- Spread cream cheese spread onto bottom of microwaveable plate.
- Top with mangos, beans, peppers and cheddar.
- Microwave on HIGH 2 min.

SWEET & SPICY BLACK BEAN SALAD (OR DIP)
I could honestly eat this for days in a row...nothing else. It's a great combination of sweet corn and black beans and lots of other tasty things! It's worth the bit of mincing and is a great dish to make ahead of time. This can be served as a salad, but I've always made it as an appetizer dip, served with tortilla chips.

Steps:
- In a jar or container with tight-fitting lid, combine lime juice, oil, brown sugar, mustard, salt and pepper. Shake until completely blended.
- In a separate bowl, combine beans, corn, green onions, jalapeno and cilantro.
- Pour dressing over bean mixture and toss to coat.
- Cover and chill for atleast an hour or up to a day. If a day, give it a stir or two.
- To serve as a salad, arrange with cabbage or lettuce leaves. Add more cilantro to make it pretty on top, if you wish.
- To serve as an appetizer, I like to eat it with tortilla chips.
SWEET 'N SPICY BLACK BEAN DIP
Steps:
- Dice peppers and onions and saute with olive oil, in a large non-stick skillet, on medium high until tender.
- Add the rest of ingredients to skillet. Simmer on medium low for 30 minutes.

SPICY BLACK BEAN DIP
Consistently eaten by the batchful, this dip is meant to be shared. Super easy & very very tasty - the spiciness depends on how much spice you add. I like to serve this with white tortilla chips and strips of sweet bell peppers (the colors look nice together). This recipe is adapted slightly from Lean & Lovin' It! by Don Mauer.

Steps:
- Heat olive oil in large nonstick skillet over medium heat.
- Add the green pepper & red onion.
- Cook, stirring occasionally, until softened (about 5 minutes).
- Add beans with reserved liquid to the skillet.
- Simmer, covered, for about 10 minutes.
- Place the mixture along with remaining ingredients in a food processor.
- Pulse to combine, but do not puree. Leave it a little chunky for better scooping.

- Place beans, 1/4 cup of the salsa, garlic and cumin in blender or food processor container; cover. Blend until smooth.
- Stir in remaining 1/4 cup salsa and carrot. Spoon into serving bowl. Cover.
- Refrigerate at least 1 hour to blend flavors. Serve as a dip with crackers.
