Chicken drumsticks are marinated in mustard, beer, red pepper flakes, garlic, salt, and pepper to make this simple tasty dinner.

½ cup light beer
⅓ cup prepared yellow mustard
2 cloves garlic, chopped
½ teaspoon red pepper flakes
½ teaspoon salt
½ teaspoon black pepper
2 pounds chicken drumsticks

Steps:

  • Combine beer, mustard, garlic, pepper flakes, salt, and pepper in a 1-gallon resealable plastic bag. Add chicken drumsticks; turn to coat evenly. Seal bag, squeezing out all the air.
  • Let chicken marinate in the refrigerator, at least 2 hours and preferably overnight.
  • Preheat oven to 425 degrees F (220 degrees C). Place drumsticks and sauce into a baking dish, discarding the plastic bag.
  • Transfer drumsticks and marinade to a baking dish and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Check chicken and remove cover if desired. Continue to bake until chicken is no longer pink at the bone and the juices run clear, about 15 more minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

1/3 cup Gold Medal™ all-purpose flour
1/3 cup yellow whole-grain cornmeal
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon salt
1/3 cup buttermilk
1/4 teaspoon red pepper sauce
Cooking spray

Steps:

  • Heat oven to 400°. Spray rectangular pan, 13x9x2 inches, with cooking spray. Remove skin and fat from chicken.
  • Mix flour, cornmeal, cumin, chili powder and salt in heavy-duty resealable plastic food-storage bag. Mix buttermilk and pepper sauce in medium bowl. Dip chicken into buttermilk mixture, then place in bag. Seal bag and shake until evenly coated. Place chicken in pan; spray chicken lightly with cooking spray.
  • Bake uncovered 40 to 45 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.

1/2 cup Sriracha
1/2 cup unseasoned rice vinegar
1/4 cup mirin (sweet Japanese rice wine)
1/4 cup red currant or strawberry jelly
12 large chicken drumsticks
Kosher salt
1 cup rice flour
1 tablespoon cornstarch
Ingredient info: Sriracha, mirin, and rice flour can be found at many supermarkets and at Asian markets.

Steps:

  • Bring Sriracha, rice vinegar, mirin, and jelly to a boil in a small heavy saucepan over high heat. Reduce heat to medium; simmer, adjusting heat if necessary, until mixture is thick and reduced to 3/4 cup, about 10 minutes. DO AHEAD: Can be made 1 week ahead. Cover; chill. Rewarm before using.
  • Place drumsticks in a large bowl and season generously with salt. Cover and refrigerate for 1 hour. Preheat oven to 450°F. Whisk rice flour and cornstarch in a medium bowl. Place a wire rack on a rimmed baking sheet. Using a paper towel, pat drumsticks dry. Dredge in rice flour mixture, shaking off excess. Arrange on prepared rack.
  • Roast drumsticks, turning frequently, until skin is browned and crisp, 50-60 minutes. DO AHEAD: Can be made 1 day ahead. Let cool, cover, and chill. Rewarm in a 450°F oven for 10-15 minutes before continuing.
  • Combine hot drumsticks and 1/4 cup sauce in a large bowl; toss to coat. Return drumsticks to rack and roast, turning once, until skin is crisp and sauce is beginning to brown, 8-9 minutes. Brush with additional sauce and serve remaining sauce alongside.

I decided to try my hand at "Ready Set Cook". I chose 5 ingredients off the list, and this is what I came up with. Serve it over rice and you have a very tasty meal. I hope you all enjoy. Please Note: Prep time does not include marination time needed for chicken.

1 1/4 cups sweet chili sauce (found in the Asian food isle at your local grocery store)
1 cup soy sauce
1/8 cup fresh ginger, cut into strips
1 tablespoon sesame seeds
3 spring onions, green portion only, chopped
2 teaspoons red pepper flakes
8 chicken drumsticks
3 1/2 cups snow pea pods, fresh
8 ounces sliced mushrooms
1 (8 ounce) can water chestnuts, drained
2 tablespoons peanut oil or 2 tablespoons vegetable oil
rice (optional)

Steps:

