Nothing jump-starts a little soirée like an over-the-top pour-and it doesn't get any merrier than this heady, Caribbean-inspired cocktail of black spiced rum with splashes of prosecco, ginger beer, and seltzer. A word to the wise: this aperitif can pack a wallop, thanks to a hefty cup of rum.

Number Of Ingredients 7

8 ounces black spiced rum, such as Kraken or Captain Morgan, chilled
4 ounces fresh lime juice (from 3 limes), chilled, plus wheels for serving
16 ounces ginger beer, such as Fever-Tree or Q, chilled
1 quart orange sherbet
1 bottle (750 milliliters) dry sparkling white wine, such as prosecco brut, chilled
16 ounces club soda or seltzer, chilled
Star-anise pods and sliced fresh ginger, for serving

Steps:

  • Combine rum, lime juice, and ginger beer in a large punch bowl. Add sherbet and pour sparkling wine and club soda over. Top with lime wheels, star anise, and ginger; serve.

Yield Makes about 6 1/2 cups.

Number Of Ingredients 8

2-inch piece fresh ginger
5 1/2 cups water
1/2 cup sugar
1 cinnamon stick
4 whole cloves
10 Celestial Seasonings Red Zinger tea bags
3/4 cup amber rum, or to taste
1 navel orange, sliced

Steps:

  • Peel ginger and cut crosswise into thin slices. In a medium saucepan boil water, ginger, sugar, cinnamon stick and cloves, stirring, until sugar is dissolved. Add tea bags and remove pan from heat. Steep tea until cool.
  • Discard tea bags and cinnamon stick and transfer tea to a pitcher. Chill tea, covered at least 12 hours and up to 1 day. Remove ginger and cloves with a slotted spoon and discard. Stir in rum and orange slices.
  • Serve punch over ice in stemmed glasses.
