4 pork Ribeye (Rib) chops, 1-inch thick
Salt and pepper to taste
Olive oil for brushing grill grate
1 tsp. olive oil
½ yellow onion, chopped
¼ c. ketchup
1 tbsp. brown sugar
1 tbsp. Worcestershire sauce
1 tbsp. apple cider vinegar
¼ tsp. cayenne pepper

Steps:

  • Preheat grill over medium-high heat and brush with olive oil. Season chops with salt and pepper on both sides. Place pork on grill for 8-9 min., turning once halfway through, until internal temperature is 145°F as measured by a meat thermometer. Remove pork from grill, tent with foil and rest for 3 min.
  • Spicy BBQ Sauce: Heat oil in pot over medium heat. Sauté onion until soft; add ketchup, brown sugar, Worcestershire sauce, vinegar and cayenne. Simmer for 15 min. until sauce thickens; turn off heat. Once cooled, puree sauce in blender. Serve chops with spoonful of sauce.

4 (1½"-thick) bone-in pork chops (about 4 lb. total)
3 tsp. Diamond Crystal or 1½ tsp. Morton kosher salt, divided, plus more
1 Tbsp. crushed red pepper flakes
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. smoked paprika
1 tsp. cumin seeds, divided
½ cup honey
2 ripe peaches or nectarines, cut into 1" pieces
½ small red onion, finely chopped
1 jalapeño, finely chopped
Juice of 2 limes
¼ cup chopped cilantro
Vegetable oil (for grill)

Steps:

  • Trim excess fat from pork chops. Pat dry and season both sides with salt. Set aside.
  • Mix red pepper flakes, garlic powder, onion powder, paprika, ½ tsp. cumin seeds, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a small bowl to combine. Heat honey in a small saucepan over medium just until warm. Remove pan from heat and stir in spice mixture. Set spiced honey aside.
  • Toss peaches, red onion, jalapeño, lime juice, cilantro, remaining ½ tsp. cumin seeds, and remaining 2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt in a medium bowl to combine. Chill peach pico de gallo until ready to serve.
  • Prepare a grill for 2-zone heat (for a charcoal grill, bank two thirds of coals on one side of grill and scatter remaining coals on other side; for a gas grill, set one burner to high heat and remaining burners to medium-low); oil grate. Grill reserved chops on hotter side of grill, moving to cooler side as needed to control flare-ups, until lightly charred on both sides, about 3 minutes per side. Move pork chops to cooler side of grill, cover, and grill, turning often and basting with reserved spiced honey, until an instant-read thermometer inserted into the thickest part of pork chops registers 145°, about 5 minutes longer. Transfer pork chops to a platter and let rest 10 minutes.
  • Spoon peach pico de gallo over pork chops just before serving.

Four 1-inch-thick bone-in pork chops (8 to 10 ounces each)
Base Brine, recipe follows
2/3 cup small-diced pineapple
2/3 cup small-diced zucchini
1/4 cup fresh mint leaves, torn
2 tablespoons extra-virgin olive oil
1 tablespoon chardonnay or white wine vinegar
1 teaspoon finely chopped shallots
1 teaspoon finely minced jalapenos
1/4 teaspoon grated fresh ginger
Kosher salt and freshly cracked black pepper
1/2 cup brown sugar
1/3 cup kosher salt
1 teaspoon black peppercorns
3 cloves garlic, smashed
1 sprig fresh thyme
1 sprig fresh rosemary
1 bay leaf

Steps:

  • Place the pork chops into a glass baking dish or bowl and pour the chilled Base Brine over top. Cover with plastic wrap and refrigerate for 8 hours or overnight.
  • About an hour before serving, make the salsa. Combine the pineapple, zucchini, mint, olive oil, chardonnay, shallots, jalapenos, ginger and some salt and pepper in a mixing bowl. Let marinate 1 hour. (This is best if allowed to marinate for 1 hour, but you can also serve it straight away if necessary.)
  • When ready to cook the pork, prepare a grill for medium-high heat. Remove the pork chops from the brine, pat dry and allow to sit out while the grill is preheating.
  • Season the pork chops on all sides with salt and pepper. Place onto the hot grill and cook until the internal temperature registers 145 degrees F on a meat thermometer, 7 to 8 minutes per side for medium. Allow the pork chops to rest for 5 minutes before serving topped with the salsa.
  • Combine the brown sugar, salt, peppercorns, garlic, thyme, rosemary, bay leaf and 8 cups (2 quarts) water in a large stockpot and heat just to dissolve the salt and sugar. Chill thoroughly before using.

