Treat guests over for Christmas to a Boxing Day ham. You don't need a long shopping list - this easy, sweetly spiced version uses just five ingredients

2kg unsmoked boneless gammon joint
2 ½l ginger ale (not sugar-free)
2 tsp allspice berries , plus 1 tsp, crushed
300g light brown soft sugar
3 tbsp finely grated ginger

Steps:

  • Put the gammon in a large pan and cover with 2 litres of ginger ale. Top up with water to cover the joint, if you need to. Add the whole allspice berries and bring to a boil. Turn the heat down to low, and simmer gently, covered, for 2½ hrs. Top up with water, if you need to, while it's simmering.
  • Drain the ham and leave until it's cool enough to handle while you make the glaze. Put the remaining ginger ale in a pan with the sugar, grated ginger and crushed allspice. Simmer, uncovered, for 20-25 mins until syrupy.
  • Heat the oven to 190C/170C fan/gas 5. Remove the skin from the ham, leaving a layer of fat, then score the fat in a criss-cross pattern. Transfer the ham to a foil-lined roasting tin, and brush over half the glaze. Roast for 15 mins, then glaze with the remaining syrup. Increase the temperature to 200C/180C fan/gas 6 and roast for a further 15-20 mins until you get a sticky golden crust. Leave to cool for 15 mins before carving. Drizzle over more glaze from the tin to serve, if you like. Can be made ahead and chilled for up to four days.

1 cup packed brown sugar
1 cup orange juice
1 cup bourbon
1-1/2 teaspoons ground cloves
7 to 9 pounds fully cooked bone-in ham

Steps:

  • In a large bowl, whisk the first 4 ingredients. Add ham; turn to coat. Cover and refrigerate 8 hours or overnight, turning occasionally., Preheat oven to 325°. Remove ham from marinade and place on a rack in a roasting pan; reserve remaining marinade, placing it in the refrigerator until ready to baste., Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern. Bake, covered, 2 hours., Baste with about half the reserved marinade. Bake, uncovered, 1 to 1-1/2 hours, basting the ham twice more during the first half hour, until a thermometer reads 140°.

This recipe calls for a whole leg of ham, with the bone in, that has been pre-cured and pre-cooked. If you can't buy a pre-cooked ham, ask your local butcher for a cured leg and follow their cooking instructions before glazing.

2 sticks cinnamon
4 star-anise
1 cup (250ml) orange juice
1 1⁄2 cups (260g) light brown sugar
1⁄4 cup (60ml) pomegranate molasses
1⁄4 cup (90g) honey
1 (13-15 lb.) ham leg
4 oranges, peeled, thinly sliced and patted dry

Steps:

  • Preheat oven to 180°C (350°F). Place the cinnamon, star-anise, juice, sugar, pomegranate molasses and honey in a medium saucepan over medium heat and bring to the boil, stirring to dissolve the sugar. Cook for 4-6 minutes or until syrupy.
  • Lightly grease a large wire rack over a roasting pan lined with aluminum foil. Use a sharp knife to score the skin around the sides and hock of the ham, before using your fingers to gently remove the rind. Trim any excess fat. Wrap the ham hock in non-stick baking paper then aluminum foil. Place the ham on the rack and brush with the glaze. Arrange the orange slices over the ham, overlapping slightly. Carefully brush with the glaze and roast the ham for 40 minutes, brushing with glaze halfway. Increase the oven temperature to 200°C (400°F). Brush the ham with the glaze and roast for a further 5 minutes or until golden and caramelized.
  • Serve the ham with the remaining glaze.

SPICED AND HONEY GLAZED HAM WITH SAVORY BREAD PUDDING



Spiced and Honey Glazed Ham with Savory Bread Pudding image

2 cups honey, for glazing
2 tablespoons Toasted Spice Rub, recipe follows
1 tablespoon finely chopped fresh thyme leaves
1 country ham
6 celery stalks
1 loaf country-style bread (about 1 pound)
5 tablespoons unsalted butter, cut into tablespoon-sized pieces, divided
1 cup finely chopped yellow onion
Finely ground sea salt, preferably gray salt
1 tablespoon finely chopped fresh thyme leaves
3/4 cup plus 2 tablespoons freshly grated Parmesan, divided
3 cups whole milk
6 large eggs
1/2 teaspoon freshly grated nutmeg
1/4 pound blue cheese, crumbled
1/4 cup fennel seeds
1 tablespoon coriander seeds
1 tablespoon peppercorns
1 1/2 teaspoons red pepper flakes
1/4 cup (1-ounce) pure California chili powder
2 tablespoons kosher salt
2 tablespoons ground cinnamon

Steps:

