SPANISH RICE CASSEROLE
This is easy and very tasty, it's good served hot or at room temperature for a side dish, or as a main meal. All ingredients can be adjusted to taste. Add in finely chopped jalapeno pepper or crushed chili peppper for some heat.

Steps:
- Set oven to 375 degrees.
- Grease a 2-quart casserole dish.
- In a large skillet, brown the ground beef over medium-high heat; drain the fat, and transfer beef to a large pot over medium low heat.
- Stir in onion, garlic green pepper, tomatoes, water, rice, chili sauce, salt, pepper, brown sugar, cumin and Worcestershire sauce.
- Let simmer for about 30 minutes, stirring occasionally, then transfer to a 2-quart casserole dish; press mixture down firmly.
- Sprinkle with grated cheddar cheese.
- Bake for 10-15 minutes, or until cheese is melted and bubbly.
- Garnish with fresh cilantro if desired.
QUICK HAMBURGER, RICE, TOMATO & CABBAGE BAKE
Assemble the night before, refrigerate and bake.It is the same as cabbage rolls but not as much work.Correction 1 more cup of water added. Make sure you use DICED TOMATOES WITH ALL OF THE JUICE, A 29 OZ. CAN.

- In deep metal rectangular pan or 9x13 pan,cover the inside of pan with tinfoil, bottom and sides so there is enough lap over the sides to fold together in the middle to form a cover.
- Remove core and chop cabbage.
- Place in pan.
- Sprinkle with 1 tsp salt.
- In large mixing bowl, mix meat, 1 tsp salt, pepper, diced onions, 2 eggs, cilantro, rice, and brown sugar. Mix well.
- Distribute evenly over the chopped cabbage.
- Squeeze the lemon over the meat mixture.
- In bowl mix soup water, tomatoes with juice and allspice.
- Pour over the top. Take a fork and gently fork down in the layer of ingredients to make sure sauce goes down into the bottom to the cabbage. Do not rip tinfoil.You can refrigerate overnight but use more cooking time.
- Remember to close the tin foil and make a fold in the top. This creates a steam pocket for the rice and vegetables to cook.
- Bake 350°F 50 minutes or extra 10 minutes if refrigerated.

- Brown the ground chuck with the minced garlic and drain.
- Crumble the ground chuck in the bottom of a 1 1/2 quart casserole dish.
- Sprinkle Minute Rice over the ground chuck.
- Sprinkle Vegetable Soup Mix evenly on top.
- Mix tomato soup and water, and then pour evenly over the top.
- Sprinkle shredded cheese evenly over the top.
- Bake, covered, in a pre-heated 350 degree oven for 30 minutes. Then uncover and bake for an additional 15 minutes.

Growing up, my mom made a version of Spanish rice with ground beef that was hearty enough that it stood on its own as a main dish. During a visit a few years ago, after missing her cooking desperately, I watched her prepare it and jotted down the recipe. (Don't worry, I checked with my mom and she's totally on board with sharing with you!) Serve on a bed of fresh spinach with a side of refried beans. Garnish with fresh diced tomatoes, green onions, cheese, avocado slices, and crushed chile flakes.

- Preheat oven to 350 degrees F (175 degrees C).
- Spread cabbage in the bottom of a 9x13-inch baking dish; sprinkle rice on top.
- Heat a large skillet over medium heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add onion, oregano, basil, garlic powder, and thyme; cook and stir until onion is transparent, about 5 minutes. Season with sugar, salt, and pepper.

SPANISH CABBAGE CASSEROLE
This is my version of a deconstructed cabbage roll made with the the leftovers from my Easy Spanish Rice recipe. Great served with Miss Betty's Mashed Potatoes.

- 1. Preheat oven to 350°. Blanch cabbage in boiling water for 3-5 minutes. Drain.
- 2. Mix together tomato soup, tomato sauce and ketchup.
- 3. In a 3 quart casserole, spread about 1/2 cup of sauce.
- 4. On top of the sauce place about half of the cabbage. Spread about another 1/2 cup of sauce over the cabbage.
- 5. The spread the Spanish rice over that and add a little more sauce.
- 6. Top with the rest of the cabbage and enough sauce to cover, you will have about a cup or so of sauce left. (Warm up for extra sauce.)
- 7. Bake at 350° for 30-45 minutes or until bubbly around the edges.

Last year I posted this recipe from another Weight Watchers member at a meeting. With the helpful comments from other 'Zaar' members, I made some adjustments. If you like cabbage rolls but not the work of making them, this is a perfect recipe for you. There is a similar recipe posted on the 'Zaar', but this one has a few differences and is worth the try.

- Place 3 cups or 1/2 bag of cabbage in bottom of crock pot.
- Brown beef with onions, garlic salt, and Italian mixed spices in non-stick skillet and drain.
- Put beef on top of cabbage, and then do the same with the rice.
- Top with remaining cabbage, and sprinkle with salt and pepper.
- Combine spaghetti sauce, water, tomatoes, basil, and seasoned salt in a bowl.
- Pour sauce mixture over top of cabbage.
- Cover and cook on HIGH for 4 to 5 hours.
- Makes 6 servings with each serving size being 1 1/4 heaping cups.
- For all Weight Watchers folks, this is 4 points per serving and is very filling.
