Easy Grilled Fish Fillet in Foil Packets image

This super easy method for grilling fish is pretty foolproof, and you can use any fresh fish that's available to you in your area. It's almost 90 degrees today, which means I'm grilling tonight. In fact I use my outdoor grill just about every night in the summer to make quick, easy, healthy dinners.

4 porgy fillets (about 5 oz each)
4 tsp olive oil
salt and fresh pepper (to taste)
4 sprigs fresh herbs (parsley, rosemary, oregano)
1 lemon (sliced thin)
4 large pieces heavy duty aluminum foil (about 18 to 20 inches long)

Steps:

  • Place the fish in the center of the foil, season with salt and pepper and drizzle with olive oil.
  • Place a slice of lemon on top of each piece of fish, then a sprig of herbs on each.
  • Fold up the edges so that it's completely sealed and no steam will escape, creating a loose tent.
  • Heat half of the grill (on one side) on high heat with the cover closed.
  • When the grill is hot, place the foil packets on the side of the grill with the burners off (indirect heat) and close the grill.
  • Depending on the thickness of your fish, cook 10 to 15 minutes, or until the fish is opaque and cooked through. My porgy fillets took about 12 minutes.

4 cod fillets ((or grouper or halibut))
4 tablespoons butter
1 lemon (sliced)
4 teaspoons lemon pepper seasoning
1 teaspoon garlic powder
1 teaspoon smoked paprika

Steps:

  • Preheat the grill to medium, about 350-375 degree F.
  • Lay 4 large squares of foil on the countertop. Cut the butter into 4 sections. Slice the lemon into rounds. Place one tablespoon of butter and one lemon slice in the center of each piece of foil.
  • Pat each fish fillet dry with a paper towel. Then lay one fillet over the butter and lemon on each piece of foil.
  • In a small bowl, mix the lemon pepper, garlic powder, and paprika. Sprinkle generously over the top of each fish fillet.
  • Pull the two opposite sides of the foil up over the cod. Fold the foil down twice to seal the top. Then flatten and fold the two ends together, twice, to make the foil packets airtight.
  • Place the foil packets on the hot grill. Cover the grill for 8-10 minutes. 8 minutes for fillets under 1 inch thick. 10 minutes for fillets over 1 inch thick.
  • Remove from the grill. Once the foil is cool enough to touch, open the packets and serve warm.

1 Tbsp. honey
1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt
1 tsp. finely grated lemon zest
6 garlic cloves, finely chopped
4 Tbsp. unsalted butter, room temperature
2 Tbsp. finely chopped dill, plus more for serving
1 (1 lb.) boneless salmon fillet, preferably skin-on
4 Tbsp. fresh lemon juice, divided

Steps:

  • Prepare a grill for medium heat. Whisk 1 Tbsp. honey, 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt, and 1 tsp. finely grated lemon zest in a small bowl to combine. Add 6 garlic cloves, finely chopped, 4 Tbsp. unsalted butter, room temperature, and 2 Tbsp. finely chopped dill and whisk again to combine (some lemon zest may remain separate and that's okay).
  • Tear off a large piece of foil according to the length and thickness of salmon (15x15" or larger) and place on a rimmed baking sheet. Place one 1 lb. boneless salmon fillet, preferably skin-on, arranging skin side down if skin is on, in center of foil (the skin will stick slightly to foil and brown while the fish cooks; you want this as it will add to the sauce). Spread garlic butter over fish, then drizzle 3 Tbsp. fresh lemon juice on top. Carefully fold one side of foil up and over fish so lemon juice stays contained, then bring other sides up to meet it and fold together to seal, leaving about a 4" opening on top for steam to escape (this will help sauce reduce a bit).
  • Place foil packet on grate and grill fish until opaque throughout and firm, 16-20 minutes. Transfer packet to a cutting board and let fish rest 5 minutes.
  • Carefully open foil packet and cut fish in half. Transfer to plates; pour juices from packet over. Drizzle fish with remaining 1 Tbsp. fresh lemon juice, dividing evenly, and top with more finely chopped dill.

2 tablespoons extra-virgin olive oil
3/4 teaspoon smoked paprika
Kosher salt and freshly ground pepper
4 6-ounce skinless catfish fillets
2 lemons (1 thinly sliced, 1 juiced)
1/3 cup roughly chopped fresh parsley or mint
1 medium red onion, thinly sliced
1 cup cherry tomatoes, halved
2 cloves garlic, finely chopped

Steps:

  • Preheat the oven to 425 degrees F. Lay a 2 1/2-foot-long sheet of aluminum foil on a baking sheet, letting the ends hang off. Lay another sheet of foil perpendicular on top. Rinse the couscous in a fine-mesh sieve under cold water. Mix the olive oil, paprika and 3/4 teaspoon each salt and pepper in a small bowl. Pile the couscous in the center of the foil; toss with 1/2 tablespoon of the seasoned oil and spread in an 8-inch-square layer.
  • Brush the fish fillets on both sides with 1 tablespoon of the seasoned oil and arrange side by side on top of the couscous. Toss the lemon slices, parsley, red onion, tomatoes, garlic and the remaining 1/2 tablespoon seasoned oil in a bowl, then scatter evenly over the fish and couscous. Drizzle with 2/3 cup water, then bring the opposite ends of the foil together, fold over and crimp closed to make a sealed packet.   • Open the foil packet; divide the fish among plates. Toss the couscous and vegetables; serve with the fish. Sprinkle with the lemon juice.

Steps:

  • If grilling, preheat the grill to Medium-High.
  • If baking, preheat the oven to 400F.
  • Prepare 4 sheets of foil, put them on the counter and spray with non-stick cooking spray.
  • Slice the butter into 8 pieces.
  • Put each fish fillet in the middle of the foil sheet.
  • Sprinkle the fish with salt and pepper.
  • Put 2 pieces of butter on top of each fish fillet.
  • Put the lemon slices on top of the fish.
  • Fold the foil up from both ends to make closed foil packets.
  • If grilling, put the foil packets on the grill, close the grill and grill for 7 minutes per side.
  • If baking, put the foil packets on the baking sheet, put in the oven and bake for 15 minutes.
  • Unwrap 1 foil packet to check for doneness (the fish should be opaque and flake easily with a fork). If not done, wrap it back and cook the fish for 5 more minutes.

2 tablespoons margarine or 2 tablespoons butter
1/4 cup lemon juice
1 tablespoon parsley, Chopped
1 teaspoon dill weed
1 teaspoon salt
1/4 teaspoon pepper
paprika
1 medium onion, Thinly Sliced

Steps:

  • On 4 large buttered squares of heavy-duty aluminum foil, place equal amounts of fish.
  • In small saucepan, melt margarine; add lemon juice, parsley, dill weed, salt and pepper.
  • Pour equal amounts over fish.
  • Sprinkle with paprika; top with onion slices.
