SPICE RUBBED ROAST CHICKEN

Number Of Ingredients 12

1 1/2 teaspoons kosher salt
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cayenne
Zest of 1 lemon, the lemon quartered
One 3-pound chicken, giblets removed
6 cloves garlic, crushed
3 fresh bay leaves
2 medium onions, sliced into 3 rings each
2 tablespoons unsalted butter, melted and cooled

Steps:

  • Combine the salt, cumin, paprika, garlic powder, black pepper, cayenne and lemon zest in a bowl. Wash the chicken and pat very dry. Rub the spice mixture all over the chicken. Set the chicken on a plate and refrigerate, uncovered, for at least 1 hour and up to 8 hours (to dry out the skin and promote crisp skin).
  • When you are ready to cook, preheat the oven to 425 degrees F.
  • Stuff the chicken with the lemon quarters, garlic and bay leaves. Arrange the onion slices to make a bed for the chicken in a large cast-iron skillet. Set the chicken on the onions and tuck the wings tips under the chicken's body. Brush the chicken all over with the melted butter.
  • Roast the chicken, basting once halfway through with the pan juices, until the skin is crisp and golden and an instant-read thermometer inserted in the thigh (do not touch bone) reads 165 degrees F, about 45 minutes. Let rest at least 10 minutes before carving.

Coriander and Cumin Chicken Pita with Cucumber Salad and White Sauce image

As a native New Yorker, I grew up eating food from the halal carts that are on every corner in the city. This summery coriander and cumin chicken pita with cucumber salad is inspired by the flavors from these carts, using a few techniques that make it easy for an outdoor get-together. Everything can be prepared beforehand, with the marinated chicken, cucumber salad and white sauce coming together quickly the day of for a flavorful dish minus all the hassle.

3 tablespoons canola oil, plus more for drizzling
1 tablespoon ground cumin
1 tablespoon dried oregano
Kosher salt
1 1/2 teaspoons ground coriander
1 teaspoon cayenne pepper
1 teaspoon ground ginger
Zest of 1 lemon
6 boneless, skinless chicken thighs
6 pitas
1/2 cup finely chopped fresh dill
2 tablespoons white vinegar
1 large cucumber, sliced into 1/4-inch-thick half-moons
1 Roma tomato, diced
1/2 large red onion, thinly sliced
Kosher salt and freshly ground black pepper
1/2 cup mayonnaise
1/2 cup plain yogurt
2 tablespoons white vinegar
1/2 tablespoon garlic powder
1/2 tablespoon onion powder

Steps:

  • For the chicken pita: Combine the oil, cumin, oregano, coriander, cayenne, ginger, lemon zest and 1 tablespoon salt in a medium bowl. Add the chicken thighs and rub with the marinade. Cover and refrigerate for at least 6 hours and ideally 24 hours.
  • For the cucumber salad: Add the dill, white vinegar, cucumber, tomato and onion to a small bowl and stir until the cucumber and tomato are evenly coated in the vinegar and dill. Season with salt and black pepper. Set aside.
  • For the white sauce: Combine the mayonnaise, yogurt, white vinegar, garlic powder and onion powder to a small bowl and mix until combined.
  • Prepare a grill for medium heat. Remove the chicken from the marinade, letting excess drip off, and drizzle with canola oil before placing on the grill. Cook for 6 minutes on one side, then flip and cook until an instant-read thermometer inserted in the thickest part of the thigh reaches 165 degrees F, about 4 minutes. Slice the chicken about 1/2 inch thick.
  • Toast the pita on the grill for about 1 minute per side and assemble the pita with the chicken, cucumber salad and white sauce on top.

CHICKEN SHAWARMA HOTDISH

Our pastry chef Mary, who's from Minneapolis, inspired this recipe, and I make it a few times every winter for family meal at the restaurant. It's pretty killer and is made from ingredients we have on hand, like chicken, tahini and shawarma spice.

