2 lbs asparagus
3 garlic cloves
2 green onions
1 tablespoon korean hot bean paste
1 tablespoon sesame oil
1 tablespoon toasted sesame seeds
1 tablespoon sugar
2 pinches salt

Steps:

  • Wash Asparagus - Trim off hard ends, Cut along Diagonal in 1 inch pieces.
  • In medium pot half full of water bring to boiling add asparagus continue to heat until it starts to Boil again - Then Drain immediately using colander. Make sure to drain well. Asparagus should be slightly crunchy.
  • While the asparagus is cooking mix the balance of the ingredients in a small bowl. Mix the drained Asparagus and the sauce. Chill and serve. Keeps in the refrigerator for several days. Cover tightly - or it will stink up the refrig!
  • You can find the Korean Hot Bean Paste in an Oriental Grocery Store.

1 pound asparagus, cut into 2-inch pieces
2 tablespoons soy sauce
1 tablespoon vegetable oil
1 tablespoon white vinegar
1-1/2 teaspoons sugar
1 teaspoon sesame seeds, toasted
1/4 to 1/2 teaspoon ground ginger
1/4 teaspoon ground cumin

Steps:

  • In a saucepan, cook the asparagus in a small amount of water until crisp-tender, about 3-4 minutes. Drain well and place in a large bowl. , Combine the soy sauce, oil, vinegar, sugar, sesame seeds, ginger and cumin; pour over asparagus and toss to coat. Cover and chill for 1 hour. Drain before serving.

2 pounds asparagus, trimmed
2 tablespoons plus 2 teaspoons oriental sesame oil
1 tablespoon plus 1 teaspoon rice vinegar

Steps:

  • Cook asparagus in large skillet of boiling salted water until just crisp-tender, about 4 minutes. Drain. Rinse with cold water and drain well. Pat dry with paper towels. Arrange on platter. Mix sesame oil, rice vinegar, soy sauce and sugar in small bowl. Season dressing to taste with salt and pepper. (Asparagus and dressing can be prepared 1 day ahead. Cover separately and refrigerate.) Spoon dressing over asparagus. Sprinkle with sesame seeds and serve.

1 1/2 to 2 pounds asparagus, not too skinny
1 tablespoon sesame seeds
1 teaspoon sesame oil
2 teaspoons rice vinegar, or to taste
Salt and pepper to taste

Steps:

  • Cut off the woodsy bottoms of the asparagus spears; discard. Cut off the flower ends and set aside.
  • Use a vegetable peeler to remove the dark green outer skin of each spear; you should get three or four ribbons from each one. Set aside. Cut the remaining stalks crosswise into 1/4-inch rounds. Combine ribbons, sliced rounds and tips in a bowl.
  • Toast the sesame seeds in a small dry skillet over medium-heat, shaking occasionally until they color and begin to pop, but remove from heat before they burn. Combine the seeds with sesame oil, rice vinegar, salt and pepper in a small bowl. Taste and adjust as necessary. Spoon over the asparagus and toss gently.

1 lb fresh asparagus, trimmed
2 tablespoons rice vinegar
2 tablespoons soy sauce (feel free to use low-sodium)
2 teaspoons peanut oil or 2 teaspoons other vegetable oil
1 teaspoon sugar
3 -4 drops sesame oil
salt and pepper
1/4 cup almonds, lightly toasted and chopped (may use walnuts/pecans)
1 tablespoon scallion, chopped

Steps:

  • Cook the asparagus in salted boiling water until tender but crisp.
  • Drain, and rinse with cold running water, set aside.
  • In a large ziplock bag, mix the rice vinegar, soy sauce, oils, sugar, salt, and pepper.
  • Seal the asparagus in the bag and marinate overnight in the refrigerator.
  • Sprinkle the marinated asparagus with almonds and scallions before serving.

1 lb asparagus
1 tablespoon minced garlic
1 tablespoon grated gingerroot
1/2 teaspoon salt or 1/2 teaspoon herbal salt substitute
1/2 teaspoon honey
2 tablespoons soy sauce or 2 tablespoons tamari soy sauce
1 teaspoon dark sesame oil
1 tablespoon rice vinegar
1/4 teaspoon cayenne pepper
1/4 teaspoon hot pepper flakes (optional)

Steps:

  • 1. Bring a large pot of water to a boil over high heat. Trim ends of Asparagus and slice each stalk diagonally into 3-inch pieces (or leave whole). Steam until tender (8 to 10 minutes). Drain.
  • 2. In a blender combine garlic, gingerroot, salt, honey, soy sauce, sesame oil, vinegar, cayenne, and hot-pepper flakes. Pour over Asparagus or set in a bowl as a dipping sauce. Chill or serve warm.

1 tablespoon diced green chilis (Ortega brand recommended)
2 teaspoons soy sauce
2 teaspoons chili-garlic sauce
1 teaspoon rice vinegar
10 asparagus spears
1 small yellow onion, thinly sliced
1 tablespoon sesame seeds, toasted
1 tablespoon fresh ginger, grated
3 garlic cloves, finely chopped
1 tablespoon peanut oil
1/3 cup vegetarian oyster sauce
1/4 teaspoon cornstarch

Steps:

  • The day prior to making this dish, drain and rinse 1 tbsp diced green chilies. Add to a bowl the drained chilies, soy sauce, chili-garlic sauce and rice vinegar. Refrigerate overnight.
  • When ready to make the dish, add the content of the bowl to a food processor and pulse once or twice. Set aside.
  • Slice the onion and trim and cut the asparagus spears into thirds. Grate the ginger and chop the garlic.
  • Heat a dry wok or heavy frying pan on medium-high heat. It will be hot enough when water evaporates almost immediately after hitting the pan.
  • Pour in the oil making sure to rotate the wok or pan to get all sides coated evenly as you pour.
  • Toss in the ginger and garlic and stir-fry for one minute. Add the asparagus, onion and pureed green chili paste and stir-fry for another 2 minutes.
  • Add the oyster sauce and cornstarch, continuing to fry for about another minute so the cornstarch thickens the sauce.
  • Remove from heat and place into a serving dish. Sprinkle with sesame seeds and serve.

1 1/2 lbs fresh asparagus, washed,hard stems snapped off,if necessary peel the bottom part of the stem
2 teaspoons vegetable oil
1/4 cup water
1 pinch sugar
2 cloves garlic, minced
1 teaspoon sesame seed oil
1 tablespoon reduced sodium soy sauce
1 tablespoon oyster sauce
1 tablespoon dry sherry
2 teaspoons rice wine vinegar
1/4 teaspoon crushed red pepper flakes
2 tablespoons green onions, chopped (white & green part)

Steps:

  • Cut asparagus into 2" pieces.
  • Heat oil in wok or large skillet (high heat).
  • Add asparagus, stir fry for 1 minute.
  • Add water& sugar to the asparagus, cover and steam for 2 minutes, shake the pan a few times Combine the remaining ingredients.
  • Uncover wok and add remaining ingredients and cook for 1 minute, stirring to coat the asparagus with the spice mixture.
  • Serve immediately.