  • For the spiced and honey glazed ham: Preheat oven to 425 degrees F.
  • Blend together the honey, Toasted Spice Rub and thyme.
  • Place ham on an open brown paper bag or waxed paper for easy clean up. With the tip of a paring knife carefully score a 1-inch grid pattern around the outside of the ham.
  • Brush the entire surface of the meat on all sides with some of the honey mixture.
  • Add about 1/2 cup of water to the base of a roasting pan. Lay the celery sticks in the bottom of the pan and then place the ham on top of the celery.
  • Cook for 1 hour. Every 15 minutes, baste ham with juices that collect in the base of the roaster and the honey. Let rest for 15 minutes before carving as desired.
  • For the savory bread pudding: Preheat the oven to 425 degrees F.
  • Using a serrated knife, shave off the thicker parts of the crust from the bread loaf. Cut the bread into 1-inch cubes and place in a large bowl. Spread the bread cubes in a single layer on a 13 by 18-inch rimmed baking sheet. Bake until lightly toasted, about 8 minutes. Remove from the oven and place in a large bowl. Leave the oven on.
  • In a skillet, melt 4 tablespoons of the butter over high heat and cook, without stirring, until it turns nut brown, about 5 minutes. Reduce the heat to medium, add the onion and a pinch of salt, and cook, stirring occasionally, until the onion begins to brown, about 5 minutes. Add the thyme and cook for 10 seconds to release its fragrance.
  • Pour the onion mixture over the toasted bread. Add 3/4 cup of the Parmesan and toss well.
  • In a medium bowl, whisk together the milk, eggs, and nutmeg. Pour the milk mixture over the bread and toss well.
  • Butter a 9 by 13-inch baking dish with the remaining 1 tablespoon butter. Arrange the toasted bread evenly in the baking dish. Pour the custard evenly over the bread. Scatter the blue cheese and the remaining 2 tablespoons Parmesan over the top. Bake until the bread is golden brown and crispy on top and a thin knife blade inserted into the custard comes out almost clean, about 30 minutes. Remove the dish from the oven and let cool for 15 minutes. Cut into individual servings and serve warm.
  • Toast the fennel seeds, coriander seeds, and peppercorns in a small, heavy pan over medium heat. When the fennel turns light brown, work quickly. Turn on the exhaust fan, add the red pepper flakes, and toss, toss, toss, always under the fan. Immediately turn the spice mixture out onto a plate to cool.
  • Put mixture into a blender with the chili powder, salt, and cinnamon and blend until the spices are evenly ground. If you have a small spice mill or a coffee grinder dedicated to grinding spices, grind only the fennel, coriander, pepper, and chili flakes. Pour into a bowl and toss with the remaining ingredients. 1.5-2kg unsmoked boneless tied gammon joint
2 bay leaves, plus extra to serve (optional)
3 star anise
4 whole cloves, plus extra for studding the ham
8 allspice berries
10 whole peppercorns
1 litre pomegranate juice
2 small oranges, 1 halved, 1 sliced, plus 1 tsp juice
1 tbsp pomegranate molasses
1 tbsp Dijon mustard
2 tbsp brown sugar
1 tbsp honey
80g pomegranate seeds to serve (optional)

Steps:

  • Put the gammon in a large pan with the bay leaves, star anise, cloves, 6 allspice berries and 8 peppercorns. Pour over the pomegranate juice to cover the gammon (you may need to top up with water). Add one of the orange halves, then bring to a simmer and partially cover with a lid. Cook for 2 hrs 30 mins, topping up with water as needed to keep the gammon covered. Leave to cool in the liquid for 20 mins, then lift out and place on a baking tray lined with baking parchment.
  • Heat the oven to 200C/180C fan/gas 6. Cut the skin off the gammon, leaving a 1cm layer of fat. Score lines into the fat at ½cm intervals using knife. Bake for 15 mins until the fat is starting to crisp.
  • Meanwhile, crush the remaining allspice berries and peppercorns with a pestle and mortar. Combine the crushed spices with the molasses, mustard, sugar and 1 tsp orange juice. Remove the gammon from the oven and brush over the molasses mixture. Arrange the orange slices over the gammon, securing them with some cloves.
  • Turn the oven to 180C/160C fan/gas 4 and return the gammon to the oven for another 20 mins. Brush the honey over the orange slices and bake for another 5-10 mins, or until the glaze is bubbling. Leave to rest for at least 20 mins, then serve with bay leaves and pomegranate seeds scattered over, if you like.

1 1/2 tsp fine sea salt
1 tbsp whole coriander seeds
1 tbsp mixed peppercorns (pink, white, green, black)
1 tbsp all purpose flour
1 tsp allspice
1 c light brown sugar
1/4 Dijon mustard
2 cups pineapple juice
1 inch fresh ginger, chopped
4 cloves garlic chopped
1/2 c dark brown sugar
apprx 10 pineapple rings
apprx 10 maraschino cherries

Steps:

  • Mix rub: Coarsely grind coriander and peppercorns. Mix with salt, flour, allspice and sugar. Coat ham with mustard. Cover mustard with dry rub and place pineapple rings with cherries secured in centres with toothpicks. Bake covered with foil @ 325 for 2&1/2 hours. Meanwhile, combine pineapple juice, ginger, garlic and dark sugar and simmer until reduced to half. Use to baste. After 2 & 1/2 hours remove foil and baste every 15 minutes. Let stand for 15 minutes, carve and serve
