On a hot afternoon, what could be better than a cold margarita float? The addition of creamy ice cream really takes this treat to the next level. -Teri Rasey, Cadillac, Michigan

Number Of Ingredients 7

Lime wedges
Sugar
2 cups vanilla ice cream
2 cups lime sherbet
6 cups lemon-lime soda, chilled
3/4 cup lime juice
9 ounces silver tequila

Steps:

  • Using lime wedges, moisten the rims of 6 margarita or cocktail glasses. Set aside lime wedges for garnish. Sprinkle sugar on a plate; hold each glass upside down and dip rim into sugar. Set aside. Discard remaining sugar on plate., Scoop ice cream and sherbet into prepared glasses. Combine soda, lime juice and tequila; pour into glasses. Garnish with reserved lime wedges. Serve immediately.

3 3/4 cups water
1 cup plus 2 tablespoons sugar
1 tablespoon finely grated lime zest, plus 1/4 cup plus 2 tablespoons fresh lime juice (from about 3 limes)
3 tablespoons tequila
2 tablespoons fresh orange juice
1/4 teaspoon coarse salt
Lime wedges, for serving (optional)

Steps:

  • In a medium saucepan, bring the water and sugar to a boil over medium-high heat, stirring, until sugar has dissolved, about 1 minute. Remove from heat. Stir in lime zest and juice, tequila, orange juice, and salt.
  • Pour mixture into a 2-quart shallow nonreactive baking dish; let cool, then cover tightly with plastic wrap. Freeze until set, about 6 hours (or up to 1 day). Using the tines of a fork, scrape mixture until flakes form. Granita is best served immediately, but can be covered and frozen up to several hours. Serve with lime wedges, if desired.

1/2 cup lemon sorbet
1/2 cup chilled dry sparkling wine, such as Prosecco

Steps:

  • Place two small glass bowls in the freezer until chilled, at least 5 minutes. Meanwhile, let sorbets sit at room temperature until slightly softened. Divide raspberry and lemon sorbet evenly between bowls. Pour sparkling wine over sorbets, and garnish with mint; serve immediately.
