SPICY VEGAN BLACK BEAN BURGERS



Spicy Vegan Black Bean Burgers image

I'm so excited for these Spicy Black Bean Burgers. Make them ahead of time, freeze them and then pop them on the stove for an easy weeknight dinner.

Number Of Ingredients 15

1/2 yellow onion (roughly chopped)
4-6 cloves garlic (roughly chopped)
15 oz can black beans (drained and rinsed)
1 cup quick cook oats
1/2 cup bread crumbs*
1-2 jalapenos (diced)
1/2 cup corn
2 tbsp spicy brown mustard
1 tbsp sriracha
1 tbsp cumin
1/4 cup low sodium soy sauce (or tamari)
1 tbsp chili powder
pinch of salt and pepper (plus more for topping)
6 burger buns
OPTIONAL TOPPINGS: lettuce (tomato, onion, spinach, jalapeños, banana peppers, BBQ sauce, vegan ranch, etc.)

Steps:

  • Add onion and garlic to a small pan over medium heat with 1 tbsp. of water. Saute until veggies start to soften.**
  • Scoop cooked veggies into a blender or food processor and pulse 2-3 times until combined, but not total mush.
  • Add beans to a large bowl and mash with a potato masher or fork until about half of the beans are mashed and the other half are still intact.
  • Add onion and garlic mixture to the bowl as well as remaining ingredients. Stir to combine.
  • Line a baking sheet with parchment paper.
  • Form mixture into 6 balls and flatten into patties.*** Place patties on baking sheet and put in the freezer for at least an hour.
  • If you are going to eat them right away, heat a pan over medium heat. Coat with non-stick spray and add frozen patties. Cook until browned and warmed through (about 6-8 minutes per side).
  • Serve on a burger bun, in a wrap or over a salad with your favorite toppings.
  • If you plan to store the patties for later: remove baking sheet from the freezer after an hour and cut parchment paper into squares. Stack patties on top of each other (with a piece of parchment paper between each patty) and place in freezer proof container. When ready to serve, follow cooking instructions above - no need to thaw patties.

1 egg
1 ½ tablespoons ground cumin
1 tablespoon chili powder
1 teaspoon chile-garlic sauce (such as Sriracha®)
1 (16 ounce) can black beans, rinsed and drained
1 jalapeno pepper, minced
1 cup canned whole kernel corn, drained
3 cloves garlic, minced
½ cup bread crumbs
½ cup whole wheat flour
2 tablespoons vegetable oil

Steps:

  • Whisk egg, cumin, chili powder, and chile-garlic sauce together in a bowl.
  • Mash black beans in a separate bowl until they reach a paste-like consistency.
  • Stir jalapeno pepper, corn, and garlic through the black bean paste.
  • Mix the egg mixture into the black bean mixture.
  • Scatter the bread crumbs over the black bean mixture; mix with your hands to evenly incorporate.
  • Form the resulting mixture into 4 patties.
  • Pour flour into the bottom of a shallow dish; coat the patties in the flour to help them hold shape.
  • Heat vegetable oil in a skillet over medium heat. Cook the patties in hot oil until cooked through, about 5 minutes per side.

1 (15-ounce) can black beans, drained
1/2 medium onion, diced
1 teaspoon hot sauce, or to taste
Optional: 1/2 red or yellow bell pepper, diced
1/2 teaspoon cayenne pepper
1 prepared egg-substitute "egg" (such as Ener-G egg replacer )
1 cup breadcrumbs
Optional: Oil for frying

Steps:

  • Gather the ingredients.
  • Mash the beans in a large bowl and add onion, hot sauce, bell pepper, if using, cayenne pepper, egg substitute, and breadcrumbs. Mix until well combined.
  • Press firmly to form into 4 patties.
  • If pan-frying, heat a tablespoon or so of oil in a skillet and lightly fry until a nice outer crust forms. Or, fire up the grill and barbecue your black bean veggie burgers over medium heat.

Spicy (Also Vegan Version) Black Bean Veggie Burgers image

I wanted to make my own to save money, to include Vegan version and to spice it up different ways. Can use Italian seasoning instead of spicy ingredients. Also, have made these burgers with pasta and spaghetti sauce.

1 (15 ounce) can black beans, drained and rinsed
1/2 green pepper
1/2 onion
1 (1 lb) stir fry vegetables, can be used instead of green pepper and onion, thawed
3 garlic cloves, peeled
1 eggs or 1/4-3/8 cup Egg Beaters egg substitute
1 tablespoon ground flax seed (For Vegan egg substitute, simmered in 3 tablespoons water. Stir together until thick and gelatinous.)
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon hot sauce (can use chili pepper paste, Huy Fong Sambal Oelek)
1/2 cup breadcrumbs or 1/2 cup rolled oats
add additional 1/2 cup cooked brown rice, if needed

Steps:

  • Note:.
  • To keep them from falling apart. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor. Rinse the black beans and dry them off before they go in the food processor.
  • Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs (or rolled oats), eggs (or flaxseed mixture) and spices and then the beans last. If mixture needs to be firmer, add cooked brown rice, mix by hand.
  • Note: put a little oil on your hands when shaping the patties to prevent sticking.
  • Divide mixture into four patties. (Can make them smaller, into 6 patties and serve them with a salsa dip or with a pasta dish.).
  • So patties are easier to handle: Freeze patties and grill them frozen.
  • For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. Place patties on foil, and grill about 8 minutes on each side.
  • For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.
