STIR-FRY CHILLI BEEF WITH SWEET POTATO JACKETS

2 sweet potatoes (about 175g each)
1 thick, lean rump sirloin steak , trimmed of all fat (about 200g after trimming), thinly sliced
2 garlic cloves , finely grated
2 tsp smoked paprika
1 tsp cold-pressed rapeseed oil
1 green pepper , halved, deseeded and sliced
1 tsp cumin seeds
2 tomatoes , cut into wedges
400g can black beans , drained and rinsed
1 tsp vegetable bouillon powder
handful of coriander , chopped, plus extra whole leaves to serve
1 small avocado , stoned, peeled, halved and chopped or mashed
1 lime , cut into wedges

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and bake the sweet potatoes for 45 mins, or until tender. Meanwhile, mix the steak with half each of the garlic and paprika.
  • Heat the oil in a non-stick wok and stir-fry the pepper for 1 min until starting to soften. Add the remaining garlic and the cumin seeds, and cook for a few minutes more. Tip in the tomatoes and the remaining paprika, and cook for 10 mins. Add the beans and bouillon, and stir-fry until heated through. Stir in the coriander. Halve the baked potatoes almost all the way through, and put onto plates. Top with the avocado and squeeze over some of the lime wedges, and divide the beans between the plates.
  • Return the pan to the heat and cook the steak for 5 mins. You shouldn't need to add any oil if you have a good non-stick pan, and if you don't wash the pan, you'll get some nice charred bits on the steak. The centre of the steak strips should be pink and tender. Pile onto the potatoes with a few coriander leaves, and serve with the remaining lime wedges for squeezing over.

1 pound beef top sirloin steak, cut into thin strips
1 tablespoon minced fresh gingerroot
3 garlic cloves, minced, divided
1/4 teaspoon pepper
3/4 teaspoon salt, divided
1 cup light coconut milk
2 tablespoons sugar
1 tablespoon Sriracha chili sauce
1/2 teaspoon grated lime zest
2 tablespoons lime juice
2 tablespoons canola oil, divided
1 large sweet red pepper, cut into thin strips
1/2 medium red onion, thinly sliced
1 jalapeno pepper, seeded and thinly sliced
4 cups fresh baby spinach
2 green onions, thinly sliced
2 tablespoons chopped fresh cilantro

Steps:

  • In a large bowl, toss beef with ginger, 2 garlic cloves, pepper and 1/2 teaspoon salt; let stand 15 minutes. In a small bowl, whisk coconut milk, sugar, chili sauce, lime zest, lime juice and remaining salt until blended., In a large skillet, heat 1 tablespoon oil over medium-high heat. Add beef; stir-fry until no longer pink, 2-3 minutes. Remove from pan., Stir-fry red pepper, red onion, jalapeno and remaining garlic in remaining oil just until vegetables are crisp-tender, 2-3 minutes. Stir in coconut milk mixture; heat through. 1 medium red onion
3 garlic cloves
1 pound sweet potatoes (about 2 large)
3/4 pound snow peas
1/2 cup drained rinsed canned whole water chestnuts (from an 8-ounce can)
1 pound boneless beef sirloin
4 scallions
3/4 cup chicken broth
1/4 cup hoisin sauce
2 tablespoons brandy
1 tablespoon cornstarch
4 tablespoons peanut oil
2 teaspoons Asian sesame oil
Accompaniment:Cooked Rice
Garnish: sliced scallions

Steps:

  • Thinly slice onion and garlic. Peel sweet potatoes and cut lengthwise into 1/8-inch -thick slices. Diagonally cut potato slices into thin strips and diagonally halve snow peas. Cut water chestnuts crosswise into 1/8-inch-thick slices and season with salt and pepper. Diagonally cut scallions into thin slices. In a small bowl stir together broth, hoisin sauce, brandy, and cornstarch until combined well.
  • Heat a wok or large heavy skillet over high heat until a bead of water dropped on cooking surface evaporates immediately. Add 2 tablespoons peanut oil, swirling wok or skillet to coat evenly, and heat until hot but not smoking. Add onion and stir-fry until softened. Add garlic and stir-fry until fragrant, about 30 seconds. Add sweet potatoes and stir-fry until just tender, 6 to 8 minutes. Add snow peas and water chestnuts and stir-fry until snow peas are crisp-tender, about 2 minutes. Transfer vegetables to a large bowl.
  • Add 1 tablespoon peanut oil to wok or skillet and heat unrig just smoking. Stir-fry half of beef until browned and transfer to bowl. Add remaining tablespoon peanut oil and stir-fry remaining beef in same manner, transferring to bowl.
  • Add broth mixture to wok or skillet and bring to a boil, stirring constantly. Simmer broth mixture 1 minute. Return beef-vegetable mixture with scallions to wok or skillet and stir-fry until combined and heated through. Season stir-fry with salt and pepper and stir in sesame oil.
  • Serve stir-fry over rice, garnished with scallions.

