This is a delicious and spicy appetizer that does not contain all the calories of the usual fried cousins you find in a restaurant.

8 ounces boneless chicken breasts, pounded thin and cut into strips
1/4 cup cornstarch
1/2 teaspoon salt
1 large egg, beaten till frothy
2 teaspoons hot sauce
4 tablespoons fine cornmeal
1/2 cup panko breadcrumbs
1 teaspoon cayenne pepper
1 tablespoon chili powder
olive oil, for drizzling
1/3 cup honey
1/3 cup Dijon mustard

Steps:

  • Place an oven rack in the center of the oven. Preheat to 425F degrees.
  • Spray a heavy baking sheet liberally with vegetable oil cooking spray.
  • In a small bowl place cornstarch.
  • In a 2nd small bowl whisk together egg, salt and hot sauce.
  • In a 3rd bowl, mix together cornmeal, panko crumbs, chili powder and cayenne powder.
  • Dredge the chicken strips in the cornstarch, then into the egg mixture, allowing egg to drip off.
  • Dredge chicken in the cornmeal/bread crumb mixture, coating well.
  • Arrange in a single layer on prepared baking sheet.
  • Drizzle with a little olive oil.
  • Bake 15 minutes till crispy.
  • Blend honey and mustard together till smooth and serve with chicken tenders.

Now, I think everyone likes chicken fingers or tenders, but I get tired of those made the traditional way with the seasoned bread crumbs, parmesan cheese and a marinara sauce for dipping. So, I tried to come up with something a bit spicy and a unique dipping sauce for a unique taste. This is my version. Spicy seasoning, and the panko makes it a bit lighter. Baked vs fried and then the aioli is to me what sets this apart. Since this is finger food, I love to serve this with fresh corn on the cob, and my salad cups. Basically a small chopped salad served in a small lettuce cup. This just makes it a great easy "finger food" dinner.

1 1/2 lbs chicken breasts (boneless skinless, you can use tenders as well)
1 teaspoon smoked paprika (smoked is important in this dish)
2 teaspoons dried basil
1/2 teaspoon cayenne (more if you like things a bit spicier)
2 teaspoons garlic powder
1 teaspoon onion powder
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1 1/2 cups panko breadcrumbs (ground fine)
2 eggs
1/2 cup flour
cooking spray
3/4 cup mayonnaise
2 1/2 teaspoons red wine vinegar
1 tablespoon minced garlic
1 1/2 tablespoons fresh basil, chopped fine (you can use a bit more basil if you want, I often use a bit more, according to your taste)
salt
pepper

Steps:

  • Aioli -- Mix the mayonnaise, red wine vinegar, garlic, basil, salt and pepper. Check for seasoning and cover and refrigerate.
  • Chicken -- I like to cut the chicken into finger size pieces. I don't like them too thin as they will dry out, but because they are baked I like to cut them around 1/2" thick (I like to think they are about the size and thickness of my thumb).
  • Chicken Flour Base -- In a large baggie add the flour, salt and pepper. Dredge each chicken piece in the flour mixture and then toss well to coat. Make sure to shake off the excess flour. Just set to the side until they are all coated.
  • Panko and Egg -- I like to grind up the panko a bit to make the crumbs a bit finer. I just used my mini food processor to grind them up. Then to the panko, I added all the seasonings (except the salt and pepper) which we already used in the flour mix. Then add the panko to a small pan. In another pan, add the eggs and beat well.
  • Dredge -- Now dip each piece of chicken, already dredged in flour into the egg and then the panko seasoning. Set on a baking sheet lined with parchment paper or you can use foil.
  • Bake -- Spray the chicken with olive oil (both sides). Now I have an atomizer which I fill with olive oil. But you can buy a olive oil spray like "Pam." right at the store. But I use my atomizer all the time and well worth the 10.00 investment. Those recipes that cause for a drizzle of olive oil -- using an atomizer will save you tons of money. Well, time to bake. I bake at 400 for about 12-15 minutes depending on the thickness of the chicken. They should be golden brown.
  • Serve -- Just serve the chicken strips with the Basil Aioli.

