SPICY ITALIAN SAUSAGE AND MOZZARELLA BEER BREAD
This savory, cheesy bread can be drizzled with a fine extra-virgin olive oil, dipped in pizza sauce, and served as an appetizer, or as the perfect accompaniment to soak up the gravy of your favorite pasta dish! Buon appetito!

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Whisk beer, 2 tablespoons olive oil, eggs, and salt together in a large bowl.
- Mix flour, Parmesan cheese, baking powder, oregano, basil, and thyme together in a separate bowl. Stir into the beer mixture, 1/2 cup at a time, to avoid clumping.
- Heat remaining olive oil in a skillet over medium-high heat. Saute onion in the hot oil until translucent, about 5 minutes. Add sausage; cook and stir until slightly browned and crumbly, about 5 minutes. Add garlic and cook for 1 to 2 minutes more. Drain mixture well in a colander, catching the grease in a pan or a bowl. Discard the strained grease and set mixture aside.
- Stir sausage mixture, Cheddar cheese, 3 ounces mozzarella cheese, green olives, and black olives into the dough until ingredients are evenly distributed; do not overmix. Pour into the prepared loaf pan.
- Bake in the preheated oven for 45 minutes. Sprinkle the remaining mozzarella cheese over the top of the loaf, brush with melted butter, and continue baking until cheese is melted, about 15 minutes; check the bread periodically to be sure cheese doesn't burn during this phase. Transfer bread to a cooling rack until ready to slice and serve.

- Preheat oven to 350ºF
- Cut out the center of the loaf to create a bread boat. Reserve the part you pulled out for
- dipping later. Place bread boat on a sheet tray and bake for 7-10 minutes or until crispy.
- In a saucepan over low heat, melt the butter. Whisk in flour and let bubble for a minute.
- Whisk in brown ale and half-and-half. Whisk in Frank's Red Hot Original Sauce, Dijon, Worcestershire, garlic powder, kosher salt, and black pepper. Bring to a light simmer. Gradually whisk in cheddar cheese, allowing each bit of cheese to fully melt before adding more cheese. Once the sauce is fully melted and smooth, pour into bread boat.
- Broil for 30 seconds to slightly brown the top of the cheese, keeping a close eye because it can go from brown to burnt very quickly.
- Garnish with minced parsley. Serve with pretzels, vegetables, reserved bread, and chicken wings for dipping.

- Preheat oven 350° and grease and flour a (9x5 inch) loaf pan or 4 mini-loaves. Whisk the first 5 ingredients. Mix next 7 ingredients together in another bowl.
- Combine mixtures with a whisk or wooden spoon til just moistened. Fold in nuts and raisins. Pour beer bread batter into pans and bake 65 minutes or til a toothpick inserted in center comes out clean. - Sift teh flour, baking powder and salt into a mixing bowl.
- Add the beer and mix well.
- Add the cheese, scallions, and jalapenos and mix well.
- The batter will be stiff.
- Spoon evenly into a greased 9x5 loaf pan and brush the top with the melted butter.
- Bake at 300º for 45 minutes or until browned.

SPICY CHILI BEER BREAD
This bread is great fresh out of the oven, or toasted. I love it with stew also. It is so hearty and flavorful. I sometimes make a time and a half of the recipe so I can use the entire can of beer. I make this is the oven but I let the bread maker do the work for me. You could certainly do it by hand though. I have never cooked it in the bread maker but I imagine there would not be any problem with doing that. Experiment with different bread shapes, rolls, etc. Prep time reflects time for bread to rise, this will vary on your bread maker, and temperature.
