BAKED ZITI WITH SPECIAL TOMATO SAUCE
This sauce has a secret ingredient, grape or currant jelly, that's right, jelly! I use the unsweetened kind, I find the fruit takes the acidity out of the tomatoes.

- QUICK TOMATO SAUCE:
- Make this first; heat oil in a medium saucepan over medium-high heat.
- Cook the sausages until begining to brown, about 3 minutes.
- Add the onion and garlic, stirring, until lightly browned, about 3 minutes more.
- Add the tomatoes, thyme and jelly or preserves and bring to a boil.
- Lower the heat and simmer, covered, for 10 minutes.
- Remove and sicard the sprig of thyme.
- Stir in the seasoning and season with pepper, to taste.
- Use now or store covered in the refrigerator for up to 3 dayse or freeze up to 2 months. The yield is 5 cups.
- ZITI:.
- Preheat oven to 400ºF.
- Cook the ziti according to pkg directions.
- Drain.
- Toss the cooked pasta with the sauce, cubed mozzarella, half of the Parmesan cheese, black pepper and red pepper flakes.
- Transfer the pasta to an oiled 9x13" baking dish.
- Cover the top of the pasta with the sliced mozzarella, and sprinkle with the remaining Parmesan.
- Bake until lightly browned and hot, about 30 minutes.
- Serve at once.
SPICED LAMB & FETA GOZLEME WITH SPECIAL TOMATO SAUCE
A savoury Turkish pastry that's actually made with bread. Stuff with lamb, feta, raisins and pine nuts and serve with pomegranate dip

Steps:
- For the dough, mix the yeast, sugar and 175ml lukewarm water in a small bowl. Stir to dissolve the yeast, then set aside for 10 mins, or until the liquid starts to froth.
- Mix the flour with ½ tsp salt in a big bowl. Make a well in the centre, pour in the yeasty mixture and olive oil, and mix to a dough. Knead for 10 mins, then put the dough in a lightly oiled bowl and cover with oiled cling film. Leave somewhere quite warm until doubled in size.
- Meanwhile, make the filling. Heat the oil in a frying pan, add the mince and fry, breaking up lumps as you go, until well browned. Stir in the garlic, spices and raisins, and fry for a few more mins, then turn off the heat and stir in the lemon zest, spring onions, pine nuts and seasoning. Set aside to cool a little.
- Divide the dough into 4. Working a piece at a time, roll out on a lightly floured surface to 25 x 30cm, without the dough splitting. With a long edge of the pastry laying in front of you, spoon ¼ of the mince on the bottom half - leaving a 2cm border all round. Crumble over ¼ of the feta. Fold the other half of the dough over the filling, folding in and pinching the edges to seal in the lamb. Repeat with the remaining ingredients.
- Heat a large frying pan over a high heat and brush the gozleme all over with oil.
- Cook in batches for 3-5 mins on each side, or until golden and heated through. Quickly mix the tomato ketchup, pomegranate and onion, and serve with the hot, crispy gozleme.

This sauce will go great with any kind of pasta. It's also great with mozzarella cheese sticks. It's absolutely delicious and it's much better than the store bought stuff.

SPECIAL TOMATO SAUCE
Steps:
- Cut the eggplant into slices half an inch or so thick. Place them around in a wide pan with high sides so they almost cover the pan. Rub thyme over them, and salt them. Pour a couple of tablespoons of olive oil over them. Cut four of the tomatoes in halves and place face down over eggplants. Place three of the garlic cloves in there with them, intact with skins. Put the whole dish in oven for about an hour, on 300 degrees. Afterwards the skins of the tomatoes will probably have popped up, so remove them. Meanwhile cut up the other four tomatoes, and crush rest of garlic and mince, and warm a few tablespoons of olive oil on stove. Put in garlic and leave for a few minutes until fragrant, then add tomatoes. Cook for a bit then add the roasted tomatoes and eggplant, plus garlic (remove skins first). Cut up sausage into small bits and add, along with harissa. Put on low heat for around forty minutes or more, stirring regularly. Add basil, after shredding the basil with your hands plus cheese. Cook for five more minutes then turn off heat. Pour in three splashes of balsamic and mix well. Serve with pasta.
