BUTTERMILK SPICE CRUMB CAKE
Buttermilk makes this cake moist and tender. The cake is generously topped with spicy crumbs. It's a sure hit!

Steps:
- 1. Preheat oven to 350. Butter a 9x13 inch pan and set aside. To make the crumbs combine all of the ingredients in a medium bowl with a spoon or your fingers until the mixture forms coarse crumbs; set aside.
- 2. To make the cake sift together the flour, cinnamon, ginger, nutmeg, cloves, baking powder, baking soda and salt onto a sheet of waxed paper; set aside.
- 3. In a large bowl, beat the butter with an electric mixer on high speed until light and fluffy. Gradually beat in the sugars, beating until very light. Change the mixer speed to medium and beat in the eggs, one at a time, beating well after each addition.
- 4. Change the mixer speed to low and alternately beat in the flour mixture and buttermilk, beginning and ending with the flour mixture and beating just until blended. Spread the batter in the prepared pan. Scatter the crumbs over the top, pressing them lightly into the batter.
- 5. Bake until the top of the cake is firm, the crumbs are crisp, and a skewer inserted into the cake comes out clean, 40-45 minutes. Cool in the pan on a wire rack. Dust with the confectioner's sugar before serving if desired.

- In a bowl, combine the flour, brown sugar, baking soda, spices and salt; cut in shortening until mixture resembles coarse crumbs. Remove and set aside 1 cup for topping. In another bowl, beat the eggs, buttermilk and molasses. Add to the remaining flour mixture; mix well. , Pour into a greased 13x9-in. baking pan. Sprinkle with reserved topping. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

MOLASSES SPICE CRUMB CAKE
I remember my mother making this when I was growing up. I don't know where she got the recipe .. maybe from a family friend. I added some spices to it to adjust to my taste. It's sort of like a PA Dutch Shoofly Pie without the crust! Please note: the batter is VERY thin ... and there is no "typo" .... this cake has no eggs in...

- 1. Heat the oven to 350 degrees F. Spray a 13X9-inch baking pan with baking spray. Set aside.
- 2. In a large bowl, combine the flour, sugar, cinnamon and cloves. Mix well. Cut in the margarine with a pastry blender until mixture resembles crumbs the size of a pea.
- 3. Measure out 1 1/4 cups of the crumbs and place in a bowl. Set aside.
- 4. In a large microwave safe bowl, bring 2 cups water to a boil. Remove from microwave and stir in the molasses. Add the baking soda and mix quickly. (This mixture will foam quite a bit at this stage.)
- 5. Quickly pour into crumbs and mix quickly qith a wire whisk. Mixture will be VERY thin.
- 6. Pour into prepared baking pan. Sprinkle reserved crumbs evenly over top.
- 7. Place in oven and bake for 45 minutes or until cake passes the toothpick test.
- 8. Please note: this recipe can be halved and baked in an 8X8X2 baking pan.

PUMPKIN SPICE CRUMB CAKE
Oh yum! This crumb cake is what happens when pumpkin pie and spice cake get married. The cinnamon in the crumb topping along with the spice cake crust makes the deliciously aromatic. A creamy pumpkin filling adds a smooth texture to the cake. It's easy to prepare and sure to be a crowd pleaser at any gathering.

- 1. Preheat oven to 350 degrees. Spray or grease one 9 x 13-inch pan.
- 2. Reserve 1 cup cake mix. In a large bowl, combine the remaining dry cake mix with 1 egg, 1/2 cup melted butter, vegetable oil, and water. Mix well, and then pat into prepared pan.
- 3. In a separate large bowl, mix together the pumpkin, 3 eggs, 1/2 cup white sugar, brown sugar, and cinnamon.
- 4. Pour over crust.
- 5. In a small bowl, combine reserved 1 cup cake mix, 1/2 cup sugar, and 4 tablespoons softened butter and cinnamon.
- 6. Crumble over pumpkin filling.
- 7. Bake in preheated oven for 40 to 45 minutes. When cool sprinkle with powdered sugar, if desired.
MAKEOVER SPICE CRUMB CAKE
Replacing the shortening with a small amount of oil and some applesauce, and substituted two egg whites for one of the eggs.
