My DH loves egg salad sandwiches.... I decided I'd try something different one day and I found this recipe.... Green chiles and pepper sauce add pizzazz to the traditional classic.

1 (4 ounce) can diced green chilies
4 hard-cooked eggs, peeled and chopped
3 tablespoons light mayonnaise or 3 tablespoons fat-free mayonnaise
2 tablespoons green onions, sliced
1/4 teaspoon hot pepper sauce
4 bagels (of course my DH just used sliced bread) or 4 English muffins, split and toasted (of course my DH just used sliced bread)

Steps:

  • Combine chiles, eggs, mayonnaise dressing, green onion and hot pepper sauce in medium bowl.
  • Season with salt and ground black pepper.
  • Spread egg salad on toasted bagels or English muffins or bread.

¼ cup mayonnaise
2 teaspoons coarse-grain Dijon-style mustard
2 teaspoons honey
1 teaspoon prepared horseradish
¼ teaspoon cayenne pepper
1 dash hot pepper sauce
salt and ground black pepper to taste
2 English muffins, split and toasted
4 slices Canadian-style bacon
⅓ cup shredded pepperjack cheese
2 tablespoons chopped green onion

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir eggs, mayonnaise, mustard, honey, horseradish, cayenne pepper, and hot pepper sauce together in a bowl; season with salt and black pepper.
  • Place English muffins, cut-side up, on an ungreased baking sheet. Place 1 slice Canadian bacon on each muffin. Spoon 1/4 cup of egg mixture on top of bacon and sprinkle with pepper jack cheese. Top with green onions.
  • Bake in preheated oven until cheese melts, 6 to 8 minutes.

8 large eggs, hardboiled, cooled & peeled
1/2 cup diced celery (inner stalks best)
1/2 cup diced onion
1 1/2 tablespoons prepared mustard (I use brown)
1/2 teaspoon mccormick chipotle chile
1/3 cup mayonnaise

Steps:

  • Dice eggs - I use an egg slicer & pass egg through twice at 90 degree angles for regular dice.
  • Stir in mustard, chile powder & mayo.
  • Fold in celery & onion.
  • Chill for 45 minutes.
  • Taste - be ready for a little toasty kick! Add salt & black pepper if desired. Serve with lettuce & thinly sliced tomato on lightly toasted dark pumpernickel. Enjoy!

My husband loves egg salad, so i'm always on the lookout for a good recipe! This is a really easy recipe with lots of good flavor! Hope you enjoy.

7 hard cooked eggs
3 Tbsp salad dressing or mayo (large tbls)
2 tsp dijon mustard
1 clove garlic, minced
5-7 dash(es) hot pepper sauce
1 Tbsp fresh tarragon or dill, chopped
2-3 green onions, finely chopped
salt and pepper to taste

Steps:

  • 1. Chop hard cooked eggs to desired texture. Put in a medium sized bowl and set aside.
  • 2. In a small bowl combine mayo, mustard,garlic, and hot sauce. Mix well.
  • 3. Pour mayo mixture over the chopped eggs and mix well. Add fresh chopped tarragon or dill, green onions, and salt and pepper to taste. Stir to combine. Adjust seasonings to taste.
  • 4. Serve on toasted bread with sliced tomatoes and lettuce!
