2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon pepper
1/8 teaspoon ground cloves
2 tablespoons olive oil
8 medium ears sweet corn, husks removed

Steps:

  • In a small bowl, combine the first eight ingredients. Brush oil over corn; sprinkle with spice mixture. Place each on a rectangle of heavy-duty foil (about 14x12 in.). Fold foil over corn, sealing tightly., Grill corn, covered, over medium heat 10-12 minutes or until tender, turning occasionally. Open foil carefully to allow steam to escape.

Take your corn side dish from ordinary to extraordinary! Sweet corn is grilled and then rubbed with lemon wedges that have been dipped in a mouthwatering combination of spices.

2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon salt
1 teaspoon white sugar
1 teaspoon chili powder
½ teaspoon ground ginger
¼ teaspoon ground cinnamon
¼ teaspoon pepper
⅛ teaspoon ground cloves
1 lemon
8 ears corn, husked
2 tablespoons olive oil

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix together cumin, coriander, salt, sugar, chili powder, ginger, cinnamon, pepper, and cloves in a small bowl. Slice lemon into 8 wedges. Set aside.
  • Brush corn with olive oil.
  • Grill corn on the hot grill, turning every few minutes, until lightly browned, about 15 minutes. Remove from grill.
  • Dip lemon wedges into spice mixture. Rub 1 lemon wedge over each ear of corn.

Grilled Corn with Cheesy Taco-Spiced Butter image

Number Of Ingredients 7

1 stick (8 tablespoons) unsalted butter, at room temperature
1/4 cup finely grated pecorino or Parmesan, plus more for serving
1 tablespoon taco seasoning
Finely grated zest and juice of half lime
6 ears fresh corn, shucked
2 tablespoons olive oil
2 teaspoons sea salt

Steps:

  • Preheat a grill to medium heat.
  • Combine the butter, pecorino, taco seasoning and lime zest and juice in a small bowl and mix until smooth. Set aside at room temperature.
  • Put the corn on a baking sheet or platter and drizzle with the oil, turning to coat on all sides. Season with salt. Grill the corn, turning occasionally, until lightly charred on all sides and the kernels are tender, about 10 minutes. Remove the cooked corn from the grill and spread the seasoned butter on top of each cob. Sprinkle each with more pecorino.
