125g / 1 stick unsalted butter (, melted)
2 cups (300g) flour (, plain/all purpose)
1/2 cup (100g) white sugar
1/2 tsp baking powder
Pinch of salt
1 egg
1/3 cup (30g) rolled oats (Note 1)
3 - 4 large granny smith apples (, cut into 0.7cm / 1/3" dice(~4 cups))
1/4 cup (35g) plain flour ((all purpose flour))
1/4 cup (50g) white sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
Salted caramel sauce
Ice cream!

Steps:

  • Preheat oven to 180C/350.
  • Grease a 20cm/8" square pan and line with baking/parchment paper with overhang (so it can be lifted out once cooked).
  • Mix together butter, flour, sugar, baking powder and salt until you can no longer see white bits of flour.
  • Add egg and mix.
  • Lightly press 2/3 of the mixture into the bottom of the pan.
  • Bake for 15 minutes until slightly golden, then remove and cool for 5 minutes.
  • Apple Filling: While the base is cooking, mix together Apple Filling ingredients in a bowl.

These very simple but impressive bars use boxed cake mix for the base, streusel on top and apple butter in between for a sweet snack that's not too sugary.

Cooking spray
1/2 cup (1 stick) unsalted butter
1 box yellow cake mix for two 9-inch rounds
1 large egg
1 cup apple butter
1/2 cup unsweetened instant or quick-cooking oats
1/4 teaspoon ground cinnamon
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-inch square pan with a piece of aluminum foil (about 17 inches long), leaving a 2-inch overhang on each side. Lightly coat the bottom and sides of the lined pan with cooking spray.
  • Melt half the butter (4 tablespoons) in a medium bowl in the microwave, about 45 seconds. Set aside 1 cup of the cake mix, and add the remaining mix to the melted butter. Add the egg and 1 tablespoon water, and mix with a spatula until well blended. Let stand a few minutes until the mixture is no longer tacky to the touch. Pat the dough in an even layer in the pan. Bake until the edges are lightly set to the touch and the crust is lightly browned all over, about 20 minutes. Let cool for 5 minutes.
  • Meanwhile, melt the remaining butter in a medium bowl in the microwave, about 45 seconds. Add the reserved cake mix, oats and cinnamon, and mix with a fork until crumbly.
  • Spread the apple butter over the cooled crust, spreading it to the edges. Scatter the crumb mixture over the apple butter. Return the pan to the oven and continue to bake until the crumbs are golden brown and firm, about 30 minutes more. Cool completely in the pan.
  • Using the foil overhang, lift the bars out of the pan and peel the foil away from the edges. Dust with confectioners' sugar, and cut into 16 bars.

3 cups whole-wheat flour
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon fine salt
3/4 teaspoon ground cinnamon
1 cup rolled oats
1 pound (4 sticks) unsalted butter, at room temperature
1 teaspoon vanilla
2 large eggs, beaten
2 tablespoons pure cane syrup (see Cook's Note)
1 cup sliced almonds
One 15.25-ounce jar spreadable cherry jelly, such as Polaner (see Cook's Note)
1 cup dried apricots, diced
5 ripe peaches, diced (about 4 cups)
1 tablespoon cornstarch

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper, leaving 2 inches of excess paper on both ends.
  • In a large mixing bowl, combine the whole-wheat flour, all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon and 1/2 cup of the rolled oats. Using a fork, cut the butter into the dry ingredients. Toss and crumble the mixture in between your fingers until bean-size crumbs are formed.
  • In a small mixing bowl, whisk the vanilla, eggs and 1 tablespoon of the cane syrup. Slowly drizzle the egg mixture into the crumble mixture, using the fork to stir continuously. Check that the crumble holds its shape by squeezing some together in the palm of your hands. Spread three-quarters of the crumble mixture (about 7 cups) onto the lined baking sheet. Press the crumble down to make an even crust. Bake until light golden and set on the surface, 10 to 12 minutes.
  • Meanwhile, add the almonds and remaining 1/2 cup rolled oats to the reserved crumble mixture. Set aside to use as the topping.
  • Remove the crumble crust from the oven and cool for 1 minute. Using a small offset spatula, gently spread the cherry jelly over the crust. Sprinkle the dried apricots evenly over the jelly.
  • In a medium mixing bowl, toss the peaches with the cornstarch and remaining 1 tablespoon cane syrup. Spoon the peaches in an even layer over the apricots and jelly. Sprinkle the remaining crumble mixture over the fruit.
  • Bake until golden brown and fragrant, about 40 minutes. Cool completely before lifting the crumble out of the pan using the excess parchment as handles. Slice into 36 bars (2 inches by 1 inch). Store in an airtight container.

