SPICED APPLE HOLIDAY HAM

My grandmother always made pineapple ham, but I decided that rosy red apple rings look & taste even more festive. You can also make the apple rings from scratch by simmering a pan of water with apple slices, red hots, sugar, & a bit of red food coloring.

1 fully cooked bone in ham (6-8 pounds)
1 tsp whole cloves
1 jar(s) spiced apple rings (14.5 ounces)
1 c packed brown sugar
2 Tbsp yellow mustard
10-12 green maraschino cherries

Steps:

  • 1. Preheat the oven to 350 degrees F. Place the ham in a roasting pan cut side down. Score ham with a shallow diamond shaped pattern. Insert cloves into cuts. Cover ham with foil & bake for about 1 1/2 hours.
  • 2. Meanwhile, drain the liquid from the apple rings into a small saucepan. Whisk in the brown sugar & mustard. Bring mixture to a boil, then reduce heat to a simmer. Cook until mixture is thickened & coats the back of a spoon.
  • 3. Remove foil from ham & brush with the glaze. Secure apple rings & cherries to the ham with toothpicks. Bake uncovered for 30 minutes or until heated through.

HONEY-GLAZED HAM WITH CRANBERRY RELISH

A tangy cranberry-pecan relish adds a festive touch to a honey-glazed spiral sliced ham.

1 Cook's® Bone-in Spiral Sliced Half Ham (about 9 pounds)
1/2 cup honey (cranberry honey preferred, if available)
1-1/2 teaspoons dry mustard
1 teaspoon lemon juice
1 large Granny Smith apple, peeled, finely chopped (about 1-1/2 cups)
1 cup cranberry juice cocktail
1 package (6 ounces) sweetened dried cranberries (about 1-1/3 cups)
2 tablespoons Orange Marmalade
1/4 cup chopped pecans

Steps:

  • 1. Remove and discard glaze packet from ham or reserve for another use. Begin by preparing ham according to package directions.
  • 2. Make Honey Glaze: While baking, mix honey, mustard and lemon juice in small bowl until blended. Set aside until the last 30 minutes of baking time.
  • 3. Make Cranberry Relish: Combine apples and juice in medium saucepan. Bring to a boil over medium heat. Reduce heat to medium-low; simmer 5 minutes, stirring occasionally. Add cranberries; simmer an additional 5 minutes, or until fruit is tender, stirring occasionally. Remove from heat; stir in marmalade and pecans. Set aside until ready to eat. Or, if made in advance, cover and refrigerate until ready to use.
  • 4. Uncover ham and brush with the Honey Glaze for the last 30 minutes of the baking time.
  • 5. Let stand 10 minutes. Carve and serve with Cranberry Relish.

BAKED APPLES WITH SPICED CRANBERRY RELISH

1 orange, juiced and zested
1 lemon, juiced and zested
3 cups port
12 ounces fresh cranberries, washed
1/2 medium red onion, diced
1-ounce fresh ginger, peeled and cut into julienne
3 tablespoons dark brown sugar
1 teaspoon salt
1 teaspoon white pepper
1/2 teaspoon ground cinnamon
3 tablespoons orange liqueur
4 Rome Beauty apples

Steps:

  • Preheat the oven to 400 degrees F.
  • In a small saucepan, heat the orange and lemon juices with 1/2 cup of the port. Add the zest and cook until tender, about 10 minutes. Reserve.
  • In a medium saucepan, combine the cranberries, onion, 2 cups port, ginger, brown sugar, salt, pepper, and cinnamon. Over medium-high heat, cook until the relish thickens, 15 to 20 minutes, stirring occasionally. Stir in the remaining 1/2 cup port, the orange liqueur, and the reserved orange and lemon juice and zest mixture. Set aside.
  • Cut off the top 1/4-inch of each apple. Using a melon baller, remove the core of the apple, being careful not to pierce the sides or bottom of the apples, to make apple "cups". Place the apple cups in a small baking dish. Spoon the cranberry relish into the apples. Spoon the excess relish around the apples. Cover with foil and bake until apples are tender, about 30 to 45 minutes.

This recipe uses leftover ham with onion and dill pickle relish for a delicious sandwich spread or dip for crackers. You can substitute 10 green olives with pimentos for the dill pickle relish.

⅓ cup chopped onions
2 teaspoons dill pickle relish
1 teaspoon prepared mustard
¼ cup creamy salad dressing (e.g. Miracle Whip)

Steps:

  • Cut up ham to put into food processor, grind on pulse until very coarse. Add the onion and dill pickle relish close to the end of this stage. Put into mixing bowl and add mustard and creamy salad dressing; mix well.

1 cup unsweetened pineapple juice
1/2 teaspoon whole cloves
1 cinnamon stick (3 inches)
3 tablespoons brown sugar
1 tablespoon cornstarch
2 tablespoons cider vinegar
1 cup unsweetened pineapple tidbits, drained
6 boneless fully cooked ham steaks (4 ounces each)

Steps:

  • In a saucepan, bring pineapple juice, cloves and cinnamon stick to a boil. Reduce heat; cook, uncovered, for 5 minutes. Strain juice, discarding cloves and cinnamon. Return juice to the pan. , In a bowl, combine brown sugar and cornstarch; stir in vinegar until smooth. Stir into pineapple juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in pineapple; heat through., In a large nonstick skillet, cook ham steaks until browned and heated through. Serve with the pineapple sauce.

WHEN Mother wanted to serve ham, she went to the smokehouse, took one down from the rafters and sliced off as much as was needed. The rest was hung up again. 2 fully cooked bone-in ham steaks (1 pound each)
2 teaspoons ground mustard
1/2 cup packed brown sugar
3 medium tart apples
2 tablespoons butter
Pepper to taste

Steps:

  • Place ham in an ungreased 13-in. x 9-in. baking dish. Rub with mustard and sprinkle with brown sugar. Core apples and cut into 3/4-in. slices; arrange in a single layer over ham. Dot with butter and sprinkle with pepper. , Cover and bake at 400° for 15 minutes. Reduce heat to 325°; bake for 45 minutes. Uncover and bake 15 minutes longer or until apples are tender.
