Beer and Garlic Grilled Chicken image

Juicy, incredibly flavorful grilled chicken is easier than you might think; especially when it starts with a marinade loaded with flavor from beer, garlic, and a sprinkling of herbs.

11 ounces dark Mexican beer
3 tablespoons sesame seed oil
5 large cloves of garlic (minced, approximately 1 1/2 tablespoons)
1 1/2 teaspoons dried oregano
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
3-4 pounds chicken (I typically use 9-10 boneless skinless chicken thighs)

Steps:

  • Place the chicken in a gallon size zip-close bag or an airtight container. Stir together the marinade ingredients and pour over the chicken.
  • Seal and turn the bag or container to coat the pieces evenly. Let rest in the refrigerator for 12-36 hours. I try to marinate chicken for a minimum of 24 hours most of the time, because the longer time makes a huge different in the flavor.
  • When ready to cook the meat, let the chicken rest on the counter for 30 minutes to an hour prior to cooking.
  • Preheat the grill to medium heat. For boneless skinless chicken thighs, cook the meat 6 minutes on each side. Then increase the heat closer to medium-high and cook an additional 4 minutes, as needed. Enjoy!

Ed's Favorite Beer Can Chicken Rub image

This recipe is a tribute to my Uncle who is by far one the best pit masters I have ever known. Feel free to put this on chicken, pork, or just about anything else you can think of. To cover a typical 5-pound chicken, I normally measured the spices in tablespoons. However, feel free to mix a larger batch to keep some finished product on hand. One thing's for sure, you will be the hit of the party!

2 tablespoons dry mustard
2 tablespoons granulated onion
2 tablespoons paprika
2 tablespoons kosher salt
1 tablespoon garlic powder
1 tablespoon ground coriander
1 tablespoon ground cumin
1 tablespoon ground black pepper
ground cayenne pepper

Steps:

  • Stir brown sugar, dry mustard, granulated onion, paprika, kosher salt, garlic powder, coriander, cumin, black pepper, and cayenne pepper together in a bowl.

I found this recipe on the Texas Beef Council web site. I haven't yet had the chance to try it but am posting this at the request of a Zaar member.

Number Of Ingredients 10

1 teaspoon Tabasco sauce
3 tablespoons cider vinegar
1 (12 ounce) bottle beer
1 tablespoon coarse grain mustard
1 tablespoon Worcestershire sauce
1/4 cup soy sauce
2 teaspoons minced garlic
2 tablespoons minced onions
1 teaspoon salt
1 teaspoon black pepper

Steps:

  • Combine all ingredients in a small bowl.
  • Place steak (s) in a zip-type plastic bag, and pour marinade over steak (s).
  • Turn to coat.
  • Refrigerate 6 hours or overnight.
  • Grill.