1 tablespoon cornstarch
3 tablespoons Chinese Shaoxing rice wine, dry sherry or white vermouth
1 pound beef sirloin, thinly sliced against the grain into strips
Kosher salt and freshly ground pepper
2 tablespoons oyster sauce
2 teaspoons toasted sesame oil
3 to 4 tablespoons peanut oil
1 1-inch piece fresh ginger, thinly sliced
2 cloves garlic, smashed
5 to 7 dried red chiles, halved
1 small onion, thinly sliced
8 heads baby bok choy, halved
Pinch of sugar
Cooked rice, for serving

Steps:

  • Whisk the cornstarch with 2 tablespoons rice wine in a medium bowl; add the beef, season with salt and pepper and toss to coat. Set aside for 15 minutes.
  • Mix the remaining 1 tablespoon rice wine, the oyster sauce and sesame oil in a large bowl; set the bowl near the stove.
  • Heat a wok or large nonstick skillet over high heat until very hot, about 1 minute. Add 3 tablespoons peanut oil, then the ginger, garlic and chiles; stir-fry until fragrant, about 1 minute. Add the beef and cook, stirring or shaking the skillet occasionally, 1 to 2 minutes. Transfer the beef with a slotted spoon to the sauce mixture and toss.
  • If the pan is dry, add 1 tablespoon peanut oil, then add the onion and stir-fry until just soft, about 2 minutes. Add the bok choy and sugar; stir-fry until just wilted, 1 to 2 minutes. Return the beef and any juices to the pan and stir to combine. Serve over the rice.

1 small onion, sliced

  • Stir in sweet potato, red or green pepper and 1/2 cup stock; cover and steam until potatoes are tender.

Here, he uses the machine to chop and grate vegetables, cutting down on prep time (and any possibility of shredding your knuckles on a box grater). The end result is a quick side dish, full of flavor from the ginger and soy sauce.

4 scallions, trimmed and cut into 1-inch pieces
2 garlic cloves
1 piece fresh ginger (1-inch long), peeled
1 small fresh hot chili (like jalapeƱo or Thai), stem and seeds removed
1 1/2 pounds sweet potatoes, peeled and cut into 1- to 2-inch chunks
3 tablespoons peanut oil
Salt
Freshly ground black pepper
1 tablespoon soy sauce, more for serving

Steps:

  • Put scallions in food processor and pulse until finely chopped; remove. Add garlic, ginger and chili to the processor and pulse until minced; remove. Fit the processor with grating blade and grate sweet potatoes.
  • Put oil in a large nonstick or well-seasoned cast-iron skillet over medium-high heat. When hot, add garlic-ginger-chili mixture and fry for 30 seconds. Add half the scallions and all the potatoes and sprinkle with salt and pepper. Sweet potato fries in restaurants are usually double-deep-fried; it's difficult to make them crisp in an oven, but this recipe does the trick at the last minute with brown sugar and spices.

3 pounds sweet potatoes
1/4 cup olive oil
2 teaspoons paprika, sweet, hot or a combination
1 tablespoon coarse or kosher salt
1 teaspoon cumin seeds, toasted
1 teaspoon coriander seeds, toasted
1 tablespoon dark brown sugar

Steps:

  • Heat the oven to 425 degrees. Cut the skins off the sweet potatoes, squaring off the round sides to make each potato into a large rectangle. Cut into long fries about 1/4-inch thick and 1 inch wide. (If not using potatoes immediately, soak in water for up to 1 day. Drain and pat dry before cooking.)
  • Put two large sheet pans in the oven to heat. Toss the potatoes, and skins if you like, with oil, paprika and 2 teaspoons of the salt. Arrange in one layer on the hot pans. (Don't use parchment paper; it will make the potatoes soggy.) Roast until tender and starting to brown on the bottom, about 15 minutes.
  • Meanwhile, grind the cumin, coriander and 1 teaspoon salt together. Mix in the brown sugar.
  • Remove pans from the oven and raise the heat to 450 degrees, or set to broil. With a spatula, carefully loosen the fries and turn each one over. Sprinkle with the spice and sugar mixture. Return to the oven and bake just until the fries are blistered and sizzling vigorously, about another 5 minutes. (If your oven has a convection feature, use it.) Do not overcook, or the fries will become leathery. Cool slightly.
