We always have a large summer garden where lots of produce lingers into fall. That's when we harvest our onion, bell pepper, tomatoes and eggplant, the main ingredient of this dish. This recipe turns Cajun with the Holy Trinity (onion, celery and bell pepper), shrimp and red pepper flakes. -Barbara Hahn, Park Hills, Missouri

1 medium eggplant, peeled and cut into 1/2-inch cubes
3 tablespoons olive oil
2 celery ribs, diced
1 medium onion, diced
1 small green pepper, seeded and diced
3 plum tomatoes, diced
1 teaspoon crushed red pepper flakes
1/2 teaspoon pepper
12 ounces uncooked shell-on shrimp (31-40 per pound), peeled and deveined
1/2 cup seasoned bread crumbs
1-1/2 cups shredded part-skim mozzarella cheese

Steps:

  • Place eggplant in a large saucepan; add water to cover. Bring to a boil. Reduce heat; simmer, covered, until tender, 3-4 minutes. Drain., Preheat oven to 350°. In an ovenproof skillet, heat oil over medium-high heat. Add celery, onion and green pepper; saute until tender, about 5 minutes. Reduce heat to medium; stir in tomatoes and eggplant. Saute 5 minutes. Stir in seasonings. Add shrimp and bread crumbs; saute 5 minutes longer, stirring well., Bake 30 minutes. Remove skillet from oven; top with cheese. Bake 5 minutes more.

This is a copycat recipe for P F Chang's Stir-Fried Spicy Eggplant (Chinese eggplant tossed in a spicy vegetarian sauce with chili paste and scallions).

1 lb eggplant, peeled cut into 1-inch dice
1 teaspoon garlic, minced
1 tablespoon cornstarch, mixed with 2 tablespoons water to make a paste
vegetable oil, for deep-frying
2 tablespoons vegetarian oyster sauce
2 tablespoons light soy sauce
2 tablespoons water
1 tablespoon white vinegar
1 tablespoon granulated sugar
1 teaspoon sambal oelek chili paste
1/2 teaspoon ground bean sauce (recommend Koon Chun brand)
1/2 teaspoon sesame oil

Steps:

  • Combine all Spicy Sauce ingredients and mix well.
  • In a wok or large frying pan, deep-fry eggplant at 350 degrees F for 1 minute. Remove eggplant and drain on paper towels.
  • Meanwhile remove all but 1/2 teaspoon of oil from wok. On high heat, stir-fry garlic for 5 seconds then add Spicy Sauce. Reduce heat and let sauce simmer 20 seconds.
  • Add eggplant and mix well. Simmer for another 10 seconds. Stir in cornstarch paste a little at a time until desired consistency. Serve immediately.

CAJUN FRIED EGGPLANT

A spicy way to fry eggplant that gives it a nice bite! You can always add more Cajun seasoning depending on how spicy you like it.

1 large eggplant
1 large egg
3/4 c fat-free milk.
1/2 c flour, or more as needed
salt to taste
pepper to taste
1/4 tsp cajun seasoning
oil for frying

Steps:

  • 1. Slice eggplant into the size of steak fries. Soak 30 min in salted water. Drain, rinse, pat dry w/ paper towels. In bowl, mix egg w/ milk. In another shallow bowl, mix flour, salt, pepper and cajun seasoning. Heat some oil in skillet over med-high heat. Dip eggplant slices into egg mix, then roll in flour mix to coat. Deep-fry eggplant, turning once until golden brown.

This recipe started out as an Emeril Lagasse, but I've altered it quite a bit to suit our tastes. My kids call this "eggplant chips"! We dip these in marinara sauce.

1/2 cup all-purpose flour
3 eggs
1/2 teaspoon salt
2 cups breadcrumbs, freshly made
2 teaspoons paprika
2 teaspoons salt
2 teaspoons garlic powder
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon oregano, dried
1/2 teaspoon thyme, dried
1/4 teaspoon cayenne pepper
1 small eggplant
oil (for deep frying)

Steps:

  • In 3 small bowls: put flour in the 1st, egg and 1/2 teaspoons salt (whisked together) in the 2nd, bread crumbs and remaining seasonings in the 3rd.
  • Cut eggplant in 1/4 inch thick slices and then quarter slices.
  • Dredge each piece of eggplant in the flour, coating thoroughly, then shaking off excess.
  • Dip in egg mixture, then press into bread crumbs.
  • Transfer to a rack or paper towel to allow them to dry slightly.
  • In a deep heavy skillet, heat 1/2-3/4 inch of oil to 375 degrees F.
  • Fry the eggplant in batches for 1 minute on each side or until golden.
  • Drain on paper towels; sprinkle lightly with salt before serving if desired.
  • Serve with dipping sauce.
