I've used this recipe for many years varying the fruits that I include. I often add apples, bananas, and/or blueberries. Though there are specific measurements in the recipe, there is no need to carefully measure each ingredient - just approximate the quantities of your favorite fruits to have a beautiful and delicious salad. I have frequently served this Christmas morning.

2 cups green grapes
2 cups sliced strawberries
2 cups sliced peaches
2 cups orange segments
1 cup peeled sliced kiwi
½ cup orange juice
½ cup orange-flavored liqueur (such as Cointreau®)
2 tablespoons white sugar

Steps:

  • Mix grapes, strawberries, peaches, orange segments, and kiwi in a large bowl.
  • Whisk orange juice, orange-flavored liqueur, and sugar together in a bowl until sugar dissolves; gently stir into fruit until evenly coated. Cover bowl with plastic wrap and refrigerate up to 8 hours.

This easy Fruit Salad is dressed with a Mimosa dressing that will knock your socks off! So easy, and fantastic for any occasion.

1 mango (peeled, seeded and diced)
1/2 pineapple (peeled, cored and diced)
11/2 cups sliced strawberries
1 cup blueberries
1 cup blackberries
1 cup rasperries
3 kiwi (peeled and sliced)
3 tablespoons fresh chopped mint
1 cup orange juice
3/4 cup champagne or sparkling wine (or sparkling grape juice if you are looking to omit the alcohol)
2 tablespoons honey
1 tablespoon cointreau (or other orange liquor, optional)

Steps:

  • Place the mango, pineapple, strawberries, blueberries, blackberries, raspberries, kiwi and mint in a large bowl.
  • Carefully toss to combine being careful not to break up the berries. Set aside.
  • In a medium bowl, whisk together the orange juice, champagne, honey and cointreau (if using) to combine.
  • Right before serving, pour the dressing over the salad and toss gently to coat.

2 envelopes unflavored gelatin
1-1/2 cups white grape juice, divided
1-1/2 cups sweet white wine or additional white grape juice
1/4 cup sugar
1 can (15 ounces) mandarin oranges, drained
1 cup green grapes, halved
3/4 cup fresh raspberries

Steps:

  • In a small saucepan, sprinkle gelatin over 1/2 cup juice; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Stir in the wine, sugar and remaining juice. Cook and stir until sugar is dissolved., Pour into a 1-1/2-qt. serving bowl. Refrigerate until set but not firm, about 1 hour. Fold in the oranges, grapes and raspberries. Refrigerate until firm.

I make this Jello often in the spring/summer. It looks really nice in a mold and sets up great. The fresh berries in the center of the mold makes a beautiful presentation.

2 cups cranberry juice cocktail (or cran-raspberry is good)
1 (6 ounce) package red Jell-O (black cherry or raspberry is what I love)
1 1/2 cups club soda
1/4 cup creme de cassis (I've never used but someday....) (optional)
1 teaspoon fresh lemon juice
3 cups raspberries or 3 cups sliced strawberries

Steps:

  • Stir boiling cranberry juice (heat in pan) into gelatin in large bowl at least 2 minutes (until well dissolved).
  • Stir in club soda, liqueur, and lemon juice.
  • Refrigerate about 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites-I set my bowl inside a larger bowl of ice water and it takes about 20 minutes).
  • Stir in 2 cups of the berries.
  • Spoon into 5-cup mold.
  • Refrigerate about 4 hours or until firm.
  • Unmold and top with remaining 1 cup of berries in center.

  • In a small saucepan over medium heat, combine sugar and marmalade; cook and stir until sugar is dissolved. Remove from heat. Stir in grape juice and soda. Pour over orange sections; toss to coat. Spiked Summer Fruit Salad image

Sneak a bit of coconut-flavored rum into this honey-ginger fruit salad.

2 navel oranges
3 cups mixed blueberries and blackberries
3 ripe peaches or nectarines, pitted and chopped
1/4 cup honey
One 1-inch piece ginger, thinly sliced
2 tablespoons coconut-flavored rum

Steps:

  • Trim off all the peel and white pith from the oranges. Halve lengthwise and then slice crosswise into half-moons. Transfer to a large bowl and add the mixed berries and peaches.
  • Combine the honey, 1/4 cup water and ginger slices in a small saucepan and bring to a simmer over medium heat, about 3 minutes. Remove from the heat, stir in the rum and strain over the fruit and toss well. Set aside to cool and allow the flavors to blend, at least 30 minutes. Serve at room temperature or refrigerate until cold.
