1 cup brandy
1/2 cup orange liqueur
1/4 cup sugar, super fine
1 orange, thinly sliced
1 pint raspberries
1 lime, thinly sliced
1 lemon, thinly sliced
2 bottles sparkling wine or cava, chilled

Steps:

  • In a large pitcher, combine the brandy, and orange liqueur. Pour in the sugar, stir or shake the pitcher thoroughly to mix until the sugar dissolves. Add all the fruit at once. Add the cava and serve as is or on ice.

2 cups blueberries
1 cup orange liqueur
2 tablespoons superfine sugar
3 oranges, sliced thin
One 750-milliliter bottle prosecco

Steps:

  • In a large pitcher or drink server, combine the strawberries, blueberries, orange liqueur, sugar and oranges. Stir to combine. Top with the prosecco and ice. Serve.

2 (1/4 ounce) envelopes unflavored gelatin
1 1/2 cups riesling wine or 1 1/2 cups other sweet white wine, divided
1 1/2 cups white grape juice
1/4 cup sugar
1 1/2 cups orange sections
1 cup green seedless grape, halved
3/4 cup fresh raspberry
cooking spray

Steps:

  • Sprinkle gelatin over 1/2 cup wine, and let stand 5 minutes.
  • Combine 1 cup wine, juice, and sugar in a medium saucepan; bring to a boil over medium-high heat.
  • Remove from heat; add gelatin mixture, stirring until the gelatin dissolves.
  • Place pan in a large ice-filled bowl; let stand 20 minutes or until thick but not set, stirring occasionally.
  • Whisk the gelatin mixture to form small bubbles; fold in orange sections, grapes, and raspberries.
  • Spoon gelatin mixture into a 5-cup mold coated with cooking spray.
  • Cover and chill at least 4 hours.
  • Place a plate upside down on top of mold; invert mold onto plate.

This recipe is from Cooking Light. Delicious and fancy enough for the holidays. This recipe uses Riesling, but for a nonalcoholic version, substitute sparkling white grape juice. Make up to a day ahead and refrigerate. Dip the covered mold into a bowl of warm water for 5 seconds to make the salad easier to unmold. I like to use canned Mandarin oranges.

1 6-ounce package raspberry-flavored Jell-O
1 3/4 cups fruity red wine
1 cup chilled orange juice
1/4 cup fresh lemon juice
3 large oranges
1 cup green seedless grapes, halved lengthwise (about 7 ounces)
1 cup sliced hulled strawberries
Additional grapes and strawberries
Orange slices

Steps:

  • Lightly oil 6-cup ring mold. Place raspberry Jell-O in large bowl. Bring wine to simmer in small saucepan. Add wine to Jell-O and stir until Jell-O is dissolved, about 2 minutes. Stir in orange juice and lemon juice. Place bowl in larger bowl filled with ice and water. Cool until Jell-O begins to set slightly, stirring occasionally, about 20 minutes.
  • Meanwhile, grate 1 tablespoon peel from oranges. Cut remaining peel and white pith from oranges; discard. Cut between membranes; release segments.
  • Add orange segments and peel, 1 cup grapes and 1 cup strawberries to Jell-O; stir to blend well. Pour mixture into mold. Chill at least 6 hours or overnight.
  • Run knife around mold sides to loosen Jell-O. Place mold in bowl filled with enough hot water to come halfway up sides of mold for 30 seconds. Place platter atop mold; invert Jell-O onto platter. Garnish with additional fruit.

It's the Martinelli's Sparkling Apple Cider that makes this recipe. It provides sweetness as well as bubbles. A cheap wine works as well as a pricey one. This recipe is for about a gallon's worth, but buy enough ingredients so you can make more. Your guests will definitely ask for it.

3 liters white wine
750 ml martinelli's sparkling apple cider
1 liter Rose's lime juice
1 quart orange juice
3 oranges
3 apples
3 pears
3 limes

Steps:

  • In a gallon pitcher add enough cut up fruit to fill about 1/2 the pitcher. Cover with wine. Add about 1 cup of apple juice, 1/4 cup lime juice, and a splash of orange juice. Mix and enjoy!
