125 g dried medium egg noodles
2 tablespoons vegetable oil
1 onion, chopped
1 red chile, deseeded and sliced
3 garlic cloves, sliced
5 cm fresh ginger, peeled and grated
2 teaspoons ground coriander
1/2 teaspoon turmeric
1 stalk lemongrass, sliced
400 ml coconut milk
300 ml vegetable stock
125 g cabbage, shredded
275 g green beans, sliced on diagonal
150 g mushrooms, sliced
75 g unsalted peanuts

Steps:

  • Place noodles in a bowl and cover with boiling water. Leave to stand.
  • Heat oil in a wok and gently fry the onion, chilli, garlic, coriander, ginger, tumeric and lemongrass for 5 minutes.
  • Pour coconut milk and stock into the wok and just bring to the boil. Turn down heat and add the vegetables and drained noodles.
  • Cover and simmer for 5 minutes.
  • Add the peanuts and serve.

These are so good- just something I came up with one day. They are quite spicy, so if you don't like a lot of heat, you might lower the spice the first time you try them. You can also adjust to chicken stock in order to have a thick sauce or a more soupy consistency. I like both. The red pepper is a type of spice, not a mashed up pepper as someone once asked me! I am a vegetarian now and this is still fabulous meat free.

1 medium onion (chopped)
3 garlic cloves (minced)
1 teaspoon crushed red pepper flakes
1 -1 1/2 teaspoon ground coriander
2 -2 1/2 teaspoons cumin
3 tablespoons soy sauce
2 (10 ounce) cans coconut milk
4 cups vegetable stock or 4 cups chicken stock
1 (400 g) package rice noodles (flat kind)
2 chicken breasts (cut in strips and cooked)

Steps:

  • Pour a little oil in a large pot.
  • Add onion, garlic, red pepper, coriander and cumin.
  • Saute until onion has become translucent.
  • Add soy sauce, coconut milk and chicken/vegetable stock. Let simmer for 20 minutes to develop flavor.
  • Add cooked chicken and rice noodles.
  • Continue cooking for ten minutes or until the noodles are softened.

8 ounces rice noodles or 8 ounces fettuccine
1 (13 1/2 ounce) can unsweetened coconut milk
3 tablespoons tomato paste
1 teaspoon chili powder
1 teaspoon kosher salt
1 tablespoon chili paste (optional) or 1 tablespoon chili sauce (optional)
3 scallions, thinly sliced
8 ounces bean sprouts
16 basil leaves
1/4 cup shredded coconut, toasted (optional)

Steps:

  • Cook the noodles according to the package directions. Meanwhile, in a large saucepan, over medium heat, combine the coconut milk, tomato paste, chili powder, salt, and chili paste or sauce (if using). Bring to a boil. Reduce heat and simmer for 2 or 3 minutes. Stir in the drained noodles and toss. Divide the noodles among individual bowls. Top with the scallions, sprouts, basil, and coconut (if using).
  • Tip.
  • To toast shredded coconut, scatter it on a baking sheet and place in a 350 degree Fahrenheit oven until it's golden. 3 to 5 minutes. Watch carefully: it goes from toasted to scorched in seconds.