1 tablespoon spicy paprika
2 tablespoons ground cumin
2 tablespoons ground turmeric
2 1/2 pounds skinless, boneless chicken thighs or breasts
Kosher salt
6 tablespoons canola oil
3 pounds sweet onions, cut into thick slices
2 16-ounce cans chickpeas, drained and rinsed
1 18-ounce jar Middle Eastern-style pickled cucumbers in brine, sliced 1/4 inch thick
1 1/4 cups tahini (about 12 ounces)
Chopped fresh parsley, for topping
4 pitas
3 tablespoons extra-virgin olive oil
Arab Chopped Salad, for topping (recipe follows)
1 pint cherry tomatoes, halved
8 Persian cucumbers, chopped
1 bell pepper, cut into 1/2-inch cubes
1 small red onion, finely chopped
5 sprigs parsley, leaves finely chopped
1 sprig mint, leaves finely chopped
Grated zest and juice of 4 large lemons
1/2 cup white wine vinegar
1/2 cup za'atar
1 preserved lemon
1 cup extra-virgin olive oil
Kosher salt
2 cups crumbled Bulgarian feta cheese

Steps:

  • Preheat the oven to 375˚ F. Make the shawarma spice: Combine the paprika, cumin and turmeric in a small bowl.
  • Place the chicken in a mixing bowl and season with 2 tablespoons salt and 1 tablespoon of the shawarma spice, tossing to coat. Cook right away, or refrigerate overnight, if desired.
  • Heat a large cast-iron skillet over high heat. Add 2 tablespoons canola oil, then add the chicken and sear until caramelized and cooked through, about 4 minutes per side. Transfer the chicken to a baking sheet or plate to cool.
  • Add the remaining 4 tablespoons canola oil to the pan, then add the onions and 1 tablespoon salt. Cook, stirring often, until softened and starting to brown, about 7 minutes. Add 2 more tablespoons of the shawarma spice and cook 2 minutes. Remove from the heat and transfer the onions to a large bowl.
  • Very thinly slice the chicken, then add to the onions along with the chickpeas and sliced pickles. Add the tahini and stir to evenly coat, then stir in 2 cups water.
  • Transfer the chicken mixture to a 9-by-13-inch baking dish and sprinkle with parsley. Split the pitas horizontally to make 8 circles. Stack the pita rounds and slice into 8 wedges each. Put the pita wedges in a mixing bowl, drizzle with the olive oil and lightly toss to coat. Top the chicken mixture with an even layer of pita wedges. Bake until the pita is golden brown, about 20 minutes. Top with the salad.
  • Combine the tomatoes, cucumbers, bell pepper, red onion, parsley and mint in a large bowl. Top with the lemon zest.
  • Make the vinaigrette: In a separate mixing bowl, whisk the lemon juice, vinegar and 1/4 cup za'atar. Slice the preserved lemon into quarters; cut out and discard everything but the yellow peel. Finely chop the preserved lemon peel, then add to the bowl with the vinegar mixture. Whisk together, then slowly whisk in the olive oil. Season the salad with salt, then add some of the vinaigrette and toss. Top with the feta and remaining 1/4 cup za'atar.

2 tablespoons garlic powder
1 tablespoon salt
1 tablespoon onion powder
1 tablespoon dried thyme

4 skinless, boneless chicken breast halves

Steps:

  • In a medium bowl, mix together the paprika, garlic powder, salt, onion powder, thyme, cayenne pepper, and ground black pepper. Set aside about 3 tablespoons of this seasoning mixture for the chicken; store the remainder in an airtight container for later use (for seasoning fish, meats, or vegetables).
  • Preheat grill for medium-high heat. Rub some of the reserved 3 tablespoons of seasoning onto both sides of the chicken breasts.
  • Lightly oil the grill grate. Place chicken on the grill, and cook for 6 to 8 minutes on each side, until juices run clear.