1 cup Original Bisquick™ mix
1 teaspoon onion powder
1/2 teaspoon red pepper (add more if you want them really spicy, omit if no spice)
1 teaspoon chili powder
2 teaspoons paprika
1 teaspoon celery salt
2 teaspoons sugar
1 egg
1/4 cup milk
1 package chicken tenders (14 to 16 oz)
2 to 3 tablespoons butter, melted
Ranch dressing, if desired

Steps:

  • Heat oven to 450°F. Line cookie sheet with parchment paper.
  • In a pie plate, combine the Bisquick mix, onion powder, red pepper, chili powder, paprika, celery salt and sugar. Stir together until well mixed.
  • In medium bowl, mix egg and milk with whisk until well blended. Spoon 1 to 2 tablespoons egg mixture into the Bisquick mixture; stir until little lumps form.
  • Dip the chicken breast tenders into the egg mixture, then into the Bisquick mixture, then back into the egg mixture and finally back into the Bisquick mixture. Place on cookie sheet. Repeat with remaining chicken. Drizzle butter over chicken.
  • Bake 12 to 14 minutes, turning halfway through bake time, until no longer pink in the center. Serve tenders with ranch dressing if desired.

3 pounds chicken tenders or boneless skinless breast cut into 1 1/2-inch strips
2 cups buttermilk
2 tablespoons dried basil
2 tablespoons dried oregano
2 tablespoons granulated garlic
3/4 teaspoon salt
2 teaspoons pepper
3/4 teaspoon red pepper flakes
1 1/2 cup smoked almonds
12 large sourdough hard pretzels
Canola oil, for frying
Spicy Honey Dijon Sauce, recipe follows
large resealable plastic bag
1/2 cup Dijon mustard
1/4 cup honey
1 chipotle peppers in adobo sauce
2 teaspoons adobo sauce (optional)
1 teaspoon cider vinegar

Steps:

  • In a small bowl, combine basil, oregano, granulated garlic, salt, pepper and red pepper flakes. Place buttermilk and half the spice mix into a double-lined resealable plastic bag. Add chicken and massage bag until well coated. Refrigerate 6 to 12 hours. Reserve remaining spice mix.
  • Place almonds in plastic bag. Break up with rolling pin or mallet (flat side) until mixture looks part rough chopped part crumbs. Remove almonds and place into shallow bowl. Put pretzels in same bag and mash with mallet or rolling pin until it looks like a mixture of large breadcrumbs and powder. Add to almonds mix to combine.
  • In a large fry pan, pour canola oil until it measures about 1 1/2 -inches high in pan. Heat over high, until oil is hot, but not smoking, temperature, 350 degrees.
  • Remove tenders from buttermilk and dredge in almond-pretzel mixture, pressing mixture into the tenders. Gently add tenders, in batches, to the oil. Be sure not to over crowd the pan. Fry tenders until they are dark golden brown, being careful not to burn, about 5 minutes or until cooked through. Remove and drain on a cookie sheet lined with a wire rack. Serve immediately with Spicy Honey Dijon Sauce or keep warm in a 200 degree F oven.
  • In a small food processor, combine all ingredients. Refrigerate until ready to use.

1/3 cup orange marmalade

2 tablespoons quality hoisin sauce like Lee Kum Kee or Kikkoman*
1 tablespoon low sodium soy sauce
2 tablespoons red wine vinegar
1/2-1 teaspoons sriracha/Asian hot red chili sauce
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ginger powder
1/2 teaspoon onion powder
1 tablespoon cornstarch
Chicken Breading
3/4 cup flour
2 eggs
1/2 cup milk
1/2 cup panko breadcrumbs
3 cups cornflakes cereal, ground*
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 garlic powder
1/2 tablespoon butter
Garnish (optional)

