SPICY ARTICHOKE DIP
Steps:
- Melt the butter in a large skillet or saute pan over medium-high heat.
- Add the red onions, jalapenos and salt and cook until the onions are soft and translucent, 5 minutes.
- Add the artichokes and cook until starting to fall apart, 8 to 10 minutes.
- Reduce the heat to medium and add the cream cheese, stirring until melted.
- Add the sour cream and Jack cheese and mix until well combined.
- Transfer the dip to a warmer or slow cooker to hold for serving.
HOT ARTICHOKE, CHILI AND PARMESAN DIP
Simple but tastes divine! You can use marinated artichoke hearts if that's all you have on hand, but there's already PLENTY of flavor as is. Yield is approximate.

- Transfer mixture to an 8-inch round or comparable baking dish.
- Bake, uncovered, in a 350-degree oven for 20 minutes.

SPICY ARTICHOKE PARMESAN CHEESE DIP
My hairdresser Jamie Klatt Savage brought this to a party and I loved it! I can't believe how good this recipe is and it's so easy to prepare. This is a quick and very easy appetizer to make for any occasion. Instead of salt and pepper I used creole seasoning to spice it up!

Steps:
- Drain water from artichokes and place in a bowl. Chop the artichokes up into small bits.
- Add a cup of shredded Parmesan cheese. Reserve some to place on top before baking. Salt and pepper to taste.
- Add a cup of mayonnaise and mix all of the ingredients well. Sprinkle remaining shredded Parmesan on top.
- Bake at 375° for 30 to 35 minutes until top is brown. Serve with crackers! Presto!
