EASY CHICKEN TACOS
With a simple spice rub, the chicken is cooked so quickly on the stovetop! Dice into small pieces and serve with pico, avocado + lime!

- In a small bowl, combine chili powder, cumin, paprika, oregano, garlic powder, 1 teaspoon salt and 1/2 teaspoon pepper. Season chicken with chili powder mixture. Heat canola oil in a large skillet over medium high heat. Working in batches, add chicken to the skillet in a single layer and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side. Let cool before dicing into bite-size pieces. Serve chicken in tortillas, topped with pico de gallo, avocado, cilantro and lime.

Steps:
- Spray a large skillet with cooking spray and place over medium-high heat; add luncheon meat. Cook and stir until lightly browned, about 5 minutes. Add taco seasoning mix; stir to coat. Pour in water; cook and stir until water is evaporated, 2 to 3 minutes. Turn heat to low to keep luncheon meat warm.
- Spray a separate skillet with cooking spray and place over medium-high heat; add 1 tortilla and cook until heated through, about 1 minute per side. Repeat with remaining tortillas.
- Layer luncheon meat, lettuce, Cheddar cheese, tomato, onion, and black olives onto each tortilla.

- 1. Spray frying pan and bottom of tortilla. Turn temp on medium low. If using condiments spread on tortilla. Add Spam slices and 2 tablespoons of cheese. Place tortilla in pan. Heat and fold over and heat both sides again. Cook until lightly brown on both sides and a little crispy. Serve warm.
- 2. Make as many servings as you like with about 2 or 3 tortillas per person. Great for snacks at parties. If you like wheat tortillas try them. I can't eat wheat so I use corn tortillas.