  • 1.Whisk the Orange Marinade/Glaze ingredients together in a medium bowl. Add 1/3 cup to a large freezer bag with 1 tablespoon olive oil. Add the chicken and marinate 60 minutes up to overnight in the refrigerator. Refrigerate reserved Glaze separately. 2.Melt 1/2 tablespoon butter in a large skillet over medium-high heat. Stir in panko and continue to cook and stir until browned. Remove from heat.** 3.Preheat oven to 425 degrees F. Line a baking sheet with foil then top with a wire baking rack. Spray rack with nonstick cooking spray. Set aside. 4.Line up your breading station: Add flour to a large freezer bag. Whisk milk and eggs together in a bowl or shallow dish. Mix panko, ground cornflakes, 1/2 teaspoon salt, 1/8 teaspoon pepper and 1/2 teaspoon garlic powder in a large bowl. 5.Remove chicken from marinade and pat dry with paper towels. Add chicken to flour and toss until evenly coated. Working with one chicken tender at a time, remove from flour, shake off any excess then coat in milk/egg mixture and drain off any excess. Roll chicken in panko/cornflakes, pressing to adhere. Shake off any excess and place on wire rack. Repeat until all chicken tenders are breaded. 6.Bake for 20 minutes at 425 F degrees or until chicken is cooked through. Broil until golden. Let cool for 10 minutes while you prepare your Glaze. 7.Add reserved Glaze to a medium saucepan and bring to a boil while stirring. Reduce to a simmer until slightly thickened, stirring occasionally. Remove from heat. Using tongs, dip chicken in Glaze to coat then return to baking rack or individual plates. Garnish with orange and green onions if desired. Notes Total cooking time does not include marinating as that will vary upon individual. *I use my food processor and pulse until the size of panko crumbs. You can place cornflakes in a freezer bag and crush with a rolling pin. You can substitute cornflakes with additional panko for a total of 1 1/4 cups panko and brown panko with 1 tablespoon butter. **You can do this while your chicken marinates and store in an airtight container until ready to use. ***The less time you wait between coating the chicken in the glaze and eating, the crispier it will be. That being said, the chicken has a wonderful texture but is not overly crispy.

4 tablespoons olive oil
3 tablespoons melted butter or 3 tablespoons margarine
1 egg, beaten (In a bowl)
1/4 cup idaho instant potato flakes
1/4 teaspoon garlic salt
1/4 teaspoon paprika
1/4 teaspoon poultry seasoning or 1/4 teaspoon chicken bouillon powder
1/4 teaspoon black pepper
1 pinch cayenne pepper (Both Optional) or 1 pinch chili powder (Both Optional)
1/2 teaspoon curry powder
1/4 teaspoon oregano
1/2 tablespoon onion flakes
1/8 teaspoon ground cinnamon
1 cup broccoli slaw mix (See instructions below to make your own)
3 tablespoons cilantro leaves (clean leaves, plus extra sprigs)
1 tablespoon soy sauce
1 tablespoon cornstarch
1/4 teaspoon grated ginger

1 tablespoon honey

  • BROCCOLI SLAW Preparation(To make your own)- Cut off ¼ of the bottom hard part of the broccoli stem and discard, then cut just below the flowerets, next take a carrot peeler and remove the outside hard part of the broccoli, then cut in half and then make thin match stick size slices, next add match stick slivers of baby carrots and finally add a small amount of red cabbage for color, mix together and set aside.
  • CHICKEN PIECES Preparation- Cut chicken breast into thin slices, then with a meat hammer tenderizer/pound each side flat, set aside.
  • SPICE MIX Preparation- Combine with potato flakes the 9 spices listed just below the potato flakes, mix and set aside.
  • VEGETABLE THICKENING SAUCE Preparation- In a cup combine the soy sauce, 2 tablespoons of water, cornstarch and mix well, set aside.
  • COOKING INSTRUCTIONS.
  • Pre-heat oven to 425 degrees.
  • In a baking pan about 13" x 9" (larger size for 2 chicken breasts), line with aluminum foil (if you prefer an easy clean-up) and then add 2 tablespoons oil & 3 tablespoons melted butter or margarine, then spread around the surface of the pan.
  • Dip the chicken into the beaten egg and then coat chicken pieces thoroughly in the potato flake mixture.
  • Next add to baking pan and cook uncovered for about 7-10 minutes, next turn all the pieces and cook another 7-10 or so minutes, check to see if the pieces are done and not overcooked (very thin slices will cook faster the thicker ones).
  • While the chicken is cooking, in wok add 2 tablespoons oil, ginger and garlic and stir a few seconds, next add the broccoli slaw, stir-fry for about 2 minutes (add a touch of water as needed).
  • Next add the thickening sauce to the wok and stir fry a few moments more, then add the 3 tablespoons of the cilantro leaves, stir briefly, then place the vegetables around the edge of a nice sized plate for serving.
  • When the chicken is done add to the center of the plate, drizzle the honey on the chicken pieces and next add the cilantro sprigs as garnish.
  • Enjoy!
  • NOTE.
  • This recipe is for 2 servings, however, if you add a second chicken breast just double the ingredients and it can then easily serve 4 people,
  • Further, this recipe was created for one of the RSC contests and Broccoli Slaw and Honey had been required ingredients. However, you can cut down on the preparation and cooking time for this recipe by eliminating the Broccoli Slaw (steps #1 and #4) and Honey if you would like.
  • Also, adding a pinch of Bijol coloring to the spice mix, will give the chicken pieces a slightly yellow and appealing color.

