Steps:
- Preheat oven to 450°F Spray baking dish with non-stick cooking spray.
- Combine salt, paprika, onion powder, dry mustard, garlic, pepper, cumin, basil, oregano, thyme, & rosemary.
- On plate, mix bread crumbs, parsley, and scallions.
- Sprinkle about 1 T of spice mixture on fish. Mix rest of it in with bread crumbs and olive oil.
- Dredge fish in crumb mixture.
- Place on baking pan and bake 12-15 minutes, turning every 5 minutes for even browning.
- Squeeze juice from lemon wedges over fillets & serve.

SPICY BAKED TILAPIA
I found this recipe on the back of a Market Pantry tilapia package, and fell in love. This is a great recipe for a delicious, spicy and crunchy quick meal. Note: add more pepper to make spicier, but consider using frosted corn flakes to help counteract the zing!

- Heat oven to 400 degrees
- Spray baking pan with nonstick cooking spray.
- Toss together cornflakes, parmesan cheese and cayenne pepper in a shallow bowl or pie plate.
- Whisk together egg and milk in a second shallow bowl or pie plate.
- Dip each fillet in egg mixture; then coat with cornflake mixture.
- Salt and pepper to taste.
- Bake 12 to 14 minutes or until fish flakes easily with fork.
- Serve fish with tarter or cocktail sauce and top with more parmesan cheese, if desired.

SPICY BAKED TILAPIA AND TOMATOES
This is a recipe that my wife created and I simply LOVE! This has become one of our two top favorite fish recipes ever. It is a little spicy, and that can be adjusted as desired. But this one is never fishy, and is a nice blend of seafood and Mexican-style food. We always make this with frozen or fresh tilapia, but you could substitute any light, thin white fish fillet.

Steps:
- Sauté the onion in olive oil until lightly brown.
- Add garlic and sauté for a minute longer, then scoop out and set aside.
- Pat fish dry, then sprinkle with lemon juice and salt (optional) on one side. Lightly sprinkle with bread crumbs on that side for a light coating.
- Place fish in the hot pan breading side down and repeat the sprinkle with lemon juice, salt, and bread crumbs for the top side.
- Fry fish over medium-high heat till done through, about 10 minutes, flipping once. remove fish and set aside in a baking dish.
- Add onions, garlic, crushed tomatoes, and Mexican tomato sauce to pan and heat over medium heat. Be sure to scrape all the leftovers from frying into the sauce by scraping/stirring.
- Pour the cooked sauce over the fish in the baking dish to cover completely and bake in the oven at 350° for about 20 minutes.
