Tired of the same old sweet potatoes? Ready to skip another sugary, marshmallow side at your holiday table? So am I. :-) Found this while scanning magazines at a neighbors and quickly scribbled it down. The combination of dweet and savory additions look to enhance, not mask, the wonderful flavors of the under appreciated sweet potato. This will be gracing our holiday table next year and will likely make an appearance before then. Soon to be at a table at your house? Hope so.

Number Of Ingredients 10

2 tablespoons canola oil or 2 tablespoons vegetable oil
2 medium sweet onions, halved and thinly sliced
3 1/2 lbs sweet potatoes, peeled and cut into large cubes
2 cups water
3/4 cup golden raisin
2 tablespoons light brown sugar
1 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1/4 teaspoon cayenne pepper

Steps:

  • In a large skillet, heat the oil over medium-high heat. Add the sliced onions and cook for 3 minutes, stirring occsionally. Add in the sweet potatoes and cook an additional 10 minutes.
  • Add two cups of water to the skillet. Add in the raisins, sugar, salt ginger cinnamon and cayenne. Reduce heat, cover and cook for 12 minutes until the potatoes are tender.
  • Serve hot or at room temperature.
  • Note: You can prepare these up to two days in advance. To reheat, place in a casserole dish and let stand 30 minutes at room temperature. Bake at 325 degrees for 30 minutes.

Who doesn't love cheesy baked potato casseroles? This version spices things up a bit by using smoky chipotles in adobo sauce and fragrant Gruyere in the cheese sauce. Because a crunchy topping is just about mandatory, I sprinkle the whole thing with crispy panko bread crumbs. A mandoline will make quick work of slicing the potatoes.

2 tablespoons unsalted butter, plus extra for greasing the baking dish
3 tablespoons all-purpose flour
2 1/2 cups whole milk
Kosher salt and freshly ground black pepper
1/2 teaspoon grated nutmeg (preferably freshly grated)
1 1/2 cups shredded Gruyere cheese
2 tablespoons pureed chipotles in adobo sauce (see Cook's Note)
3 pounds russet potatoes, peeled and sliced crosswise 1/8 inch thick
1/4 cup panko bread crumbs

Steps:

  • Preheat the oven to 375 degrees F. Grease a large casserole dish with some butter.
  • In a saucepan, melt the butter over medium-high heat. Whisk in the flour to form a smooth paste. While whisking, slowly add the milk in a steady stream to form a smooth sauce. Bring the sauce to a simmer, whisking to prevent the formation of any lumps (be sure to get into the corners of the pan so nothing burns). Season with salt and pepper. Add the nutmeg and cheese, whisking until thick and smooth. Whisk in the pureed chipotles.
  • Put the potatoes in a large bowl and season with salt and pepper. Pour in the cheese sauce and toss to thoroughly coat the potatoes. Evenly arrange the potatoes in the greased casserole dish, sprinkle with the bread crumbs, and cover tightly with aluminum foil.
  • Bake until the potatoes are easily pierced with a knife, about 1 hour. Uncover and bake until the top is golden brown and crisp, about 15 minutes. Remove from the oven and let sit for 10 minutes before serving.

4 large baking potatoes (about 3-1/4 pounds)
1 tablespoon olive oil
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided
1/4 cup butter, cubed
2/3 cup heavy whipping cream
1/4 cup sour cream
2 cups shredded cheddar cheese, divided
6 bacon strips, cooked and crumbled, divided
2 green onions, sliced, divided
Additional sour cream, optional

Steps:

  • Preheat oven to 375°. Scrub potatoes; pierce several times with a fork. Brush with oil; sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Place in a foil-lined 15x10x1-in. baking pan; bake 1 to 1-1/4 hours or until tender. Cool slightly., In a small saucepan, melt butter over medium heat. Whisk in whipping cream and 1/4 cup sour cream. Add 1-1/2 cups cheese; stir until melted. Remove from heat; cover to keep warm., When potatoes are cool enough to handle, cut each potato lengthwise in half. Scoop out pulp and place in a large bowl. Cut 2 potato skin shells into 1-in. pieces; save remaining skins for another use., Mash pulp with the remaining salt and pepper. Stir in cheese mixture, half the bacon and 2 tablespoons green onion. Transfer to a greased 1-1/2-qt. baking dish. Top with the cut-up potato skins. Sprinkle with remaining cheese and bacon., Bake until heated through and lightly browned, 30-35 minutes. Sprinkle with remaining green onion. If desired, serve with additional sour cream.

These are so easy to make and so tasty. A little on the hot side, so be warned. NOTE: I used Mrs. Dash's Southwest Chipotle Seasoning Blend for this dish, however, the recipe could not be accepted that way. So the dried Chipotle powder in the recipe should be Mrs. Dash's Southwest Chipotle Seasoning Blend.

20 small new potatoes, cleaned and quartered
2 tablespoons enova oil or 2 tablespoons lite olive oil
2 -3 teaspoons dried chipotle powder (see my note above)
1/2 teaspoon kosher salt (optional)

Steps:

  • Preheat oven to 450 degrees F.
  • Boil quartered potatoes for 15 minutes.
  • Allow to cool slightly.
  • Place the potatoes in a large zip-lock bag.
  • Add the oil, Mrs. Dash Southwest Chipotle Seasoning Blend and kosher salt (if using).
  • Shake until all the potatoes are coated.
  • Place on a baking sheet and bake for 20-25 minutes or until tender and nicely browned.
