6 pounds pork baby back ribs, cut into serving-size pieces
1-1/3 cups packed brown sugar
1 cup reduced-sodium soy sauce
1/4 cup rice vinegar
1/4 cup sesame oil
1/4 cup minced fresh gingerroot
6 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1/4 cup cornstarch
1/4 cup cold water
Thinly sliced green onions and sesame seeds, optional

Steps:

  • Place ribs in a 6-qt. slow cooker. In a small bowl, combine the brown sugar, soy sauce, vinegar, oil, ginger, garlic and pepper flakes; pour over ribs. Cover and cook on low for 6-7 hours or until meat is tender., Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring to a boil., Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with ribs. Garnish with onions and sesame seeds if desired.

3/4 cup packed brown sugar
1/2 cup reduced-sodium soy sauce
1/2 cup ketchup
1/4 cup honey
2 tablespoons white wine vinegar
3 garlic cloves, minced
1 teaspoon salt
1 teaspoon ground ginger
1/4 to 1/2 teaspoon crushed red pepper flakes
5 pounds bone-in country-style pork ribs
1 medium onion, sliced
2 tablespoons sesame seeds, toasted
2 tablespoons chopped green onions

Steps:

1 kg pork spareribs, cut into 3 cm (not racks, 1 1/4 inch)
1 tablespoon sesame seeds
2 tablespoons oil
2 scallions, finely chopped
4 cm piece fresh ginger, grated
3 garlic cloves, finey chopped
2 tablespoons caster sugar (superfine)
2 tablespoons rice wine
1 tablespoon soy sauce
2 teaspoons sesame oil
1 1/4 cups hot water
2 teaspoons cornflour (cornstarch)

Steps:

  • Trim pork of excess fat.
  • dry fry sesame seeds til just golden.
  • remove and cool.
  • Grind in a food processor or morat and pestle.
  • Heat oil in pan. Brown ribs over high heat, turning often until dark golden.
  • Drain excess oil from pan. Add half sesame seeds with the scallion, ginger, garlic, sugar, rice wine, sake, sesame oil and water.
  • Cover and simmer for 45 - 50 mins, stirring occasionly.
  • Combine cornflour with a little cold water.
  • Add to pan, stirring constantly until mixture boils and thickens.
  • Sprinkle with remaining crushed sesame seeds.

Five Spice Baked Ribs with a Sticky Honey Sesame Sauce image

1 star anise
1 teaspoon fennel seeds
A few Szechuan peppercorns
1 tablespoon five-spice powder
Kosher salt
2 1/2 pounds pork spare ribs
3/4 cup soy sauce
2 tablespoons olive oil
2 tablespoons honey
1 to 2 small red chilies, seeded and finely sliced
1 to 2 cloves garlic, peeled and finely chopped
Zest of 1 lime
3 tablespoons sesame seeds, optional
1/2 bunch scallions, chopped
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet or large roasting pan with aluminum foil.
  • Using a mortar and pestle or an electric spice mill, crush the star anise, fennel seeds and Szechuan peppercorns. Stir in the five-spice powder and 2 teaspoons salt. Put the ribs into a bowl and sprinkle over the spice mixture. I like to get my hands in and rub everything in. Place the ribs in one layer on the baking sheet or roasting pan. Put them in the oven and cook for 45 minutes.
  • Meanwhile, make the glaze. In a small pot stir together the soy sauce, olive oil, honey, chilies, garlic, lime zest and sesame seeds, if using.
  • When the ribs have cooked for 45 minutes, remove them from the oven and brush them with half the glaze. Sprinkle over the scallions and season well with salt and pepper. Return the ribs to the oven for 15 minutes. Bring the remaining glaze to a boil and remove it from the heat.
  • To serve, cut the ribs and pile them onto a big platter. Serve with the remaining glaze as a dipping sauce. I like to serve this with a large green salad and put everything in the middle of the table so everyone can help themselves.

