Steps:

  • Prepare 1 pound frozen french fries as the label directs. Meanwhile, cook 1/2 thinly sliced onion, 1 tablespoon hot paprika and 1 teaspoon salt in 2 tablespoons butter in a large skillet over medium-high heat, stirring, 4 minutes. Add 1 minced garlic clove and cook 2 more minutes. Remove from the heat and add 3 chopped scallions and 2 tablespoons chopped parsley. Add the fries and toss to coat.

SPAM® is not something I eat often but when I do, I like it extra crispy. I found a can in the pantry and decided to give it a go in the air fryer. The outside was far crispier than you get in a skillet on the stovetop and the inside stayed nice and tender.

½ cup mayonnaise
2 teaspoons Sriracha sauce
1 teaspoon ketchup
1 (12 ounce) container fully cooked luncheon meat (such as SPAM®), sliced into fries

Steps:

  • Preheat the air fryer to 400 degrees F (200 degrees C).
  • Whisk mayonnaise, Sriracha, and ketchup together in a small bowl. Set dipping sauce aside.
  • Place luncheon meat fries into the air fryer basket without overcrowding. Work in batches if needed. Fry for 6 minutes. Flip fries using tongs. Cook to desired crispness, about 4 minutes more. Transfer to a paper towel-lined plate. Serve with dipping sauce.

Vegetable oil, for frying
1/2 cup all- purpose flour
1/2 packet southwest steak marinade mix
Freshly ground black pepper
3 cups corn bran cereal
1 egg, lightly beaten
1/2 cup buttermilk
1 pound chicken breast tenders
1 cup ketchup
1 1/2 cups honey
Dash Worcestershire sauce
1 cup yellow mustard

Steps:

  • Heat several inches of oil in a deep pot to 375 degrees F.
  • For the chicken: In a large plastic zip top bag, combine flour, marinade mix and pepper. Set aside. In another bag, add corn bran. Using a rolling pin, gently crush cereal to coarse ground crumbs. Mix egg and milk in a shallow bowl. Soak chicken strips in buttermilk mixture. Take a few strips at a time, and toss in seasoned flour mix. Shake off excess flour and dip in buttermilk mix again. Toss in cereal crumbs. Repeat with remaining chicken strips. Fry chicken strips in batches until golden brown and cooked through, about 6 to 7 minutes per batch. Drain on paper towels. Serve with dipping sauces.
  • For the dipping sauces: Make the ketchup sauce. In a small bowl, combine ketchup, 1/2 cup honey and Worcestershire. Make the mustard sauce. In a small bowl, combine remaining honey and mustard.

3 pounds russet (baking) potatoes (5 or 6)
4 to 6 cups vegetable oil for deep-frying

Accompaniments:
Sour Cream and Onion Dip , Saffron Mayonnaise , Ginger-Sesame Sauce , Roasted Red Pepper-Walnut Dip , and/or Chipotle-Tomatillo Sauce

A 5- to 6-quart pot; a deep-fat thermometer

Steps:

  • Peel potatoes, then cut lengthwise into 1/3-inch-thick sticks, submerging in a large bowl of ice water. Rinse potatoes in several changes of cold water in bowl (more ice isn't necessary) until water is clear. Drain in a large colander.
  • Spread potatoes out in a single layer on several layers of kitchen towels to drain, then pat dry.
  • While potatoes are being rinsed and dried, heat 2 inches oil slowly in a 5- to 6-quart pot over medium-low heat until thermometer registers 300°F.
  • When oil is ready, increase heat to high and fry potatoes in four batches, stirring occasionally, until just cooked through but still white, about 3 minutes. (Adjust heat to keep oil as close to 300°F as possible and return oil to 300°F between batches.) Transfer fried potatoes with a slotted spoon to a baking sheet lined with dry towels to drain. When all potatoes are fried once, cool potatoes to room temperature, about 30 minutes.
  • Reheat oil over medium-high heat until thermometer registers 375°F. Fry potatoes again in four batches, stirring, and adjusting heat to keep oil as close to 375°F as possible, until deep golden, 3 to 4 minutes. (Return oil to 375°F between batches.) Transfer with slotted spoon to dry towels to drain briefly, then season with salt and serve immediately, with sauce(s) for dipping.

¼ cup vegetable oil
¼ cup tomato-vegetable juice cocktail
1 tablespoon chili powder
1 teaspoon ground cumin
2 teaspoons dried onion granules
1 teaspoon garlic powder
1 teaspoon cayenne pepper
1 teaspoon white sugar
1 tablespoon salt

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a large baking sheet.
  • Fill a large bowl with cold water, add the potatoes, and allow to soak for 10 minutes.
  • Whisk together the oil, vegetable juice cocktail, chili powder, ground cumin, onion granules, garlic powder, cayenne pepper, sugar, and salt in a large bowl. 1 clove garlic, minced
½ teaspoon paprika
1 pinch salt
1 cup mayonnaise
1 tablespoon sriracha sauce
1 tablespoon ketchup
1 quart vegetable oil for frying
2 (12 ounce) cans fully cooked luncheon meat (such as SPAM®), sliced into fries

Steps:

  • Process garlic, paprika, and salt in a food processor until smooth. Add mayonnaise, sriracha sauce, and ketchup; process until sauce is well-combined. Transfer sauce to a bowl, cover the bowl with plastic wrap, and refrigerate until chilled.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Rinse luncheon meat 'fries' with cool water and pat dry.
  • Working in batches, cook 'fries' in preheated oil until browned and crispy on the outside and still moist on the inside, 4 to 6 minutes. Remove to a paper towel-lined plate. Transfer 'fries' to a plate and serve with chilled dipping sauce.
