Sauteed Mushrooms with Herbs image

The secret to mushrooms that are beautifully browned and not watery is taking a hands-off approach. Stirring them as they caramelize releases the mushrooms' liquid and causes them to steam, so leaving them alone is the way to go.

3 tablespoons extra-virgin olive oil
12 ounces cremini mushrooms, stems trimmed
Coarse salt and freshly ground pepper
2 garlic cloves, thinly sliced
1 tablespoon unsalted butter
2 teaspoons thyme leaves
1/3 cup dry white wine
Garnish: 1 tablespoon coarsely chopped fresh flat-leaf parsley

Steps:

  • Heat oil in a large skillet over medium-high heat. Cook mushrooms, cap sides down, without stirring, until caps are caramelized, 4 to 5 minutes.
  • Reduce heat to medium. Toss mushrooms, and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook until mushrooms are well browned, about 5 minutes more. Add garlic, butter, and thyme. Cook until garlic is golden and fragrant, about 2 minutes. Remove skillet from heat. Add wine. Return skillet to heat, and cook until wine is evaporated, about 4 minutes. Garnish with parsley. Serve warm.

500 g button mushrooms, whole
1 teaspoon ground cardamom
1 teaspoon ground black pepper
1 teaspoon ground nutmeg
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/3 cup olive oil

Steps:

  • Place mushrooms into a large ceramic, glass or plastic bowl.
  • Combine two thirds of oil, cardamom, pepper, nutmeg, cumin, coriander and turmeric in a small jug.
  • Pour mixture over mushrooms and toss well to coat mushrooms in mixture.
  • Set aside to marinate for 15 minutes.
  • Heat a wok over high heat until hot.
  • Add remaining oil and mushrooms and stir-fry for 3-4 minutes or until golden and just tender.
  • Serve hot.

  • Heat 2 tablespoons olive oil in a pot over medium-high heat. Add 1 pound sliced mixed mushrooms, season with salt and pepper and cook until tender, 7 minutes; push aside. Add 1 more tablespoon olive oil, 2 minced garlic cloves, 1 teaspoon ground coriander and 1/2 teaspoon each ground cumin and allspice; cook, stirring, 30 seconds. Stir in the mushrooms. Sprinkle with the juice of 1/2 lemon and some chopped mint and parsley.

2 tablespoons olive oil
1 teaspoon garlic, minced
1/2 teaspoon basil
1/2 teaspoon parsley
1/2 teaspoon chives

Steps:

  • Clean 1 pound of fresh mushrooms by wiping with damp towel.
  • Slice mushrooms, stem and all, to the size you like.
  • Sauté in pan with butter, oil and garlic for 5 minutes.
  • Add herbs and continue cooking until mushrooms are tender, yet firm.

2 teaspoons coriander seeds
1 teaspoon whole allspice
5 tablespoons extra-virgin olive oil
1 1/2 lb mushrooms (1 to 1 1/2 inches in diameter), stems trimmed flush with caps
1 1/2 tablespoons fresh lemon juice
2 teaspoons chopped fresh oregano
2 teaspoons chopped fresh flat-leaf parsley
2 teaspoons chopped fresh mint
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Finely grind coriander and allspice in an electric coffee/spice grinder or with a mortar and pestle.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté mushrooms with spices, stirring occasionally, just until tender, 10 to 12 minutes. Stir in lemon juice, 1 teaspoon of each herb, and salt and pepper. Remove from heat and cool to warm or room temperature. Stir in remaining herbs.