1 cup white whole-wheat flour
1 cup rolled oats
2/3 cup firmly packed dark brown sugar
1/4 cup confectioners' sugar
1/4 teaspoon baking soda
Pinch fine sea salt
1/2 cup apple butter
4 ounces dried apples
4 ounces dried cherries, golden raisins or other dried fruit
1/4 teaspoon ground cinnamon

Steps:

  • For the base and streusel topping: Preheat the oven to 350 degrees F. Butter the bottom of an 8-inch-square baking pan.
  • Put the flour, oats, sugars, baking soda and salt in the bowl of a food processor fitted with a metal blade. Pulse 6 times, about 3 seconds per pulse, until some of the oatmeal is finely chopped and some still large or whole. Drizzle in the melted butter, toss with a fork and then pulse until the mixture comes together, about 8 times.
  • Press two-thirds of the oat mixture into the prepared pan. Squeeze spoonfuls of the remaining mixture in your palm to make chunks - some larger, some smaller - and place in a small bowl.
  • Cover with plastic wrap. Refrigerate both the base and the chunks for 30 minutes.
  • For the filling: Put the apple butter, dried fruit, cinnamon and 2 tablespoons water in the cleaned bowl of the food processor and pulse to a chunky paste. Spread the filling over the chilled base. Scatter the streusel topping over the filling, leaving some of the filling showing through. Bake until the streusel is toasty and crisp, about 30 minutes. Cool completely on a rack, about 2 hours, before slicing into 16 squares.

CRUST
2 1/2 c all-purpose flour
1 c butter or margarine, softened
3/4 c sugar
1/2 tsp salt
FILLING
3 1/2 c apple pie filling (from two 21oz cans)
CRUMBLE
1 c all-purpose flour
1 c quick cooking oats
3/4 c brown sugar, firmly packed
1 tsp ground cinnamon
1/4 tsp ground nutmeg
10 Tbsp butter, cut into small pieces

Steps:

  • 1. Heat oven to 375 degrees. Grease a 13x9-inch pan with shortening or cooking spray.
  • 2. In a large bowl, beat crust ingredients with electric mixer on low speed until the mixture looks like coarse crumbs.
  • 3. Press into prepared pan.
  • 4. Bake 15 minutes or until golden brown. Cool about 30 minutes. Reduce oven to 350 degrees.
  • 5. Spoon pie filling evenly over crust.
  • 6. In a medium bowl mix dry crumble ingredients. Cut in butter with a fork or fingers until crumbly.
  • 7. Sprinkle evenly over filling and press lightly.
  • 8. Bake 40 minutes or until crumble is a light brown.
  • 9. Cool completely, about two hours, then cut into bars.

SPICY APPLE CRUMBLE

140g porridge oats
25g ground almonds
1 tbsp sesame seed
1 tsp ground cinnamon
50g butter
1 heaped tsp honey
800g apples (I usually use eating apples), peeled, cored and roughly chopped
zest and juice 1 large orange
10 cardamom pods
1 tbsp brown sugar

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put the oats, almonds, sesame seeds and cinnamon into a large mixing bowl. In a small pan melt the butter with the honey then stir into the oats until it looks like rough breadcrumbs - you might need to use your hands.
  • Put the apples, orange zest and juice and cardamom in a pan and cook for 10 mins until softened. Pick out the cardamom pods. Spoon into a baking dish, sprinkle with the sugar and scatter with the crumble mixture. Bake for about 40 mins until golden and crunchy. Serve with vanilla yogurt, ice cream or custard.

Number Of Ingredients 10

3 cups all-purpose flour
1-1/2 cups old-fashioned oats
1-1/2 cups packed brown sugar
3/4 teaspoon baking soda
1-1/4 cups cold butter, divided
5 to 6 cups thinly sliced peeled apples
1 cup sugar
3 tablespoons cornstarch
1 cup cold water
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the flour, oats, brown sugar and baking soda; cut in 1 cup plus 2 tablespoons butter until mixture resembles coarse crumbs. Set aside 2 cups for topping. Press remaining crumbs into a greased 13x9-in. baking dish. Arrange apples over top; set aside. , In a saucepan, combine the sugar, cornstarch, water, vanilla and remaining butter. Bring to a boil. Cook and stir for 2 minutes or until thick and bubbly; spread over apples. Sprinkle with reserved crumbs. , Bake at 350° for 35-45 minutes or until top is lightly browned.
