OK. I like Spam. I served it to my family when they were growing up. It was cheap, they ate it, and it filled their bellies! I used to make this for camping trips and we would put in the pie irons for hot sandwiches for lunch or supper. I put it in hamburger buns, wrapped in foil, put it in the fridge, and heated in the oven...

Number Of Ingredients 9

1 can(s) spam, cube and then break apart with a potato masher or your hands
3 large eggs, hard boiled and chopped
1 stalk(s) celery, finely diced
1 Tbsp finely minced onion
1 c grated cheese of your choice
1 Tbsp ketchup
1 tsp prepared mustard
3 Tbsp sweet or dill relish (your preference)
mayonnaise just to moisten

Steps:

  • 1. Mix all ingredients adding enough mayonnaise to moisten.
  • 2. Spread on toasted rye or whole grain toast and broil until the sanwiches are slightly brown and bubbly.
  • 3. Spread on hamburger buns and wrap in foil. Refrigerate until needed. Heat in a 375 degree oven for about 20 minutes.
  • 4. Preheat a pie iron over the fire. Butter the outside of the bread and place buttered side down on the iron. Place desired amount of filling on one side of bread. Close iron and bake over a fire or BBQ until toasted and hot.
  • 5. Spread filling on bread and add lettuce or tomato slices as desired.

Spam lovers of the world, unite! Celebrate your fondness for the estimable potted meat by whipping up a couple of these delicious and easy to prepare sandwiches. Serve with potato salad and perhaps some fatfree tater chips.

2 large hamburger buns, i use orowheat giant onion buns
4 slices turkey spam, about 1/2 inch thick
4 slices sharp cheddar cheese, i use 2% milk slices
dill pickle slices
mustard
2 slices onions

Steps:

  • On a griddle or frying pan, fry the cut sides of the buns until they are nice and crispy brown.
  • Spread mustard on buns, put onion on the bottom bun.
  • Fry the spam until done on one side.
  • Then flip them over and arrange them in two sets of two slices with one side in each pair touching each other.
  • Put two slices of cheese on each pair and leave it until the cheese melts.
  • Put each pair of spam slices on one of the bottom buns, scatter pickle slices over the top of the spam, put the top slice of bun on the sandwich and plate it up.

A little taste of the Islands. I came up with this recipe while DH and I were discussing our favorite McDonalds breakfast, Spam, Eggs and Rice.(Available at Hawaian locations) Why not a breakfast sandwich with Spam and Pineapple? They're great anytime. Spice them up with extra hot sauce or add a chopped, seeded Jalapeno pepper to the pineapple relish.If you can get a Sweet Maui Onion that's mo bettah !!!

1 (12 ounce) can Spam (classic, lower sodium, or lite)
1 (8 ounce) can crushed pineapple, drained well
3 tablespoons chili sauce
2 tablespoons chopped sweet onions
1/8 teaspoon crushed red pepper flakes
1 dash soy sauce or 1 dash teriyaki sauce
1 dash Tabasco sauce
5 slices American cheese
5 English muffins
mayonnaise (optional)

Steps:

  • Drain Pineapple really well and mix in Chili Sauce, onion, red pepper flakes, soy sauce and Tobasco.Set aside.
  • Slice Spam into 10 slices.
  • Split and toast English Muffins.You can keep these warm in low oven.
  • In skillet fry Spam slices until lightly browned on both sides.
  • Place 2 slices of Spam on English muffin half, add cheese slice and pineapple relish.Top with muffin half.
  • If you'd like you may spread muffin halves with mayonnaise before assembling sandwich.
