finely chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger root
½ teaspoon chili powder
½ teaspoon ground black pepper
½ teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon salt
2 medium tomatoes, peeled and chopped
2 tablespoons plain yogurt
2 tablespoons chopped fresh mint leaves
½ teaspoon ground cardamom
1 (2 inch) piece cinnamon stick
3 pounds boneless, skinless chicken pieces cut into chunks
2 ½ tablespoons vegetable oil
1 large onion, diced
1 pinch powdered saffron
5 pods cardamom
3 whole cloves
1 (1 inch) piece cinnamon stick
½ teaspoon ground ginger
1 pound basmati rice
4 cups chicken stock
1 ½ teaspoons salt

Steps:

  • In a large skillet, in 2 tablespoons vegetable oil (or ghee) fry potatoes until brown, drain and reserve the potatoes. Add remaining 2 tablespoons oil to the skillet and fry onion, garlic and ginger until onion is soft and golden. Add chili, pepper, turmeric, cumin, salt and the tomatoes. Fry, stirring constantly for 5 minutes. Add yogurt, mint, cardamom and cinnamon stick. Cover and cook over low heat, stirring occasionally until the tomatoes are cooked to a pulp. It may be necessary to add a little hot water if the mixture becomes too dry and starts to stick to the pan.
  • When the mixture is thick and smooth, add the chicken pieces and stir well to coat them with the spice mixture. Cover and cook over very low heat until the chicken is tender, approximately 35 to 45 minutes. There should only be a little very thick gravy left when chicken is finished cooking. If necessary cook uncovered for a few minutes to reduce the gravy.
  • Wash rice well and drain in colander for at least 30 minutes.
  • In a large skillet, heat vegetable oil (or ghee) and fry the onions until they are golden. Add saffron, cardamom, cloves, cinnamon stick, ginger and rice. Stir continuously until the rice is coated with the spices.
  • In a medium-size pot, heat the chicken stock and salt. When the mixture is hot pour it over the rice and stir well. Add the chicken mixture and the potatoes; gently mix them into the rice. Bring to boil. Cover the saucepan tightly, turn heat to very low and steam for 20 minutes. Do not lift lid or stir while cooking. Spoon biryani onto a warm serving dish.

2 cups rice
2 cups ground chicken
1 large onion thinly sliced
1/2 cup cilantro, thinly sliced
1/2 cup olive oil
2 cups milk
2 cups water
salt to taste
Spices:
1/2 stick of cinnamon
4 pieces of cardamom
8 pieces of cloves
2 teaspoons freshly grated black peppers
2 teaspoons of chopped garlic
2 teaspoons of chopped ginger
1/2 teaspoon turmeric
1 teaspoon cumin seeds
2 teaspoon paprika

Steps:

  • 1. Wash the rice and soak in water. Mix the milk, water and salt in one container 2. Heat oil in a nonstick stock pot for a minute on medium heat 3. Add all the spices, wait for a few seconds and then add the onions and crank up the heat to medium high. Wait for onions to turn deep brown (about 5 - 9 minutes) 4. Add the ground chicken and brown it. (about 10 minutes) 5. Drain the rice and add it to the chicken (don't stir) 7. Since my husband is from southern India, I make Indian cuisine 5-6 days a week. Indian cooking is some of the healthiest in the world. Below I have shared the very best biryani recipe with all of you, one of the most coveted dishes in India. It is purely authentic and I did not "Americanize" any part of it. This is one of my husband's favorite dishes. For vegetarians, you can make this using tofu, but skip the pressure cooker step and boil the rice instead. Also, please note that the salt is very important in Indian cooking, as it brings out the flavor of the spices in the recipe. Do not try to use any less salt.

3 chicken breasts, cut into 1-inch cubes
2 cups basmati rice
1 large red onion, chopped lengthwise
2 large tomatoes, diced
2 tablespoons fresh ginger-garlic paste
1/2 tablespoon turmeric
1 whole cinnamon stick
4 whole cloves
2 bay leaves
3/4 tablespoon salt
1/2 teaspoon white vinegar
2 tablespoons red chili powder
5 green chilies, chopped
1 teaspoon cayenne pepper
1 tablespoon coriander powder
1/2 tablespoon garam masala
1 generous pinch saffron thread (optional)
1 tablespoon chicken garam masala powder (optional)
1/2 cup plain yogurt
1 bunch cilantro leaf, chopped
3 cups water
ghee (this is crucial to the flavor)
2 teaspoons rose water
3 hard-boiled eggs, sliced

Steps:

