EASY CHICKEN TACOS

With a simple spice rub, the chicken is cooked so quickly on the stovetop! Dice into small pieces and serve with pico, avocado + lime!

2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper, to taste
1 1/2 pounds boneless, skinless chicken thighs
1 tablespoon canola oil
12 mini flour tortillas, warmed
1 cup pico de gallo, homemade or store-bought
1 avocado, halved, peeled, seeded and diced
1/2 cup chopped fresh cilantro leaves
1 lime, cut into wedges

Steps:

  • In a small bowl, combine chili powder, cumin, paprika, oregano, garlic powder, 1 teaspoon salt and 1/2 teaspoon pepper. Season chicken with chili powder mixture. Heat canola oil in a large skillet over medium high heat. Working in batches, add chicken to the skillet in a single layer and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side. Let cool before dicing into bite-size pieces. Serve chicken in tortillas, topped with pico de gallo, avocado, cilantro and lime.

Yes, this dish is made with Spam®. I use the low-sodium Spam®. This dish is quick, easy and delicious. You can also top off your taco with sour cream, guacamole, or salsa.

cooking spray
1 (12 ounce) can low-sodium canned luncheon meat (such as SPAM®)
½ (1 ounce) envelope taco seasoning mix
2 tablespoons water, or as needed
1 (8 inch) flour tortillas
1 (8 ounce) package shredded lettuce
8 ounces block Cheddar cheese, grated
1 small tomato, diced
1 small onion, diced
2 (2.5 ounce) can sliced black olives, drained

Steps:

  • Spray a large skillet with cooking spray and place over medium-high heat; add luncheon meat. Cook and stir until lightly browned, about 5 minutes. Add taco seasoning mix; stir to coat. Pour in water; cook and stir until water is evaporated, 2 to 3 minutes. Turn heat to low to keep luncheon meat warm.
  • Spray a separate skillet with cooking spray and place over medium-high heat; add 1 tortilla and cook until heated through, about 1 minute per side. Repeat with remaining tortillas.
  • Layer luncheon meat, lettuce, Cheddar cheese, tomato, onion, and black olives onto each tortilla.

Browning the tortillas makes them a little crunchy and tastes so good. Great for parties, snacks or a meal. Just add a salad.

3 corn tortillas
3 slice chicken strip, cooked or lite spam, sliced thinly
6 Tbsp cheddar cheese, grated
1/2 tsp condiments such as mustard, mayonnaise, salsa or hot sause (optional) good without any condiments also and less messy.

Steps:

  • 1. Spray frying pan and bottom of tortilla. Turn temp on medium low. If using condiments spread on tortilla. Add Spam slices and 2 tablespoons of cheese. Place tortilla in pan. Heat and fold over and heat both sides again. Cook until lightly brown on both sides and a little crispy. Serve warm.
  • 2. Make as many servings as you like with about 2 or 3 tortillas per person. Great for snacks at parties. If you like wheat tortillas try them. I can't eat wheat so I use corn tortillas.
