Pumpkin-Spice Bars with Cream Cheese Frosting image

2 cups granulated sugar
1 cup vegetable oil
1 can (15 oz) pumpkin (not pumpkin pie mix)
2 cups Gold Medal™ all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup raisins, if desired
1 package (8 oz) cream cheese, softened
1/4 cup butter or margarine, softened
2 to 3 teaspoons milk
1 teaspoon vanilla
4 cups powdered sugar
1/2 cup chopped walnuts, if desired

Steps:

  • Heat oven to 350°F. Spray 15x10x1-inch pan with cooking spray.
  • In large bowl, beat eggs, granulated sugar, oil and pumpkin with wire whisk until smooth. Stir in flour, baking powder, baking soda, salt, cinnamon, ginger and cloves. Stir in raisins. Spread in pan.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean and bars spring back when touched lightly in center. Cool completely, about 2 hours.
  • In medium bowl, beat cream cheese, butter, milk and vanilla with electric mixer on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time, on low speed until smooth and spreadable. Spreading frosting over bars. Sprinkle with walnuts. For bars, cut into 7 rows by 7 rows. Store covered in refrigerator.

1/2 cup soft margarine or 1/2 cup butter
1/2 cup brown sugar
1/3 cup white sugar
1 egg
1/2 teaspoon vanilla

1/4 teaspoon allspice
1/4 teaspoon ginger
1 1/2 cups rolled oats

Steps:

  • Brush a 13 x 9 inch baking dish with oil, then line with parchment paper or foil, pressing paper down firmly so it stays. Leave a slight overhang of paper.
  • In mixing bowl cream the margarine or butter until light. Add the sugars and beat until smooth. Add the egg and vanilla and mix in well.
  • In a separate bowl mix the flour, baking powder, cinnamon, allspice and ginger. Mix into the batter, then stir in the oatmeal and raisins.
  • Press dough evenly into the lined baking pan. (This is the messy part.) The dough will be a bit sticky and there will seem to be almost not enough to fill the pan.
  • Bake in a pre-heated 350 degree oven for 15 to 18 minutes, until golden. Bake a bit less for chewier bars, a bit more for crispy bars.
  • Let cool for 3 or 4 minutes, then lift gently out of the pan. Cool a couple more minutes, cut into squares, then cool fully.

My Great Aunt gave this recipe to my grandma many many years ago. I made it all the time as a kid, and still remains one of my favorite bar recipes.

1 c raisins
2 c water
1/2 c shortening/butter/margarine
1 c sugar
2 c flour
1/4 tsp salt
1 beaten egg
1 tsp ground cloves
1 tsp allspice
1 tsp cinnamon
1 tsp baking soda

Steps:

  • 1. Boil 1 cup raisins and 2 cups water for 3 minutes. Drain juice and save.
  • 2. Cream 1/2 cup butter with 1 cup sugar. Add 2 cups flour and 1/4 tsp. salt and mix well.
  • 3. In a separate bowl, mix beaten egg, cloves, allspice, cinnamon, and baking soda. Add to the flour mixture along with 1 cup of the raisin juice and mix well. Stir in raisins after that is mixed.
  • 4. Spread dough to corners of greased 9x13 cake pan or a greased cookie sheet. Bake at 350 degrees for 25 minutes or until done.
  • 5. Frost while hot with a powdered sugar frosting or cream cheese frosting. Enjoy!

  • Bake 23 to 27 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In 2-quart saucepan, heat butter over medium heat, stirring constantly, until light golden brown. Remove from heat. Stir in powdered sugar, vanilla and enough milk until smooth and spreadable. Immediately spread frosting over cooled bars. Refrigerate about 15 minutes or until set. For bars, cut into 8 rows by 6 rows. If desired, garnish each bar with orange peel strip.

1 tablespoon water

Steps:

  • Stir together the spices, salt flour, and baking powder.
  • Stir in the almonds and lemon rind.
  • In a separate bowl beat the eggs and sugar until a ribbon is formed when the beater is removed.
  • Stir in the honey and milk.
  • Gradually stir in the flour mixture; beat until smooth.
  • Spread the batter in an 11 X 17-inch jelly roll pan that is well greased and floured.
  • Bake at 400 degrees F for 12 to 15 minutes, until the cake is done.

  • Spice bars keep 6 to 8 weeks in a sealed container if not glazed.

This recipe was given to me by my aunt. It is very easy to make and stays moist. Great to take to a potluck or picnic because it is so easy and travels well.