  • Preheat oven to 350 degrees. Place chiliies and 2 garlic cloves in small baking dish. Sppon 1 tablespoon olive oil over run to coat. Roast until chilies and garlic are very soft turning once about 40 minutes. Cool. Puree mixture in processor. 6 (6 ounce) lean pork chops, center cut, 1/2 " thick
1 1/4 cups water
2 tablespoons vinegar
2 tablespoons onions, minced
1 tablespoon Worcestershire sauce
2 teaspoons sugar
1 1/4 teaspoons pepper
1 teaspoon chili powder
1/2 teaspoon dry mustard
1/4 teaspoon garlic powder
1/4 teaspoon ground red pepper
1/4 teaspoon hot sauce
vegetable oil cooking spray

Steps:

  • Trim pork chops and place them in a shallow dish; set aside.
  • Combine water and next 10 ingredients in a medium saucepan and bring to a boil.
  • Pour over the chops.

1 can (10 ounces) diced tomatoes with chilies, undrained
1/2 cup raisins
1/4 cup currant jelly
4-1/2 teaspoons cider vinegar
1/4 teaspoon each garlic powder, salt and crushed red pepper flakes
12 boneless pork chops (3/4 inch thick)

Steps:

  • In a blender, combine the tomatoes, raisins, jelly, vinegar and seasonings; cover and process until smooth. Pour into a 1-qt. saucepan; bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until thickened. set aside 3/4 cup for serving., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Remove pork from the grill, tent it with foil; let it rest for 3 minutes. To make the mashed potatoes, add potatoes to a pot with water, over high heat and boil for 15 minutes. 4 ears corn on the cob
1/4 cup butter or margarine, softened
4 bone-in pork chops (1-1/4 lb.), 1/2 inch thick
1 pkg. (10 oz.) torn baby salad greens
1/2 cup KRAFT Classic Ranch Dressing

Steps:

  • Heat grill to medium-high heat.
  • Mix barbecue sauce, juice and hot sauce. Reserve 1/4 cup mixture; set aside. Place each ear of corn on separate sheet of heavy-duty foil; spread with butter. Wrap tightly with foil; grill 5 min.
  • Add chops; grill 5 min. Brush chops with half of the remaining barbecue sauce mixture. Turn chops and corn; grill 4 to 6 min. or until corn is tender and chops are done (145ºF), turning corn occasionally. Brushing chops with remaining barbecue sauce mixture.

2 lbs boneless, center-cut pork chops
Salt & pepper, to taste
1 can (20 oz) sliced pineapple, juice reserved
2 tbsp soy sauce
2 tbsp ketchup
1 tbsp brown sugar
1/4 tsp ground ginger
1/4 tsp garlic powder
1/8 tsp crushed red pepper flakes
scallions (optional)

Steps:

  • Preheat grill to medium-high heat. Pat pork dry, season generously with salt and pepper. Pat dry 8 of the pineapple rings. As grill heats, make glaze. In small sauce pan or skillet, combine 1/2 cup pineapple juice with soy sauce and red pepper flakes. Bring to a boil over medium-high heat and cook, stirring frequently, until thick and shiny, 3-5 minutes. Set aside. Oil grill grate. Set pork and pineapple rings on grill. Grill, covered, until nicely marked, about 5 minutes. Turn, baste cooked side of pork with glaze. When pork reaches desired doneness (safe temp is 145°), remove from grill. Baste other side with glaze. Serve immediately, topped with 2 grilled pineapple rings per chop. Serve with scallions and remaining glaze, if you like. Refrigerate any leftovers.
