HOLIDAY SWEET POTATO, PEACH AND CASHEW BAKE/CASSEROLE
A favorite at our Thanksgiving table every year. Add marshmallows if you like. Versatile recipe- - you can vary the spices and type of nut used. One of my family's favorite variations is cinnamon or allspice in place of the ginger, with a splash of brandy, finely minced orange zest, a few tablespoons peach preserves, and a sprinkling of Sweet & Spicy Pecans, recipe #117774. Adapted from Better Homes and Gardens All-Time Favorite Recipes.

Steps:
- Combine brown sugar, cashews, salt, and ginger.
- In 10x6x2-inch baking dish layer half the sweet potatoes, half the peach slices, and half the brown sugar mixture. Repeat layers.
- Dot with butter or margarine.
- Bake, covered, at 350 degrees for 30 minutes.
- Uncover and bake mixture about 10 minutes longer. Spoon brown sugar syrup over before serving.
- Makes 6 to 8 servings.
SWEET POTATO PEACH BAKE
Peaches and sweet potatoes complement each other so well in this Sweet Potato Peach Bake. This sweet and delicious casserole is perfect for the holidays, and can be dressed up with marshmallows or peach preserves.

Steps:
- Heat oven to 350 degrees F.
- Place Bruce's® Yams Cut Sweet Potatoes in a bowl and cut into slightly smaller pieces.
- Drain the peaches (reserving 4-5 slices for the top of the casserole) and add to the yams along with 1/2 cup peach juice, ground ginger, salt and pepper; stir to mix.
- Transfer to a 2 quart baking dish; set aside.
- In a separate bowl, stir together the brown sugar and pecans.
- Sprinkle over top of casserole and place reserved peach slices in a line down the center.
- Bake for 35-40 minutes until hot and bubbly.

PEACH PECAN SWEET POTATOES
An easy, wonderful variation of a sweet potato recipe--great for Thanksgiving, a side dish with Easter ham, or for any time of year!

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- Arrange half the sweet potatoes in the bottom of the prepared baking dish. Layer with half of the peach slices and dot with half the butter. Repeat layering with remaining sweet potatoes and peach slices and sprinkle with lemon juice. Combine the brown sugar, ginger, and salt and mix well.
- Sprinkle the sugar mixture over the potatoes and peaches. Dot the casserole with remaining butter, and pour in the liqueur (see Cook's Note). Cover pan with aluminum foil.
- Bake in the preheated oven until sweet potatoes are tender, about 1 hour. Remove foil, sprinkle with pecans, and continue baking 10 to 15 minutes, until pecans are toasted and fragrant.

SLOW-COOKER SPICED SWEET POTATOES WITH PECANS
Candied sweet potatoes have long been a celebrated side dish during the holiday season but we have removed some of the sweetness (no marshmallows!) and made them even easier by cooking them in a slow cooker. We cut the potatoes into thick rounds so they hold up during the cooking process. The resulting tender sweet potatoes glazed with butter and spices are just sweet enough to make them the perfect accompaniment to your favorite poultry or pork dish.

- Position an oven rack in the middle of the oven and preheat the oven to 350 degrees F.
- Stir together the dark brown sugar, cinnamon and 1/2 teaspoon salt in a small bowl. Stir together the melted butter and vanilla extract in another small bowl.
- Toss the sweet potatoes with the cornstarch in a large mixing bowl. Put 1 layer of the sweet potatoes on the bottom of a 6-quart slow cooker. Drizzle with a third of the butter mixture then sprinkle with a third of the brown sugar mixture. Repeat to make 2 more layers. (If there are not enough sweet potatoes to make a complete third layer, that is okay.)
- Cover the slow cooker and cook on low until the sweet potatoes are tender but not mushy, about 4 hours.
- Meanwhile, spread the pecans out on a baking sheet and bake until very golden brown, 10 to 12 minutes. Let cool and finely chop.
- When the sweet potatoes are tender, gently stir in the orange juice. Transfer the potatoes to a shallow serving dish and allow to sit for 10 minutes (the sauce will thicken as it sits). Toss the potatoes in the sauce to coat, sprinkle with the chopped pecans and serve.

- Preheat an oven to 425 degrees F (220 degrees C).
- Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil, then sprinkle the brown sugar, paprika, black pepper, onion powder, garlic powder, poultry seasoning, chili powder, and cayenne pepper overtop. Toss until the potatoes are evenly coated with the seasoning. Spread onto a baking sheet.
- Bake in the preheated oven for 15 minutes, then turn the potatoes over with a spatula, and continue baking until the sweet potatoes are golden and tender, 10 to 15 minutes more.

- Place sweet potato chunks into a 4- or 5-quart slow cooker. Stir orange juice, brown sugar, 2 tablespoons melted butter, orange zest, and ginger in a bowl. Pour over the sweet potatoes.
- Cover and cook on Low until sweet potatoes are very tender, 4 to 5 hours. Stir every hour. Cooking time will vary with the size of the chunks and the age of the sweet potatoes.
- Meanwhile, line a rimmed baking sheet with parchment paper.
- Combine candied ginger, salt, cayenne pepper, and cinnamon in a small bowl. Set spice mixture aside.
- Heat pecans in a nonstick pan until lightly toasted, stirring or shaking the pan constantly, 4 to 5 minutes. Add 1 tablespoon butter and stir until melted. Mix in spice mixture and stir until pecans are coated. Sprinkle with brown sugar and water and mix to coat all the pecans. Cook until liquid evaporates, stirring constantly, about 2 more minutes.
- Spread out pecans on the prepared baking sheet in a single layer and allow to cool.
- Use a hand mixer or potato masher to mash the sweet potatoes with the remaining 2 tablespoons butter, cream, and salt. Lightly chop the cooled pecans and sprinkle on top. Garnish with fresh mint.
