SPAM Pancake Fritters ! (and pancake donut balls) image

If you like SPAM.... and Pancakes... You will love this kid friendly finger food! My grandchildren love to watch me make these for them... almost as much as they love eating them! This is a fun and very easy recipe... Remember to Play With Your Food! xo

Number Of Ingredients 13

PANCAKE OR FRITTER BATTER
1 1/2 c all purpose flour
1 Tbsp baking powder
1/2 tsp salt
1/3 c sugar
2 large eggs (beaten)
3/4 c powdered milk
1/4 c vegetable oil
1 c water (may need a bit less or more to get desired thickness)
SPAM
1 can(s) spam (cut into stips like french fries)
OIL FOR FRYING
5 inches deep vegetable oil at 375 degrees

Steps:

  • 1. Beat batter ingredients together in bowl. Set aside until needed.
  • 2. Open can of SPAM. Cut into three equal slices. Cut each of the slices into strips (about the size of french fries).
  • 3. Heat the oil to 375 degrees.
  • 4. Dip the SPAM strips into the batter (one at a time). Place each battered strip into the hot oil. When golden, turn over. I only do 4 - 5 strips at a time as you don't want to crowd them and they cook quickly.
  • 5. Remove fritters to a paper towel lined plate to drain off oil.
  • 6. *** Any remaining batter can be cooked up as fried pancake donut balls... (if needed: add more flour to thicken dough). Fry them, drain them on paper towels... then shake in a bowl with powdered sugar. MMMMMMMM mmmm good!

This is a good recipe for people on the go! You can make it with whole slices of Spam or chopped up Spam. My grandchildren eat it plain, with butter, with syrup, with jams and jellies.... *** We also make waffles with the chopped up Spam! *** We add other ingredients to the batter too... read the recipe to find out more....

MEAT
1 can(s) spam (any flavor)
PANCAKE BATTER
2 1/4 c flour
2 Tbsp baking powder
1 tsp salt
2 Tbsp sugar
3 large eggs (beaten with milk)
2 c milk
1 Tbsp lemon juice
2 Tbsp cooking oil

Steps:

  • 1. Mix together all dry ingredients in a large bowl. Mix together all wet ingredients in a smaller bowl. Slowly pour the wet ingredients into the dry ingredients while stirring. Let sit about 5 to 10 minutes while you are preparing the Spam.
  • 2. You can slice the Spam 1/4 inch thick, and fry it until browned. Place some batter on the griddle then place a slice of spam in the middle.... OR.... Dice up the Spam, Fry it until browned to your liking. Stir this into pancake batter. OR..... Dice, cook, and sprinkle it onto your pancakes before flipping them over.
  • 3. Sometimes we add drained whole kernel corn to the batter (1 Can about 15 to 16 ounces). OR.... Fresh corn on the cob left over from the night before... just cut it off of the cob and add it into the batter! (About 2 or 3 ears of corn). Sometimes we add diced cheeses and diced veggies.
  • 4. Don't be afraid to experiment! Be Brave... Have Fun!
  • 5. Fried Bacon slices or pieces!
  • 6. Breakfast Sausages, cooked, whole or cut into pieces!

A delicious repurposing recipe using prepared mashed potatoes, pancake mix, eggs and SPAM® with bacon to make piping hot savory pancakes. Great when eaten hot or cold.

4 cups mashed potatoes
1 (12 ounce) can fully cooked luncheon meat with bacon (such as SPAM® with Bacon), diced
1 cup buttermilk pancake mix
2 eggs, lightly beaten
2 tablespoons vegetable oil

Steps:

  • Mix mashed potatoes, luncheon meat, pancake mix, and eggs together gently in a bowl.
  • Heat oil in a skillet over medium heat. Spoon potato mixture into hot oil and press with a spatula to flatten evenly. Cook, covered, until bottom is crispy, 3 to 5 minutes. Flip and continue cooking until second side is golden and crispy, 3 to 4 minutes more.

This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite.

1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 ¼ cups milk
1 egg
3 tablespoons butter, melted

Steps:

  • In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
