Yield Makes 8 servings, 1 cup each

Number Of Ingredients 8

1 lb. boneless skinless chicken breasts, cut into bite-size pieces
2 cups water
1-1/2 cups red salsa
2 cups elbow macaroni, uncooked
1 cup frozen corn
1/2 tsp. each ground cumin, chili powder and garlic powder
1 pkg. (8 oz.) KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA, divided
2 Tbsp. chopped fresh cilantro

Steps:

  • Cook and stir chicken in large nonstick skillet on medium-high heat 3 min. or until lightly browned.
  • Stir in water and salsa. Bring to boil. Stir in macaroni; cover. Simmer on medium heat 10 min. or until macaroni is tender, stirring after 5 min.
  • Add corn, cumin, chili powder, garlic powder and 1 cup cheese; stir. Cook 2 min. or until corn is heated through and cheese is melted, stirring frequently. Top with remaining cheese and cilantro. Remove from heat; let stand 5 min.

1 lb. boneless skinless chicken breasts, cut into bite-size pieces
2 cups frozen mixed vegetables (broccoli, carrots, red peppers)
1 tub (8 oz.) PHILADELPHIA Spicy Jalapeño Cream Cheese Spread
1/4 cup milk
2 cups hot cooked spaghetti
1/2 cup KRAFT Shredded Colby & Monterey Jack Cheeses

Steps:

  • Cook and stir chicken in large nonstick skillet on medium heat 5 to 6 min. or until done. Add vegetables; cook 2 to 3 min. or until heated through, stirring occasionally.
  • Add cream cheese spread and milk; cook and stir 3 min. or until sauce is blended and heated through.
  • Stir in spaghetti and shredded cheese.

2 medium chicken breasts, cut into bite-sized pieces
1/2 teaspoon paprika
1/2 teaspoon chili powder
1 teaspoon cumin
1/4 teaspoon red paper flakes
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
salt & pepper to taste
1 teaspoon olive oil
2 tablespoons butter
2 tablespoons flour
2 cups milk
8 ounces grated cheddar
8 ounces grated Monteray Jack w/jalepeno pepper cheese
1/4 jar sliced jalepeno peppers
12 ounces mini pene

Steps:

  • Combine chicken and spices in bowl to coat. Heat olive oil in saute pan and cook chicken until just browned; remove and set aside. Meanwhile, bring water to boil and cook pasta. Drain, reserving 1 cup water. In large skillet, melt butter. Stir in flour and cook one to two minutes. Stir in milk and cook until slightly thickened. Add cheeses and stir until melted and sauce is thickened. Add jalepeno slices and cooked chicken. Cook 2-3 minutes. Add pasta to pan and mix thoughly to coat. Sauce may be thinned if necessary with reserved pasta cooking water. For added heat, add liquid from sliced jalepenos, 1 teaspoon at a time.
