BEST NYC CHOPPED CHEESE RECIPE

Best NYC Chopped Cheese Recipe image

New York City's Chopped Cheese Sandwich with chopped beef burgers, melted gooey cheese, caramelized onions, topped with tomatoes and shredded lettuces, and hugged by a toasted hero roll. This is the classic way to make the iconic NYC chopped cheese. It reminds me of Philly cheesesteak, but even better!

Number Of Ingredients 11

4 burger patties ((or 1/2 pound ground beef))
1 tablespoon oil
1 sweet onion (diced)
1/2 teaspoon kosher salt (or to taste)
1/2 teaspoon freshly ground black pepper
8 slices American cheese (or cheddar cheese)
4 hero rolls (sliced 3/4 through)
2 tablespoons mayonnaise (or to taste)
2 tablespoons ketchup (or to taste)
2 to matoes (sliced)
3 cups iceberg lettuce (shredded)

Steps:

  • Slice hero rolls 3/4 of the way through with a serrated knife.
  • Toast the buns on a large skillet or grill pan. Set aside.
  • Add oil to a large non-stick skillet over medium high heat. Add diced onions and sauté until caramelized. Transfer to a bowl and set it aside.
  • Season the patties with salt and pepper.
  • Increase the heat to high, and add burger patties in the same skillet. Cook for about 4 minutes or until the bottom is nicely browned.
  • Flip the burger and cook for 1 minute. Use 2 steel spatulas to chop the burger into small pieces. Stirring constantly.
  • Add the cooked onions and keep chopping and stirring.
  • Divide into 4 even portions and top each with 2 slices of cheese and turn off the heat so the cheese can melt properly.
  • Spread a thin layer of mayo on the hero roll. Drizzle ketchup on top.
  • Use a steel spatula and carefully transfer the filling into each roll.
  • Add sliced tomatoes and shredded iceberg lettuce on top of the filling. Season with more salt and pepper if preferred.
  • (Optional) Wrap each roll with aluminum foil. Cut in half, serve warm and enjoy!

CHOPPED CHEESE SANDWICH

Chopped Cheese Sandwich image

These sandwiches originated in New York City and are traditionally made on a flat top grill; however, most people do not have those so I created a cast iron skillet version.

Yield 2

Number Of Ingredients 11

2 tablespoons stone ground mustard
2 tablespoons ketchup
4 pickled cherry peppers, stems removed
1 tablespoon butter
¼ cup chopped onions
12 ounces lean ground beef
salt and pepper to taste
3 slices American cheese
2 hoagie rolls, toasted
1 cup shredded iceberg lettuce
1 roma tomato, thinly sliced

Steps:

  • Combine mustard, ketchup, and cherry peppers in the bowl of a food processor. Pulse until smooth and set aside.
  • Melt butter in a small skillet over medium-high heat. Add onions and cook until onions are soft and are starting to caramelize, about 5 minutes. Remove from heat and set aside.
  • Form beef into two patties and season with salt and pepper. Heat a large cast iron skillet over medium-high heat. Add hamburger patties and cook 5 minutes or until a crust forms on the bottom. Flip patties over and cook 3 minutes.
  • Using a wide spatula, break patties up into large pieces. Sprinkle sauteed onion in between the spaces of the hamburger pieces. Layer cheese over the beef, and cook 2 minutes or until cheese is melted.
  • Spread reserved mustard sauce on the bottom bun of each hoagie roll. Divide meat mixture between the two sandwiches. Top each with shredded lettuce and sliced tomato.