1 cup raisins
2 ½ cups water
½ cup butter
1 cup white sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon maple flavored extract
1 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jellyroll pan.
  • Place the raisins and water into a small saucepan. Bring to a boil, and cook for 3 minutes. Drain, and reserve the liquid. Set aside to cool slightly.
  • In a large bowl, cream together the butter and sugar until smooth. Mix in the egg and vanilla until well blended. Combine the flour, baking soda, salt and cinnamon; stir into the batter alternately with the raisin water. Set aside 1/4 cup of the raisin liquid to use for the frosting. Mix in raisins last. Spread the batter evenly into the prepared pan.
  • Bake for 20 minutes in the preheated oven, or until the top is lightly browned. While the cake is baking, stir together the reserved raisin water, maple extract and confectioners' sugar to make a thin glaze. Pour over the cake while still hot. Cool, then cut into squares to serve.

1 cup butter, softened
1 cup sugar
1 cup molasses
1 cup hot water
1 egg
3 cups all-purpose flour
2 teaspoons ground ginger
2 teaspoons ground allspice
1 teaspoon baking soda
1 teaspoon ground cloves
FROSTING:
1/2 cup shortening
1/2 cup butter, softened
2 to 3 teaspoons lemon juice
4 cups confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Beat in molasses and water until blended. Combine the flour, ginger, allspice, baking soda and cloves; gradually add to the creamed mixture. , Pour into a greased 15x10x1-in. baking pan. Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack. , Meanwhile, in a small bowl, beat shortening, butter and lemon juice until smooth. Beat in sugar until light and fluffy. Frost bars.

I've always loved these delicious, moist bars...this recipe comes from my great grandmother, as far as gram could remember. They are great with just a sprinkling of confectioners' sugar, but can ice if you prefer. I like to be able to taste the flavors, so I don't usually add a glaze. Enjoy!

1 c each - raisins & water
1/2 c oil
1 c sugar
1 slightly beaten egg
1 3/4 c flour
1/4 tsp salt
1 tsp baking soda
1 tsp each - ground cinnamon, ground nutmeg, ground allspice
1/2 tsp ground cloves
1/2 c chopped nuts

Steps:

  • 1. In a medium saucepan, bring raisins and water to a boil. Remove from heat. Stir in oil. Cool just to lukewarm. Preheat oven to 375 degree F. Grease a 9 x 13 baking dish or pan. Stir in sugar and egg.
  • 2. In a medium bowl, sift together flour, spices, soda and salt. Beat the raisin mixture into the flour mixture and stir in nuts.
  • 3. Pour and spread evenly into prepared pan. Bake for 20 minutes.
  • 4. When cool you can glaze or sprinkle with confectioner's sugar.

3/4 cup apple butter or 3/4 cup applesauce
2 egg whites or 1 egg

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
1/4 teaspoon ground nutmeg (optional)
3 cups oats (quick or old fashioned, uncooked)
1 cup raisins or 1 cup diced dried mixed fruit

Steps:

  • Heat oven to 350 degrees.
  • Beat together sugars and margarine until well blended.
  • Add apple butter, egg whites, milk and vanilla; beat well.
  • Add combined flour, baking soda, cinnamon, salt and nutmeg; mix well.
  • Stir in oats and raisins; mix well (Dough will be moist).

1 teaspoon vanilla
2 cups powdered sugar
1/2 cup chopped walnuts, if desired

Steps:

  • Heat oven to 350°F
  • Lightly grease bottom and sides of 15x10x1 inch pan (glass is best) with shortening.
  • In large bowl, beat eggs, granulated sugar, oil and pumpkin until smooth.
  • Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves.
  • Stir in chocolate chips, spread in pan.

1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon ground cinnamon
2 sticks (1 cup) unsalted butter, softened
1 cup sugar
1/2 cup unsulfured molasses
1 large egg
3 ounces crystallized ginger, chopped coarse (about 1/2 cup)
1 1/2 tablespoons freshly grated orange zest

Steps:

  • In a bowl whisk together flour, baking soda, salt, and ground spices. In another bowl with an electric mixer beat together butter and sugar until light and fluffy. Add molasses, egg, flour mixture, crystallized ginger, and zest and beat until a dough forms.
  • On a sheet of wax paper pat dough into an 8-by-5 inch rectangle, about 1 inch thick. Chill dough, wrapped in wax paper, 4 hours, or until firm.
  • (After the dough has been formed into a rectangle it can be kept in the refrigerator for one week or the freezer for one month. Thaw the frozen dough in the refrigerator until sliceable, about four hours. The baked cookies keep in airtight containers at room temperature for four days.)
  • Preheat oven to 350° F. and lightly butter 2 baking sheets.
  • Cut dough crosswise into slices about 1/6 inch thick and arrange about 2 inches apart on baking sheets. Bake bars in batches in middle of oven until deep golden brown, 8 to 10 minutes, and transfer to racks to cool. The baked cookies keep in airtight containers at room temperature for four days.