  • For the bechamel: In a large saute pot over medium heat, add butter and oil. Warm until the butter melts then whisk in flour, until mixture is smooth. Slowly add skim milk with whisk, breaking down solids. When all the milk is added, slightly simmer for 10 minutes and then whisk in 3/4 cup blue cheese and nutmeg. Hold warm.
  • Preheat grill or cast iron skillet to high.
  • Add chicken tender pieces and cook until the internal temperature reaches 165 degrees F, or juice runs clear. Remove from grill, toss in warmed hot sauce, and hold warm.
  • In a large pot heat 2 gallons of water to boil, and add 2 tablespoons kosher salt. Add pasta and cook 8 to 10 minutes or until al dente.
  • Toss drained pasta with blue cheese bechamel sauce, next remove chicken tenders from hot sauce and toss in pasta and bechamel. Garnish with Roma tomatoes and remaining blue cheese.

2 1/2 cups panko breadcrumbs (Japanese breadcrumbs)
salt
fresh ground black pepper
1 1/2 lbs chicken tenders
3/4 cup mayonnaise
1 tablespoon hot pepper sauce (like Frank's)
1/4 teaspoon cayenne pepper
3/4 cup crumbled blue cheese (4 oz.)
1/2 cup sour cream
3 tablespoons milk

Steps:

  • Pour Panko into a shallow dish and toss with 3/4 teaspoons salt and 1/4 teaspoons pepper.
  • Trim off any exposed tendon ends from the wide tips of the chicken tenders, if necessary.
  • In a medium bowl, whisk 1/4 cup of mayo with the hot sauce, cayenne, and 1/8 teaspoons salt. Add the chicken and toss with your hands to coat well. Coat each tender in the panko and arrange in a single layer on a heavy-duty rimmed baking sheet. Refrigerate while you heat the broiler and make the sauce.
  • Position oven rack 6 inches from the broiler element and heat the broiler on high for at least 10 minutes.
  • Meanwhile, combine the remaining mayonnaise with the blue cheese, sour cream, milk, 1/2 tsp salt, and a few grinds of pepper in a medium bowl. Whisk until well combined and only small bits of cheese remain intact.
  • Broil the tenders, flipping once, until they are crisp and golden brown in spots on the outside and cooked through, 4-6 minutes per side. Rotate the pan as needed for even browning. Transfer the tenders to a platter and serve with the dipping sauce.

These tenders are juicy and moist with a touch of spice. If you are familiar with Bojangles, these are very similar in taste to their spicy chicken. You can try the hot sauce and butter recipe or you can use honey mustard, ranch or whatever you like to dip your tenders in.

