1 large sweet potato, cut into 1/2-inch pieces
1 tablespoon olive oil
1 tablespoon packed light brown sugar
¼ teaspoon sea salt
¼ teaspoon chili powder
¼ teaspoon ground paprika
¼ teaspoon cayenne pepper
⅛ teaspoon onion powder
ground black pepper to taste

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
  • Place sweet potato in a large bowl. Drizzle with olive oil, then add brown sugar, salt, chili powder, paprika, cayenne pepper, onion powder, and pepper. Stir until potatoes are evenly coated and spread out onto the air fryer rack.
  • Cook on the upper rack of the preheated air fryer until browned and crispy, 15 to 20 minutes.

  • Chop potatoes into cubes
  • set air fryer to 400 degrees, for 20 minutes
  • put potatoes in, cook for 20 minutes
  • put done potatoes on plate, add frank's red hot sauce and ketchup
  • serve with eggs, beans or have them by themselves!

If you decide to tackle this job, make sure that you are not going to splatter, or if you do that you are wearing an apron. **The turmeric stains everything it touches. Keep that in mind. Even when serving.**

5 -6 medium potatoes
1/2 medium onion
1/4 cup margarine or 1/4 cup olive oil, if you wish
1 teaspoon cayenne pepper
2 tablespoons ground turmeric
2 tablespoons ground cumin
1 tablespoon chili powder
1 tablespoon garlic powder

Steps:

  • Peel and slice potatoes thin about 1/4" thick.
  • Melt butter or olive oil in deep dish fry pan.
  • Mix all the spices together in a "disposable" container and keep to the side.
  • Add the potatoes and sliced onions to the hot oil.
  • Cover and let cook for about 5-7 minutes.
  • Add the mixed spices with a table spoon by sprinkling over the top and mixing in real good. Try to cover as much of the potatoes as possible with the spice.
  • Cook uncovered, while turning periodically until potatoes are as crispy or as done as you like them.

FRIED POTATOES WITH SPICY AIOLI

1 1/2 pounds 1- to 2-inch Yukon gold potatoes (about 16)
Kosher salt
1 cup mayonnaise
2 tablespoons Sriracha
1 teaspoon smoked paprika
1 clove garlic, minced
1 lime, zested and juiced
Kosher salt
Favorite fat, for frying (I love saved bacon fat or duck fat)
2 scallions, thinly sliced on a bias, to garnish

Steps:

  • For the potatoes: To a small saucepan, add the potatoes and cool water to cover. Salt the water generously and bring to a boil over high heat. Reduce the heat to medium-high, and simmer until the potatoes are just tender when pierced with a fork, 10 to15 minutes. Remove from the water and let cool. While the potatoes are cooling, make the spicy aioli.
  • For the spicy aioli: In a large bowl, combine the mayonnaise, Sriracha, paprika, garlic lime zest and juice and a pinch salt. Stir to combine and set aside.
  • To finish the potatoes: Heat a large cast-iron skillet with your favorite fat until it reaches 350 degrees F. The fat should come 1 to 2 inches up the side of the pan.
  • With the heel of your hand, smash the potatoes so they are relatively flat but still holding together. Add the potatoes to the fat and cook until golden brown, about 3 minutes. Remove from the fat with a slotted spoon and place in the bowl with the aioli. Add a spoonful of the hot fat, stir to coat and transfer to a serving platter. Garnish with the scallions and serve immediately. I guarantee you will never look at a French fry the same way again.

1 1/2 lbs sweet potatoes, peeled and cut into 1/2-inch julienne and then in 1/2-inch diagonal lengths (about 4 medium sweet potatoes)
1 navel orange, zest of, cut julienne
1 tablespoon peanut oil
1 1/2 tablespoons minced garlic
1 tablespoon minced ginger
1/2 teaspoon chili paste with garlic (or more)
1 1/2 teaspoons cornstarch
2 tablespoons water
1 tablespoon minced scallion top
3/4 cup chicken broth or 3/4 cup water
3 1/2 tablespoons soy sauce
3 tablespoons chinese rice wine or 3 tablespoons dry sherry
1 1/2 tablespoons rice vinegar
2 teaspoons sugar
1 teaspoon sesame oil
1/4 teaspoon pepper

Steps:

  • Combine sauce ingredients and set aside.
  • Heat oil in a wok or large skillet that has a cover. Add orange zest, garlic, ginger, and chili paste and stir-fry until fragrant, about 10 seconds. Add sweet potatoes and stir-fry until coated, about 30 seconds.
  • Re-stir sauce and add to sweet potatoes. Bring to a boil, then cook, covered, over moderate heat until sweet potatoes are tender but not soft, 10 - 12 minutes.
  • Dissolve cornstarch in water and add to sweet potatoes, stirring until thickened. Stir in scallions.

I love everything with a little spicy kick so I make these with my mexican foods as a side. (even though I use cajun spice) You can add as much or as little as you prefer, I like mine spicy! : ) These are simple easy and quick but pack an amazing taste!!

2 lbs red potatoes cut into wedges
garlic powder, salt, pepper, and cajun spice
veg oil
a few pats of butter

Steps:

  • 1. Boil potatos for a few minutes but not all the way through. Just long enough to soften them a tiny bit. Then drain well, careful not to bruise (they should not be really soft) Allow to cool off completely.
  • 2. In a large bowl add potatoes and seasoning to taste. I add alot of garlic and cajun spice) and gently toss potatoes till completely covered. Add more seasoning if needed to cover all potatoes.
  • 3. In a large skillet heat veg oil and add potatoes. Fry until cooked through and the outsides are browned and crispy.
  • 4. Add a few pats of butter to top and gently toss potatoes. Fry a few minutes more.

DUM ALOO (FRIED POTATOES IN SPICY SAUCE )

This is a north Indian (Kashmiri) dish , traditionally the recipe is made with potatoes cooked in yogurt. This is not the authentic recipe. Its my take on the Dum Aloo. Tastes equally great. It can be served with rice/roti/paratha/naan.

8 baby potatoes (Boiled)
oil (for frying)
2 tablespoons oil
1 teaspoon cumin seed
1 cinnamon stick
2 -3 green cardamoms
1 medium onion (finely chopped)
1 teaspoon ginger-garlic paste
3 tomatoes (puried)
1/2 teaspoon turmeric powder
1 1/2 tablespoons chili powder (can be to taste)
1 teaspoon coriander powder
1 teaspoon fennel seed
2 teaspoons garam masala (can be to taste)
salt (to taste)
water
1/2 tablespoon sugar
cilantro

Steps:

  • Peel the potatoes and pierce them all over with a fork.
  • Heat the oil in a pan for frying and deep fry the potatoes till they get a red- brown tinge.
  • In a separate pan, heat the 2tbsp oil on medium heat.Add cumin seeds, cardamoms and the cinnamon stick to the hot oil (the seeds should crackle).
  • Add onions and saute them till they become translucent.
  • Add the ginger garlic paste and saute them till they loose the raw smell.
  • Add the tomatoes and cook then covered for 5 minutes.
  • Add the turmeric powder, chillli powder, corriander powder, fennel seeds and garam masala, Saute the spices till the oil starts oozing out.
  • Add the yogurt and keep stirring the yogurt until it comes to a boil.
  • Now add salt and stir.
  • Add about 2 cups of water and bring to a rolling boil.
  • Add the potatoes and cook for 15 minutes on medium heat, covered.
  • Add sugar and cook for 5 more minutes.
  • Garnish with chopped cilantro.

  • Pour into serving dish and garnish with cilantro.
  • Serves 4 but I just ate most of it as a lunch.
