SPICY RICE, BEAN AND LENTIL CASSEROLE
Fibre packed, vegetarian nutritionally complete meal. I used a mix of yellow and green split peas, instead of green lentils, the kidney beans can be substituted with any other type beans also. Can be reheated in microwave, next day for lunch at work. from the local newspaper through The Canadian Press.

Steps:
- In a non stick saucepan, heat oil over medium high heat.
- Add garlic, onions and green pepper, cook for 3 minutes.
- Stir in stock, brown rice, lentils, basil and chili powder, bring to boil.
- Reduce heat to medium low and cook, covered and stirring occasionally, for 30 to 40 minutes or until rice and lentils are tender and liquid is absorbed.
- Stir in beans, corn and salsa, cover and cook for 5 minutes or until heated through.
SLOW COOKER SPICY BLACK BEAN-CORN CASSEROLE - COOKING LIGHT RECIPE

- 1. Place 2 Tbsp. green chiles and next 6 ingredients in a 3 1/2 quart electric slow cooker, stir well. Cover and cook on LOW 4 hours. 2. Combine remaining 1 Tbsp. green chiles, egg substitute, muffin mix, and roasted red bell peppers in a bowl. Spoon batter evenly over bean mixture in cooker. Cover and cook 1 hour or until corn bread is done. 3. Sprinkle cheese over corn bread. Cover and cook 5 minutes or until cheese melts. Top each serving with sour cream, sprinkle with cilantro.

Steps:
- Heat the oil in an oven-proof casserole on the hob. Add Onions, Celery, Bacon & Garlic. Fry over a low heat until soft but not discoloured.
- Stir in all the spices. Cook for a further minute or two.
- Add the tomatoes, stock & S & P. Stir well.
- Add the beans. Stir & bring to the boil. Stir in the mushrooms .
- Cover & put in a preheated oven at 170/fan,190C/gas5 for 20 minutes.

- Preheat oven to 350°F.
- Mix all the ingredients together in an oven proof casserole dish.
- Cover & bake for 1 hour, uncover and continue baking for another 1/2 hour.

SPICY SAUSAGE AND BEAN CASSEROLE RECIPE
Steps:
- 1. Preheat the oven to about 160 degrees (about a 4 gas), (if you're going to cook this like a casserole). 2. Fry the chopped onions until golden, remove from the frying pan. 3. Cut the sausages in to bite size pieces - about an inch in size. Fry in batches to seal and partially cook (don't be tempted to turn them too quickly, or they will fall apart). Remove and stand on kitchen paper to remove the excess fat. 4. Place the onions and sausages in either a big frying pan (with lid), or a casserole dish. Add the all the other ingredients and stir. If it looks a bit thick add some more water, or another can of tomatoes. 5. Cook for about an hour - until thickened slightly (if you're using a big frying pan, keep it on a low heat, and stir it occasionally to ensure it doesn't stick to the bottom of the pan). 6. Taste - to make sure it meets your requirements. 7. Serve with a nice jacket potato, mash or something yummy like that!