  • Marinate the chicken pieces in yogurt, 1 tablespoon ginger-garlic paste, red chili powder, and vinegar. Keep in refrigerator for about 1 hour.
  • Soak basmati rice for 30 minutes in water. Drain. Fry the soaked rice in 3 tablespoons of ghee for only 2 minutes, stirring constantly. Set aside.
  • Heat 2 tablespoons of ghee in another pan. Over medium heat, fry cloves, cinnamon stick, and bay leaves for 2-3 minutes. Add turmeric and onions and fry until soft, stirring constantly. Add the other 1 tablespoon of ginger-garlic paste and fry for another 3 minutes.
  • Add tomatoes. Cook until very mushy. After that, stir in the salt and cayenne pepper and cook for 1-2 minutes.
  • Add marinated chicken pieces and cook for 2 minutes, then mix in only half of the chopped cilantro leaves.
  • Add coriander powder, garam masala, saffron threads, and chicken masala, frying together for about 5 minutes.
  • Add the fried mixture to a pressure cooker with 3 cups of water and pressure cook for one whistle (or for roughly 20-25 minutes if you do not have a whistle mechanism).
  • Remove from heat. Open lid when pressure is released. Stir in the fried rice and remaining cilantro and mix well. Pressure cook again for one whistle or 20 minutes.
  • When done, sprinkle rose water over finished biryani and garnish with hard boiled eggs.

1 tablespoon ginger paste
1 tablespoon garlic paste
1 teaspoon kosher salt
1 ½ teaspoons ground cumin
1 ½ teaspoons ground coriander
½ teaspoon garam masala
1 teaspoon red chile powder
1 lime, juiced
1 ½ lb bone-in chicken thighs, and/or drumsticks
1 ½ cups basmati rice
5 cups water, plus more for rinsing and soaking
4 whole green cardamom pods
1 whole black cardamom pod
1 whole cinnamon stick
2 dried bay leaves
4 whole cloves
1 teaspoon kosher salt

2 yukon gold potatoes, peeled and chopped
2 tablespoons neutral oil, plus more for frying

Steps:

  • Marinate the chicken: In a large bowl, whisk together the yogurt, ginger paste, garlic paste, salt, cumin, coriander, garam masala, chile powder, and lime juice. Add the chicken and toss to coat well, then cover the bowl with plastic wrap and marinate for 1 hour at room temperature, or in the refrigerator for up to 3 hours. Remove the chicken from the refrigerator 1 hour before cooking to bring to room temperature.
  • Soak the rice: In a medium bowl, gently rinse the rice in cool water, ensuring the grains don't break, then drain. Repeat a few more times, until the water is clear, then cover the rice with fresh water and soak for 30-45 minutes. Drain well.
  • Partially cook the rice: In a medium pot, combine the water, green and black cardamom pods, cinnamon stick, bay leaves, cloves, and salt. Cover and bring to a boil over medium-high heat. Add the rice and cook until about three-quarters of the way done, but still al dente, about 4 minutes. Drain, then spread the rice on a plate or baking sheet in an even layer and let cool
  • Make the biryani: Bring a medium pot of water to a boil over medium-high heat and season generously with salt. Add the potatoes, cover, and cook until almost tender, about 10 minutes. Drain and allow to dry for a few minutes.
  • Heat about 2 inches of neutral oil in a deep pot over medium-high heat until the temperature reaches 350°F (180°C).
  • Blot the boiled potatoes with paper towels to remove any excess moisture, then add to the hot oil and fry until golden brown, 3-5 minutes. Use a spider or slotted spoon to transfer to a paper towel-lined plate to drain.
  • Add the sliced red onions to the hot oil and fry until golden brown, 1-2 minutes. Use the spider or slotted spoon to transfer to a separate paper towel-lined plate to drain.
  • Add the saffron threads to a small bowl. Pour in the boiling water and gently crush the saffron with the back of a spoon to release the color and flavor.
  • Preheat the oven to 400°F (200°C).
  • In a large, heavy-bottomed pot with a lid, heat 2 tablespoons of neutral oil and 1 tablespoon ghee over medium-high heat until shimmering. Add the green cardamom, cinnamon stick, cloves, black peppercorns, mace, bay leaf, red chile, star anise, cumin seeds, and fennel seeds and cook for 1-2 minutes, until fragrant, but not burnt.
  • Add the chopped onion and sauté for 5 minutes, until just beginning to brown. Add the tomatoes and cook for 3-5 minutes, until softened.
  • Add the marinated chicken, water, and 1 teaspoon of salt and stir to combine. Cover and cook for 10 minutes, until chicken is starting to cook through. Stir in the fried potatoes and prunes. Remove the pot from the heat.
  • Transfer half of the chicken mixture to a medium bowl. Layer half of the par-boiled rice on top of the chicken in the pot. Sprinkle with half of the saffron water, half of the cilantro and mint, 1 teaspoon ghee, and half of the fried onions. Layer the remaining chicken over the rice layer, then top with the remaining rice, saffron water, cilantro, mint, 1 teaspoon ghee, and fried onions.
  • Cover the pot tightly with foil, then place the lid on top. Cook over high heat for about 2 minutes, then transfer to the oven and bake for 20 minutes, until rice is tender and the chicken is cooked through.
  • Remove the pot from the oven and allow the biryani to rest covered for 10 minutes. Remove the lid and foil.
  • Serve the biryani immediately with raita and pickled mango.