1 can (12 ounces) frozen lemonade concentrate, thawed
1-1/2 cups water
3 tablespoons chili sauce
1 tablespoon brown sugar
1-1/2 teaspoons cider vinegar
2 teaspoons cornstarch
Sandwich buns, split

Steps:

  • Place ribs in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer for 1 hour. , Drain; return ribs to pan. In a small bowl, combine the lemonade concentrate, water, chili sauce, brown sugar and vinegar. Pour two-thirds of the sauce over ribs; set remaining sauce aside. Cover and cook over medium heat for 50-55 minutes or until meat is tender and sauce is thickened. , When cool enough to handle, shred meat with two forks. 1/4 cup sesame seeds
2 tablespoons chopped garlic
1/3 cup sugar
5 nickel-size pieces of ginger
1/2 cup soy sauce
2 tablespoons sesame oil
Salt and pepper
1/2 cup chopped scallions

Steps:

  • Place a large skillet that can hold ribs in one layer over high heat. Add ribs and 1 cup water. Boil, turning ribs occasionally, until liquid has evaporated. Reduce heat to medium, and brown ribs in their own fat, turning occasionally, for about 5 minutes. Meanwhile, place sesame seeds in a small skillet over medium heat. Shake pan occasionally until seeds brown slightly and begin to pop.
  • Add garlic and half the sesame seeds to skillet with ribs, and stir. Cook 30 seconds. Add sugar, ginger, soy sauce, 1 tablespoon sesame oil and 1/2 cup water. Turn heat to medium-high, and cook, turning ribs occasionally, until liquid is thick and dark. If ribs are tender at this point, they are ready. If not, add another 1/2 cup water and continue to cook until they are.
  • Add the salt and pepper to taste and the remaining sesame seeds and sesame oil. Stir the dish once, sprinkle with scallions, and serve.

  • Add the garlic and half the sesame seeds and stir; cook for 30 seconds. Add the sugar, ginger, soy sauce, half the sesame oil, and another 1/4 cup of water; turn the heat to medium-high, and cook, turning occasionally, until the liquid is thick and dark. If the ribs are tender at this point, they're ready. If not, add another 1/4 cup of water and repeat the process.
  • Add salt and pepper to taste and the remaining sesame seeds and sesame oil. Stir once, sprinkle with the scallion, and serve.

VIETNAMESE SESAME SPARERIBS

God help me! I can eat these forever. The flavors are so intense and just a blast to savor!! We eat this with jasmine rice, and steamed broccoli seasoned with black pepper. The key to this recipe is the sweet and sour sauce, it is completely different than the traditional Chinese kind, not too sweet, definitely not syrupy and is pungent, sour, sweet and just a lot of fun. When this sauce gets mixed in with the rice...oh my!

1 1/2 lbs pork spareribs, the little ones
2 scallions, finely sliced
2 tablespoons sesame seeds (optional because I have been out of these and they are scrumptious without them too)
1/2 teaspoon salt
3 tablespoons fish sauce
2 tablespoons honey
1 teaspoon flour
1 teaspoon sugar
2 garlic cloves, finely minced
3 tablespoons sugar
2 tablespoons lime juice or 2 tablespoons lemon juice
1/2 cup warm water
3 tablespoons fish sauce
1/2 teaspoon ground red chili pepper

Steps:

  • In large bowl, mix scallions, sesame seeds, salt, fish sauce, honey, flour and sugar. Marinate in mixture overnight -- or for 24 hours, it makes a difference! You can marinate for 15 minutes, but I noticed the flavors are amazing when marinated for longer.
  • Preheat oven at 350°F
  • Bake spareribs for 20 minutes, turning occasionally. Turn oven to broil and broil ribs for 5 minutes, turning frequently. Serve with sweet and sour sauce. The fish sauce will smell kinda strong and weird while cooking -- don't worry it doesn't taste that way.
  • Sweet and sour sauce:.
  • In bowl, mix garlic, sugar, citrus juice, water and fish sauce until the sugar is dissolved. Stir in chili pepper.
