Red Lettuce with Balsamic Onions image

This salad is inspired by one that's made at Nick & Toni's, one of my favorite restaurants in East Hampton. They add blue cheese, which is incredibly delicious too.

Number Of Ingredients 9

3 small red onions
1/4 cup plus 2 tablespoons good balsamic vinegar
1 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6 tablespoons minced shallots (2 large)
2 teaspoons Dijon mustard
1/4 cup good red wine vinegar
2 heads red-leaf, washed, spun dry, and torn into pieces.

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the onions in 1/2 and slice 1/4-inch thick, place on a baking sheet and toss with:
  • 1/4 cup balsamic vinegar, 1/4 cup olive oil, 1 teaspoon salt and 1/2 teaspoon pepper.
  • Bake for 12 to 15 minutes, until the onions are tender.
  • Remove from oven and toss with 2 more tablespoons balsamic vinegar and cool to room temperature.
  • Whisk together the shallots, mustard, red wine vinegar, 1/2 teaspoon salt and 1/2 teaspoon pepper in a small bowl. While whisking, add 3/4 cup olive oil until emulsified.
  • To assemble, toss enough lettuce for 6 people with dressing, to taste. Place the lettuce on 6 plates and arrange the onions on top. Sprinkle with salt and pepper and serve.

My daughter loves everything sour (vinegar and lemon in particular) so I made her this tart salad dressing with 2 types of vinegar and lemon juice. It goes great with red leaf lettuce or other mild salads. She will eat the whole bowl by herself.

1 head red leaf lettuce
1 red bell pepper, chopped
1 stalk green onion, thinly sliced
3 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
½ teaspoon salt, or to taste
¼ teaspoon Dijon mustard, or more to taste
freshly ground black pepper to taste

Steps:

  • Wash red leaf lettuce, separate the leaves, and spin dry in a salad spinner. Tear leaves into bite-sized pieces and transfer to a salad bowl with bell pepper and scallion.
  • Combine olive oil, red wine vinegar, balsamic vinegar, lemon juice, salt, mustard, and pepper in a resealable jar. Close and shake until well combined.
  • Drizzle as much dressing as desired over the salad and toss to combine. Store leftover dressing in the refrigerator.

This sweet, tangy salad has lots of plate appeal with its colorful ingredients. Make the dressing in advance if you choose.

¼ cup balsamic vinegar
1 ½ tablespoons Dijon mustard
1 tablespoon honey
1 small shallot, peeled and chopped
2 small cloves garlic, peeled
½ teaspoon salt
¼ teaspoon ground black pepper
½ cup olive oil
1 head red lettuce leaves, rinsed, dried, and torn
½ small red onion, peeled, cut into 1/2-inch-wide slivers
¼ cup sliced almonds, lightly toasted
1 pint fresh strawberries, rinsed and sliced
½ cup crumbled feta cheese

Steps:

  • To make the dressing, place the balsamic vinegar, Dijon mustard, honey, shallot, garlic, salt, and pepper in the bowl of a mini food processor. Pulse until blended. Slowly pour in the olive oil, and pulse again until thoroughly blended. Set aside or refrigerate until needed.
  • Divide lettuce between 6 serving plates, and top with red onion, almonds, strawberries, and feta cheese. Serve dressing on the side.

About 1 1/2 heads red leaf lettuce, torn into bite-size pieces (8 cups tightly packed)
2 large oranges, peeled, sliced
1/3 cup assorted marinated olives, pitted
1/2 small red onion, thinly sliced into rings (about 1/2 cup)
1/2 cup balsamic vinaigrette dressing

Steps:

  • Divide lettuce among 8 salad plates. Top with orange slices, olives and onion rings.

  • Whisk together the shallots, mustard, red wine vinegar, 1/2 teaspoon salt and 1/2 teaspoon pepper in a small bowl. Slowly add 3/4 cup olive oil, whisking while pouring, until emulsified.