  • With your potato peeler peel a portion of skin off of the ginger. Continue to peel strips of the cream flesh of the ginger until you have approximately 1/8 cup. If desired, you can take a knife and cut the ginger into smaller pieces at this point. My family happens to like ginger, so I leave it in long strips. Place remaining ginger in a freezer bag and place in freezer for later use.
  • Add the sweet chili sauce, soy sauce, fresh ginger, sesame seeds, spring onions, and red pepper flakes to a gallon sized ziplock bag and give it a shake to combine.
  • Place chicken drumsticks into bag and seal. Place bag in the refrigerator and allow chicken to marinade for a minimum of 4 hours.
  • Once chicken has marinated, preheat oven to 400 degrees. Carefully remove chicken from bag and set marinade aside. Do Not discard.
  • Place chicken on a greased baking sheet. Cook legs 15 minutes at 400 degrees then flip and cook an additional 15 minutes.
  • While chicken is in the oven, cook rice if desired; according to package directions.
  • During the last 15 minutes of cooking the chicken, pour oil into a wok or large skillet and heat over high heat. When oil is good and hot, add the sliced mushrooms, snow pea pods, and water chestnuts and quickly stir-fry until snow peas are crisp tender. Remove vegetables to a plate and set aside.
  • Turn the heat down on on your wok or pan and add the marinade sauce. Bring the sauce to a boil and cook approximately 5 minutes. Add vegetables, and chicken drumsticks to the sauce and give a quick stir to coat all ingredients.
  • Spoon vegetables and sauce over rice and top each serving with two drumsticks.

2 pounds chicken wings (about 10)
2 tablespoons fresh lemon juice
For the batter
1 cup all-purpose flour
2 teaspoons salt
2 teaspoons paprika
1 1/2 teaspoons ground cumin
1 1/2 teaspoons pepper
3/4 teaspoon dried thyme, crumbled
1/2 teaspoon cayenne
1 cup beer (not dark)
1 tablespoon vegetables oil
vegetable oil for deep-frying
parsley sprigs for garnish

Steps:

  • Cut off the wing tips, reserving them for another use such as stock if desired, and halve the wings at the joint. Separate the "drumstick," or first-joint, pieces (the thick ones) from the second-joint pieces. Beginning at the narrower end of each "drumstick," with a sharp knife cut the tendons and, holding the exposed end of the bone with a kitchen towel, scrape the skin and meat down the bone as far as possible toward the thicker end to make a plump drumstick shape. Cut through the cartilage at one end of each second-joint piece, separating the bones, scrape the skin and meat down the large bone to make a plump drumstick shape, and pull out and discard the smaller bone. Arrange all of the "drumsticks" in a shallow dish, sprinkle them with the lemon juice and salt and pepper to taste, and let them marinate, covered and chilled, for 1 hour.
  • Make the batter while the chicken is marinating:
  • In a bowl whisk together the flour, the salt, the paprika, the cumin, the pepper, the thyme, and the cayenne and make a well in the center. Add the beer and the oil in a stream, whisking, and whisk the batter until it is smooth. Let the batter stand at room temperature for 1 hour. Stir the batter before using it.
  • In a large deep fryer or large deep kettle heat 2 inches of the oil to 375°F. on a deep-fat thermometer. Dip the chicken in the batter and fry it in the oil, 5 pieces at a time, turning it, for 3 minutes, or until it is cooked through and golden. Transfer the chicken with a slotted spoon as it is fried to paper towels to drain and make sure the oil returns to 375°F. before adding each new batch. Sprinkle the "drumsticks" with salt to taste, arrange them on a platter, and garnish the platter with the parsley sprigs.

1/4 cup hot pepper sauce
1/3 cup flour
2 tablespoons yellow cornmeal

Steps:

  • Remove skin from chicken and place the chicken in a plastic bag.
  • Pour hot sauce over chicken, seal bag and refrigerate to marinate for at least 1 hour, up to 24 hours.
  • The longer the chicken marinates, the spicier it will be.
  • In another plastic bag combine the flour, cornmeal and salt.
  • Add chicken, seal bag and shake to coat.
  • Heat oil in a large, deep skillet to medium high heat.

7-8 chicken drumsticks
1 tsp red pepper flakes
1 tsp dried basil
1 tsp dried thyme
1 tsp curry powder
1 tsp red chili powder
1 tsp goya adobo sauce w/ saffron (or any chill sauce - tabasco etc)
2 bouillon/stock cubes (chicken or vegetable)

Steps:

  • 1. In a bowl, mix all the seasonings and work into the chicken pieces. Cover and put into fridge for 15-30 minutes or longer if possible.
  • 2. Preheat oven to 325F (160c)
  • 3. Spray baking dish with cooking oil. Arrange pieces, spaced apart.
  • 4. Bake for 45mins-1 hour. Turning 3-4 times.
  • 5. Serve with steamed vegetables or any side dishes you like.
