CHAI-SPICED TEA CAKES



Chai-Spiced Tea Cakes image

Brewed tea and a bundle of spices create the flavor in a lightly glazed cake.

1/2 cup boiling water
4 tea bags black tea
1/2 cup water
1 box Betty Crocker™ Super Moist™ yellow cake mix
1/2 cup vegetable oil
3 eggs
2 teaspoons sugar
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 cup Betty Crocker™ Rich & Creamy creamy white frosting

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease or spray bottoms and sides of two 8- or 9-inch round cake pans. In 2-cup measuring cup, pour boiling water over tea bags. Let steep 3 to 4 minutes. Discard tea bags. Add 1/2 cup water to tea to make 1 cup.
  • In large bowl, beat cake mix, oil, eggs and tea mixture with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pans.
  • In small bowl, mix sugar, cardamom, cinnamon, cloves and nutmeg; sprinkle over batter in pans. Pull knife through batter in swirl design.
  • Bake as directed on box for 8- or 9-inch rounds. Cool 15 minutes. Run knife around sides of pans to loosen cakes. On serving plates, place each cake, top side down; gently brush off excess crumbs. Cool completely, about 1 hour.
  • In small microwavable bowl, microwave frosting uncovered on High 10 to 15 seconds or until thin enough to drizzle. Place in small resealable food-storage plastic bag; cut off tiny corner of bag. Drizzle frosting over cakes. Store loosely covered.

These cookies are like chai spiced Mexican Wedding Cakes. I love the flavor and hope you will, too. A friend gave me this one and tells me it was from a Christmas issue of a magazine she gets.

1/2 c unsalted butter, room temperature
1/3 c powdered sugar
2 tsp vanilla extract
1 tsp almond extract
3/4 tsp ground allspice
3/4 tsp ground cardamom
1/2 tsp ground cinnamon
1/4 tsp salt
1 c all purpose flour
3/4 c finely chopped toasted almonds
1 c powdered sugar for rolling cookies in

Steps:

  • 1. Preheat the oven to 350 degrees. Using an electric mixer, beat butter, 1/3 cup powdered sugar, both extracts, spices and salt in a medium bowl. Beat in the flour. Stir in almonds. Using hands, roll dough into tablespoon sized balls. Place on a large baking sheet, spacing 1 inch apart. Bake in a preheated 350 degree oven for 20 to 25 minutes, until pale golden. Cool on the baking sheet for 5 minutes.
  • 2. Place 1 cup powdered sugar in a large bowl. Working in batches, gently coat the hot cookies in sugar. Cool the cookies on a rack. Roll again in sugar and serve.

SPICED ORANGE BLOSSOM TEA CAKES

My great grandma, Ma Jo, used to make tea cakes on her wooden stove for all her grandchildren in Gilbertown, Alabama. She was also very fond of oranges. I decided to combine the two and I imagine she would have loved these!

Number Of Ingredients 10

1 1/2 cups all-purpose flour, plus more for dusting
1 cup granulated sugar
1 teaspoon orange blossom water
1/4 teaspoon kosher salt
1/4 teaspoon baking soda
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice, plus more for sprinkling, optional
1 stick (8 tablespoons) unsalted butter, at room temperature
1 large egg, at room temperature
1 teaspoon pure vanilla extract

Steps:

  • In a medium bowl, whisk together the flour, sugar, orange blossom water, salt, baking soda, cloves and allspice. Add the softened butter, working it into the dry ingredients with your hands until fully incorporated. Add the egg and vanilla extract and gently knead the dough until it comes together. Cover with plastic wrap and refrigerate for 1 hour.
  • Preheat a grill to 350 degrees F. (See Cook's Note)
  • Roll out the dough to roughly 1/4 inch thick on a lightly floured piece of parchment. Punch out six 3-inch rounds, re-rolling the dough once if necessary. Place the dough rounds on a parchment-lined baking sheet, making sure they are evenly spaced.
  • Place the baking sheet over indirect heat on the grill. Bake the tea cakes until set but still pale, 10 to 15 minutes. Remove from the grill and allow to cool. Additional garnishes can be added to the top of the tea cakes. I enjoy adding a sprinkle of allspice at the end.

6 tablespoons buttermilk
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

5 cups flour

Steps:

  • Preheat oven to 400 degrees F.
  • Mix butter and sugar until light.
  • Add eggs, cinnamon, nutmeg and cardamon.
  • Mix soda with buttermilk and add to mixture.
  • Add flour small amount at a time.
  • May be rolled into balls or dropped by teaspoon onto a cookie sheet.
  • Bake in oven aproximately 10 minutes or until just brown.
