PAM® Original No-Stick Cooking Spray
1 pkg. (10 oz. each) frozen chopped spinach, thawed, squeezed dry
1/2 tsp. garlic powder
1 lb. (16 oz.) VELVEETA, cut into 1/2-inch cubes
1 can Ro*Tel® Hot Diced Tomatoes with Habaneros, drained
1/2 cup real bacon bits
Pita chips or assorted vegetables, optional

Steps:

  • Preheat oven to 400°F. Spray 8x8-inch baking dish with cooking spray; set aside. Combine spinach and garlic powder in small microwave-safe bowl. Microwave on HIGH 1 minute or until warm.
  • Layer half of Velveeta in bottom of dish. Top with seasoned spinach, half of drained tomatoes and bacon bits. Sprinkle with remaining Velveeta and drained tomatoes.
  • Cover; bake 20 minutes or until Velveeta melts. Serve with pita chips or assorted vegetables, if desired.

1 tablespoon bacon grease
1/2 yellow onion, finely diced
3 cloves garlic, minced
1 tablespoon red wine vinegar
Pinch of crushed red pepper flakes (for a little spice because Trisha likes it)
Salt and ground black pepper
Salt and ground black pepper
12 ounces baby spinach

Steps:

  • In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. Add the vinegar, crushed red pepper flakes, salt and pepper and stir; add the spinach and toss it around, cooking until it's just wilted, 1 to 2 minutes. Serve immediately so the spinach is wilted but not soggy.

2 slices bacon (about 2 ounces total), cut crosswise into 1/2-inch strips
3 bunches flat-leaf spinach (about 2 pounds total), thick stems removed, well washed and dried
Coarse salt and ground pepper
2 teaspoons white-wine vinegar

Steps:

  • In a large skillet over medium heat, cook bacon until crispy, 5 to 8 minutes. With a slotted spoon, remove bacon, leaving fat in skillet; drain on a paper towel. Set aside.
  • Increase heat to high; fill skillet with as much spinach as will fit. Season with salt and pepper. Cook, tossing spinach and adding more as it wilts (it may take up to 2 minutes to fit it all). Continue to cook until tender, 1 to 3 minutes.
  • Tilt skillet to drain water from spinach (using slotted spoon or a spatula to hold spinach back). Mix in vinegar; season with salt and pepper. Serve sprinkled with crispy bacon.

1 ¼ cups whole milk
½ pound sweet onions, minced
½ pound tomatoes, seeded and chopped
½ (10 ounce) package frozen chopped spinach, thawed and drained
½ large red bell pepper, minced

Steps:

  • Combine pepper Jack cheese and milk in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until cheese is melted and well combined with the milk, about 5 minutes.
  • Stir onions, tomatoes, spinach, and red bell pepper into the cheese mixture. Cover and simmer until dip has thickened and flavors are well blended, about 15 minutes.

There are burgers. And then there are queso burgers made with fresh spinach, bacon, tomatoes and green chilies. Guess which ones they'd prefer?

2 lb. lean ground beef
1 cup tightly packed fresh spinach, chopped
1/2 cup OSCAR MAYER Real Bacon Bits
1 tsp. garlic powder
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained, divided
1 lb. (16 oz.) VELVEETA, divided
8 hamburger buns

Steps:

  • Heat greased grill to medium-high heat.
  • Mix meat, spinach, bacon, garlic powder and 2 Tbsp. tomatoes just until blended; shape into 8 balls.
  • Cut 1/2 lb. VELVEETA into 16 cubes. Press 2 VELVEETA cubes into center of each meatball; flatten to 1/2-inch-thick patty.
  • Grill 5 to 6 min. on each side or until done (160ºF). Meanwhile, cut remaining VELVEETA into 1/2-inch cubes; place in medium microwaveable bowl. Add remaining tomatoes; stir. Microwave on HIGH 3 min. or until VELVEETA is completely melted and sauce is well blended, stirring after 2 min.
  • Place burgers on bottom halves of buns. Drizzle with half the VELVEETA sauce; cover with tops of buns. Cool remaining VELVEETA sauce, then refrigerate for another use. (See tip.)
