20 pitted Deglet Noor dates
1 cup lager-style beer
2 ounces cream cheese, softened
4 gherkin pickles, diced fine
1 teaspoon sriracha
10 sandwich-style pepperoni slices, halved

Steps:

  • In a small bowl, submerge the dates in the lager and soak for 2 hours.
  • Heat a toaster oven to 450 degrees F and place a rack in a quarter sheet pan or use the pan that came with your toaster oven if applicable (see Cook's Note).
  • Thoroughly mix the cream cheese, gherkins and sriracha together, then transfer to a zip-top bag and snip off one corner of the bag, leaving about a 1/2-inch opening.
  • Drain and then open the dates by using a pair of scissors to cut a lengthwise slit in each date. Pipe roughly 1/2 teaspoon of the cream cheese mixture into each date and wrap with half a pepperoni slice. Place the wrapped dates on the rack, pepperoni ends down, and gently press to anchor.
  • Bake until the pepperoni is brown and crispy, about 10 minutes. Cool 5 minutes before devouring.

2 ounces blue cheese
7 slices bacon (not thick-cut), cut into 3-inch lengths

Steps:

  • Soak the dates in the sherry for 2 hours, making sure they're fully submerged.
  • Meanwhile, place the blue cheese in a small zip-top bag, then snip one corner off the bag, leaving about a 1/2-inch opening. Leave at room temperature until ready to fill the dates.
  • Heat a toaster oven to 450 degrees F and place a rack in a quarter sheet pan or use the pan that came with your toaster oven, if applicable (see Cook's Note).
  • Drain but do not rinse the dates. Use a pair of scissors to open each date lengthwise.

One 1-pound box rotini pasta
1 medium onion, chopped
1 medium zucchini, chopped
1 tablespoon chopped garlic
One 6-ounce package sliced pepperoni, roughly chopped
One 28-ounce can chopped tomatoes
6 fresh basil leaves, chopped
Freshly ground black pepper
1 cup shredded mozzarella
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 9-by-13-inch baking dish with 1 teaspoon oil.
  • Bring a large pasta pot of water to a boil over high heat. Add a big pinch of salt and the pasta. Cover and return the water to a boil. Remove the cover and cook for 5 minutes. The pasta will not be completely cooked through.
  • Meanwhile, in a large skillet over medium-high heat, add 1 tablespoon oil. When it is hot, add the onions and zucchini and cook until they are softened and brown slightly, about 5 minutes. Add the garlic and pepperoni and cook for another minute. Add the tomatoes and basil and simmer for 5 minutes. Taste and adjust the seasoning with salt and pepper. Reserve 1 cup of the tomato sauce for another use, such as Round 2 Recipe Garlic Bread Pizza.
  • Stir in the pasta and cheese into the skillet. Pour into the prepared baking dish and smooth out the top. Sprinkle the breadcrumbs evenly over the top and drizzle with the 1 tablespoon oil. Bake until the top is browned and the casserole is bubbling, 20 to 25 minutes.

1/3 cup crumbled Stilton cheese

Steps:

  • Preheat oven to 400 degrees. Place 24 toothpicks in a small bowl filled with water; let soak 15 minutes. Line a baking sheet with parchment paper and fit with a wire rack; set aside.
  • Halve dates lengthwise being careful not to cut all the way through. Place a small amount of cheese in the center of each date. Wrap a piece of bacon around each date. Secure bacon with a toothpick.

¼ cup reduced-sodium soy sauce
½ teaspoon ground ginger
¾ cup dark brown sugar
20 dates, pitted and left whole
20 whole smoked almonds
10 bacon slices, cut in half crosswise

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Soak the toothpicks in a bowl of water. Grease a 9x13-inch baking dish.
  • In a bowl, mix together the soy sauce and ground ginger. Place the brown sugar into a shallow bowl. Spread open a pitted date, then stuff it with a smoked almond. Wrap the date with half a bacon slice, secure it with a toothpick, dip the bundle in soy sauce mixture, and then dip it into brown sugar. Place the wrapped dates into the prepared baking dish. If desired, sprinkle a little more brown sugar over the bundles.
  • Bake in the preheated oven until the bacon is brown and crisp, 15 to 25 minutes. Allow to cool for about 15 minutes before serving; serve warm or at room temperature.