1 lb chicken tenderloins, rinsed in water
1/2 c texas pete hot sauce
1/2 c buttermilk
1 c all purpose flour
salt and pepper to taste
enough oil to be 1 1/2 inches deep in a cast iron skillet
1 stick butter
1/2 c texas pete hot sauce

Steps:

  • 1. Rinse tenderloins and place in 1 gallon ziplock bag. Add 1 cup of Texas Pete hot sauce and let marinate for 3o minutes.
  • 2. Add oil to cast iron skillet and turn heat to medium, allow 4-5 minutes for skillet to heat up. Put flour in a bowl.
  • 3. Remove tenderloins from bag and dip in buttermilk before rolling tender in flour. Shake the tender to remove excess flour.
  • 4. Once oil in skillet has heated up to the point that a little flour disperses quickly, add floured tenders to the skillet leaving a one gap in between the tenderloins. Fry until golden brown on each side about 3-4 minutes per side depending on the size of the tender.
  • 5. Remove from oil and place on a rack placed over a cookie sheet and covered with paper towels so that the oil drips away from the tenders.
  • 6. Dipping Sauce: Melt 1 stick of butter in microwave and mix with 1/2 cup of Texas Pete.

These are my son's favorite. The amount of hot sauce is up to you,if you don't like spicy foods,you can omit it or use just a small amount. I make this with boneless thighs as well since I prefer dark meat.

2 lbs chicken tenders
3 cups buttermilk
2 cups canola oil or 2 cups vegetable oil, as needed to shallow fry
2 cups flour, divided
3 tablespoons flour, divided
2 tablespoons smoked paprika
1 tablespoon dry mustard
2 tablespoons chili powder
2 tablespoons grill seasoning
2 tablespoons poultry seasoning
3 tablespoons butter
2 cups chicken stock
2 tablespoons Worcestershire sauce
1/4 cup molasses
salt & fresh ground pepper

Steps:

  • Place the chicken tenders in the buttermilk and marinate for at least 30 minutes or up to 2 hours.
  • Pre-heat oven to 250ºF.
  • Place a large, high-sided skillet over medium heat with the oil (it should come about an inch up the side of the pan).
  • While the oil heats up, combine 2 cups flour and spices in a large dish. Working in batches, coat the chicken tenders in the spiced flour mixture, pressing on them lightly to make the flour stick (for a really good breading, double dip the tenders by running them through the buttermilk and flour a second time).
  • Once the oil has heated up, fry the chicken in batches until deep golden brown and cooked through, 5-6 minutes. (As you finish each batch, transfer them to a sheet pan and keep them warm in the low oven).
  • When the chicken tenders are almost ready, place a medium saucepot over medium heat and melt the butter. Sprinkle remaining 3 tablespoons flour over the butter and cook for about a minute. Whisk the chicken stock, Worcestershire and molasses into the butter-flour mixture and simmer until thickened, 2-3 minutes. Season with salt and pepper, and reserve warm.
  • Serve the chicken tenders with the molasses dipping gravy and some Sweet Potato Oven Fries alongside.

I was home alone, and decided on something simple yet yummy. So, I looked around the spice racks, came up with some ideas, and then made some marinated chicken tenders, and served them with two different sauces. So yummy. So, you ready... Let's get into the kitchen.

THE MARINADE
1 large egg
2 tablespoon(s) grapeseed oil
2 tablespoon(s) lemon juice, freshly squeezed
2 clove(s) garlic, minced
1 teaspoon(s) salt kosher salt, fine grind
1/2 teaspoon(s) black pepper, freshly squeezed
THE BREADING
1 cup(s) panko breadcrumbs

  • PREP/PREPARE

  • Gather your Ingredients (mise en place).
  • Whisk all the marinade ingredients together in a bowl.
  • Add the chicken tenders, and place into the fridge for about 90 minutes.
  • Chef's Tip: I usually pour the marinade into a Ziploc bag, and then throw in the tenders. Every 10 minutes or so, I go in the fridge, and give the bag a squeeze.
  • While the tenders are in the fridge, mix together the breading ingredients, using a shallow bowl.
  • About 20 minutes before baking, place a rack in the middle position, and preheat the oven to 400f (205c).
  • Remove the tenders one at a time, shake off the excess marinade, and coat with the breading mixture.
  • Place them on a parchment-lined baking sheet, and give each one a bit of space.
  • Chef's Note: When finished discard the remaining breading and marinade.
  • Place in the preheated oven, until cooked through, and the crust is a golden brown, about 20 - 22 minutes.
  • PLATE/PRESENT
  • Serve with your favorite dipping sauces. Enjoy.
