cooking spray (such as Pam®)
1 (14 ounce) package deluxe macaroni and cheese dinner mix (such as Kraft®)
1 (12 ounce) can luncheon meat (such as Spam®), cut into 1/4-inch cubes
¼ cup milk
½ cup Italian-style bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, about 10 minutes. Drain.
  • Place macaroni, cheese, cubed luncheon meat, and milk in a large bowl; mix well to combine. Turn out into casserole dish. Sprinkle bread crumbs on top.
  • Bake in the preheated oven until bubbly, about 15 minutes.

I made this up when our children were small, as a way to get a few more vegetables into them. They loved it! It is a marriage of a comfort favorite, macaroni and cheese, with green peas and some added protein with the meat. 8 oz macaroni, uncooked
1 c frozen peas
2 c chopped spam
1 pkg (8 oz) velveeta cheese shreds
1 small can (5.3 oz) evaporated milk
1/2 c shredded mozzarella or parmesan cheese (optional)

Steps:

  • 1. First, cook macaroni. Bring 2 quarts salted water to a boil and stir in macaroni. Cook 10 minutes.
  • 2. While pasta is cooking, place Velveeta cheese and evaporated milk in a microwave-safe 2-quart serving dish. Heat on high power 1 minute at a time, stirring until cheese melts and blends completely. It takes about 3 minutes.
  • 3. Back to the pasta: After 10 minutes, add the peas and chopped spam to the macaroni and bring back to a boil. Continue to cook about 3 minutes, until macaroni is done to your liking. Drain well.
  • 4. Stir macaroni into the cheese sauce, blending well. If desired, top with additional grated cheese and cover dish so cheese melts.
