A simple spice cake laden with fresh apples, this dessert can be made in no time. If guava jam is not easily found in your area, feel free to substitute plum, cherry or any preserves you have on hand. It's also a terrific brunch cake that begs for a great cup of coffee.

2 cups white sugar
2 cups all purpose flour
4 teaspoons ground cinnamon
1 teaspoon salt
2 teaspoon baking soda
2 eggs
1 cup vegetable oil
1/4 cup freshly squeezed orange juice
4 cups Granny Smith apples, peeled, cored and finely chopped (about 4 to 6 apples)
1 cup walnuts, coarsely chopped
1/4 cup guava jam
1 tablespoon freshly squeezed lime juice
5 ounces cream cheese, room temperature

Steps:

  • Preheat oven to 325 degrees. Butter and flour a 10-inch cake pan. Combine dry ingredients and set aside. Whip eggs until frothy, about 3 to 4 minutes then add oil and orange juice and mix thoroughly. Add dry ingredients and beat with whip at low speed until thoroughly combined.
  • Fold in apples and walnuts and pour into prepared cake pan. Bake at 325 degrees for 1 hour or until firm on top. Cover with aluminum foil if top gets too brown. Cool on rack 5 minutes, then invert onto rack and cool completely. Serve with guava cream cheese topping spread over the top.
  • Mash all ingredients in a bowl with a fork until light and fluffy.

6 small Granny Smith apples, peeled and sliced
1/3 cup granulated sugar
1/2 teaspoon ground cinnamon
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 cup granulated sugar
4 large eggs, at room temperature
2 cups all-purpose flour
1 cup almond flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1 1/2 cups buttermilk, at room temperature
3 tablespoons powdered sugar

Steps:

  • For the apples: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.
  • Mix together the apples, granulated sugar and cinnamon in a medium bowl. Set aside.
  • For the cake: Combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. Beat in the eggs one at a time until fully combined, then add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, salt and buttermilk. Beat on low speed until a few streaks remain, then fold together with a rubber spatula until fully combined. (Do not overmix.)
  • Sprinkle the bottom of the pan with half of the apple mixture. Spread the batter over the top of the apples. Top the batter with the remaining apples, making decorative rows across the cake. Bake, rotating the pan halfway through, until a toothpick inserted in the middle of the cake comes out clean, about 1 hour. Allow the cake to cool slightly before dusting with powdered sugar and serving.

1/3 cup brandy

1/2 cup vegetable shortening

Steps:

  • Preheat oven to 325°F. Grease 2 (9-inch) cake pans and line bottoms with wax paper or parchment paper. Grease paper and dust pans with flour, knocking out excess.
  • Heat currants and brandy in a small heavy saucepan over low heat until currants are plumped, about 3 minutes, then cool.
  • Sift together flour, cinnamon, allspice, cloves, baking soda, and salt.
  • Beat together butter, shortening, and sugar in a large bowl with an electric mixer until combined well, then beat in eggs and vanilla. With mixer at low speed, alternately beat in flour mixture and applesauce in 3 batches. Fold in currants with brandy remaining in pan.
  • Divide batter between cake pans and bake in middle of oven until a tester inserted in center comes out clean, about 45 minutes.

The apple-essence syrup is brushed over the cake to infuse it with flavor and make it extra-moist. If you prefer, substitute apple cider for the brandy.

3 cups peeled and finely diced tart apples
1/3 cup raisins
1/3 cup chopped walnuts
3/4 cup unsalted butter, at room temperature
1 1/2 cups (packed) dark-brown sugar
1 teaspoon vanilla extract
3 large eggs
1/2 cup buttermilk
1/2 cup applesauce
1/3 cup Calvados (apple brandy) or applejack
2 tablespoons sugar
1 teaspoon fresh lemon juice
6 strips (3x1/2-inch) lemon zest
Confectioners' sugar, for dusting

Steps:

  • 1. Preheat the oven to 350°F. Butter and flour a 12-cup bundt pan.
  • 2. Using a fork, combine flour, baking powder, spices, baking soda, and salt in a bowl. In another bowl, combine apples, raisins and walnuts; add 3 tablespoons of flour mixture and toss to coat. Set aside.
  • 3. Combine the butter, brown sugar, and vanilla in a mixing bowl; cream until the mixture is light and creamy. Beat in the eggs one at a time. Stir in the buttermilk and applesauce.
  • 4. Slowly add the remaining flour mixture to the butter mixture, beating until blended. Stir in reserved fruit-nut mixture. Pour batter into the prepared pan and smooth the top.   • 6. Unmold the cake onto a serving platter. Prick it all over with a wooden skewer. Strain the syrup (discarding lemon zest) and brush the cake with the syrup until it has been absorbed. Before serving, dust the top with confectioners' sugar.

1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
  • Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
  • Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.
