3 tablespoons butter
3/4 cup finely chopped onion
3/4 cup finely chopped celery
4 cloves garlic, finely chopped
2 tablespoons salt-free seasoning blend
1/2 teaspoon ground red pepper (cayenne)
8 oz peeled cooked crawfish tails, chopped
1 package (8 oz) cream cheese, softened
Celery sticks, if desired

Steps:

  • In 8-inch skillet, melt butter over medium-high heat. Cook onion, celery and garlic in butter 5 minutes, stirring frequently, until tender. Add seasoning blend and red pepper; cook and stir 30 seconds longer.
  • In medium bowl, mix vegetables and crawfish tails. Add cream cheese; stir gently to combine. Serve with celery sticks.

SHERRY'S SPICY CRAWFISH DIP



Sherry's Spicy Crawfish Dip image

This is standard fare at all tailgating parties, backyard fete's and anything in between. I've been making it for about 5 years and had NOTHING but compliments. BEWARE...this is spicy hot!

1 lb bulk sausage (hot is especially good)
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
2 tablespoons garlic powder
1 (10 1/2 ounce) can cream of mushroom soup
1 lb Velveeta Mexican cheese
2 teaspoons Tony Chachere's Seasoning
2 lbs crawfish tails

Steps:

  • Take one lb. of the crawfish tails and process them in a food processor until well chopped.
  • Brown your sausage, onion and bell pepper in a large sauce pan; drain when sausage is done (I use my colander).
  • Return the sausage mixture to the saucepan and all all of the remaining ingredients except for the 2 lbs. of crawfish.
  • Mix well and cook over low heat until the cheese is completely melted.
  • After the cheese is melted, add the crawfish and mix well.
  • Let this mixture simmer for 10-15 minutes, stirring to keep it from sticking.
  • Serve this in a crockpot to keep it warm; also, it can be mixed up in the crockpot, just make sure to brown your sausage first.
  • Serve with chips or if you really want a spicy kick, serve it with my recipe of Saltine Snackers.

2 tablespoons salted butter
1/2 cup diced green bell pepper
1 small yellow onion, diced (about 1 cup)
1/2 cup diced celery
3 garlic cloves, chopped
1 jalapeno chile, diced
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 teaspoons paprika
1/2 teaspoon cayenne pepper
1 pound frozen peeled crawfish tails, thawed according to package directions
8 ounces cream cheese, softened
2 cups grated extra-sharp Cheddar cheese (about 8 oz.)
1/4 cup heavy whipping cream
2 tablespoons Creole mustard
1 tablespoon Worcestershire sauce
2 teaspoons hot sauce
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh flat-leaf parsley
Crackers, toasted baguette slices

Steps:

  • Melt butter in a large sauté pan or skillet over medium. Add bell pepper, onion, celery, garlic, jalapeño, salt, and black pepper, and cook 6 minutes. Add paprika and cayenne pepper, and cook 1 more minute.
  • Place crawfish, cream cheese, Cheddar cheese, and cream in a 6-quart slow cooker. Stir in bell pepper mixture, Creole mustard, Worcestershire sauce, and hot sauce. Cover and cook on HIGH 45 minutes. Reduce heat to WARM. Stir in lemon juice and parsley; serve with crackers or toasted baguette slices.

1 lb crawfish, chopped
1 onion, chopped
1 bell pepper, chopped
3 stalks celery, chopped
1 garlic clove
1/2 cup butter
8 ounces cream cheese
1/4 cup mayonnaise
1 teaspoon dry mustard
creole seasoning, salt, pepper to taste

Steps:

  • Sauté bell pepper, onions, celery, garlic and crawfish in butter.
  • Add cream cheese, lower temperature and cover to let cream cheese melt. Add mayonnaise, salt, pepper, creole seasoning to taste. Simmer approximately 15-20 minutes.
  • Add parsley if desired. Serve warm.

5 green onions, chopped

1 small green bell pepper, diced
1 lb peeled crawfish tail, cooked peeled, thawed and undrained

  • Melt butter in a Dutch oven over medium heat; add green onions and bell pepper. Cook, stirring occasionally, 8 minutes or until bell pepper is tender.
  • Stir in crawfish and next 3 ingredients; cook, stirring occasionally, 10 minutes. Reduce heat to low. Stir in cream cheese until mixture is smooth and bubbly.
  • Garnish with green onion slices or chopped parsley.
  • Serve with toasted French bread slices.
